Steps:
- Position a rack in the center of the oven and preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper or silicone liners.
- For the cookies: In a food processor, pulse together the flours, cocoa powder, baking powder, cinnamon, salt, nutmeg and the lemon and orange zests. Add the olive oil and butter and pulse until blended.
- In a large bowl, whisk together the sugar, milk, rum and egg until smooth. Gradually stir the flour mixture into the egg mixture until a stiff dough forms. With damp fingers, shape the dough into 1-inch balls and place about 1-inch apart on the prepared baking sheets. Bake until the cookies are firm to the touch, 10 to 11 minutes. Cool for 10 minutes, then transfer the cookies to wire racks to cool completely, about 15 more minutes.
- For the icing: Put the chocolate chips and cream in a heatproof medium bowl and place the bowl over a pan of barely simmering water. Stir frequently until the chocolate has melted and the mixture is smooth.
- Dip the cookies halfway into the icing, then return them to the racks and let set at room temperature until firm, 1 1/2 to 2 hours.
MOSTACCIOLI-ITALIAN CHRISTMAS SPICE COOKIES
4 cups unbleached all-purpose flour 1 tablespoons cocoa powder 2/3 cup granulated sugar 1 cup finely ground almonds (I used unblanched slivers) 2 tsp ground cinnamon grated zest 1 large orange 1 tsp ground cloves 2 tsp baking powder 1 stick cold unsalted butter 4 large eggs 1/3 cup sweet wine or vino cotto (You could also use water or dry red wine. I used 1/3 cup Martini Rossi Vermouth.) Icing One 1 pound box confectioners' sugar 1/4 cup water 1/4 cup orange juice

- Preheat the oven to 325°F.
- Into the work bowl of a food processor fitted with the steel blade, pulse the almonds and sugar until the almonds are finely ground. Add the orange zest, flour cocoa, baking powder, cinnamon, and cloves and pulse several times to mix. Cut the butter into 12 pieces and add to the work bowl. Pulse until the butter is mixed in (about 20-25 times).
- Ad the eggs and wine; pulse until the dough is evenly moistened, tough it probably will form one ball. Allow to stand for 1 minute to absorb the liquid, then refrigerate for 30 minutes. *I could not fit all the ingredients in my food processor. See recipe note above.
- Scrape the dough onto an oiled work surface and roll into a log, 12 inches long. Cut the log into six pieces. Roll each piece of dough into a 12-inch cylinder, flatten slightly the palm of your hand, then cut each 12-inch cylinder diagonally into ten or eleven pieces and place the pieces on pans about 1 inch apart. Place the pans in the oven and immediately lower the temperature to 300 degrees. Bake the cookies about 10-14 minutes, or until firm and light golden.
- Icing:
- Whisk the confectioners' sugar with the water and orange juice. Add the water a little at a time. If it is too thick, add a little more water a tablespoon at a time.
- Transfer the cookies to a rack and drizzle on the icing. I did two coats of the icing drizzle. The original recipe says to dunk the cookies in the icing. I wanted to see a little bit of the cookie color. Add some sprinkles.
MOSTACCIOLI COOKIES
Mostaccioli are typical Neapolitan cookies, also common through Southern Italy. The name of these cookies comes from the Latin mustacea, a cake made out of "must," or unfermented grape juice. Cato, the anciant Roman philosopher, describes a cake made of combination of rye flour, cumin, cheese, anise, and eggs, wrapped in bay leaves. In the modern traditional recipe, there is not much left of the ancient Roman one, other than a similarity in the name. But mostaccioli have been traditionally very popular all throughout central and southern Italy for centuries. There are many different versions, some containing honey or chocolate, some harder or softer, but all very rich in spices. Mostaccioli can become very tough if they become dry, but the chocolate icing help keep them soft for a longer time.

- Directions.
- 1. Prepare Dough: Preheat oven to 400 degrees F. In medium bowl, combine flour, cocoa, roasted almonds, cinnamon, nutmeg, cloves, baking powder, baking soda, and pepper. In large bowl, with mixer at low speed, beat granulated sugar with butter until blended, occasionally scraping bowl with rubber spatula. Increase speed to high; beat until light and creamy. At low speed, beat in egg. Alternately beat in flour mixture and milk, beginning and ending with flour mixture, just until combined, occasionally scraping bowl.
- 2. With cocoa-dusted hands, shape dough by level tablespoons into 1-inch balls. Place balls, 2 inches apart, on ungreased large cookie sheet. Bake cookies 7 to 9 minutes or until puffed (they will look dry and slightly cracked). Transfer cookies to wire rack to cool. Repeat with remaining dough.
- 3. Chocolate Glaze: When cookies cool, in medium bowl, with wire whisk or fork, gradually mix cocoa with 1/4 cup boiling water until smooth. Gradually stir in confectioners' sugar and blend well. Dip top of each cookie into glaze. Place cookies on wire rack set over waxed paper to catch any drips. Immediately sprinkle cookies with decors. Allow glaze to set, about 20 minutes. Store cookies, with waxed paper between layers, in tightly covered container at room temperature up to 3 days, or in freezer up to 3 months.

ITALIAN CHRISTMAS SPICE COOKIES
While growing up in Boston, every Christmas my Neopolitan auntie would make a delicious chocolate round cookie spiced with cloves. She called them "Todors" (phonetic spelling). It's been 50 years since I've had them as no bakery seems to make them. Finally, after much research, I was able to locate a recipe that sounded just like the real thing. I tweaked the recipe a bit till I got the taste that I remembered. Warning: You can't each just one.

- Preheat oven to 350 degrees.
- Line two baking sheets with parchment paper.
- Whisk together flour, baking powder, salt, cocoa, cloves, cinnamon, allspice and nutmeg.
- In a large separate bowl mix together eggs, sugar, oil, milk and vanilla.
- Add flour mixture to wet mixture in small batches and mix until combined.
- Add chocolate chips and chopped almonds. Dough will be very stiff.
- With lightly oiled hands, continue to mix the dough till all ingredients are incorporated. Wash hands thoroughly.
- Lightly oil your hands again so the dough won't stick to them and break off pieces of dough, rolling them with your palms into balls the size of walnuts.
- Arrange on prepared baking sheet 2" apart and bake for 10 minutes.
- Once cooled, dip the top of each cookie into the chocolate glaze. While still wet garnish tops with a few sliced almonds.
- When set, re-dip the bottom of each cookie back into the chocolate glaze and let set again.
- While still slightly wet, generously dust or roll each cookie into 1 cup powdered sugar.
- Set aside to dry before stacking.
- Cookies will keep in an airtight container for 2 weeks.
