MEXICAN SEAFOOD SALAD



Mexican Seafood Salad image

Plump shrimp and delicate red snapper adorn this summery corn-and-tomato salad. Serve atop tender lettuce leaves and sprinkle with corn nuts for a satisfying crunch.

3 tablespoons fresh lime juice, squeezed rinds reserved
Kosher salt and freshly ground pepper
3 ears corn, shucked
3/4 pound medium shrimp (preferably wild), peeled and deveined
3/4 pound skin-on red-snapper fillet
2 medium tomatoes, cored and coarsely chopped (1 1/2 cups)
1 jalapeno, thinly sliced into rounds
1/2 white onion, finely chopped (3/4 cup)
3/4 cup chopped cilantro
3 tablespoons safflower oil
1 head Boston or Bibb lettuce, leaves separated
Corn nuts, for serving (optional)

Steps:

  • Bring 1 1/2 inches water and lime rinds to a boil in a wide pot; season generously with salt. Add corn; boil until bright yellow and crisp-tender, 3 minutes. Transfer corn to a plate. Add shrimp and fish to pot; remove from heat, cover, and let stand until shrimp are opaque and fish is cooked through, 3 to 4 minutes. Transfer to plate; let cool about 5 minutes. Discard lime. Cut corn from cobs.
  • Stir together corn, tomatoes, jalapeno, onion, cilantro, lime juice, and oil. Remove skin from fish; flake into bite-size pieces and stir into corn mixture with shrimp. Let cool completely, stirring occasionally (or refrigerate, covered, up to 1 day). Season with salt and pepper. Serve seafood salad over lettuce, topped with corn nuts.

4 cups broccoli florets
6 slender scallions, thinly sliced (white and green parts)
1 medium red bell peppers or 1 medium yellow bell pepper, diced
1/4 cup currants (optional) or 1/4 cup raisins (optional)
3/4 lb small shrimp or 3/4 lb bay scallop, cooked
3 cups chicken broth or 3 cups chicken bouillon
1 1/2 cups couscous
1/4 cup chopped flat leaf parsley
1/2 teaspoon dried thyme or 1 teaspoon fresh thyme
1/4 cup chopped nuts (optional)
2 tablespoons fresh lemon juice
1 teaspoon mild curry powder
1/4 teaspoon hot curry powder (optional)
1/2 teaspoon fresh ground pepper
1/8 teaspoon crushed red pepper flakes (or to taste)
2 tablespoons extra virgin olive oil

Steps:

  • Steam broccoli 5 minutes, drain and refresh under cold running water; place in large bowl.
  • Add scallions through seafood.
  • Bring the chicken broth to a boil in a medium saucepan. Add the couscous, parsley and thyme, and cook 30 seconds; remove pan from heat, cover tightly and let stand 5 minutes.
  • Make dressing: Whisk the seasonings into the lemon juice; gradually mix oil into the lemon juice until emulsified.
  • Add the couscous, while still hot, to the vegetable mixture; add the dressing and toss to combine well.
  • Chill at least 1 hour.
  • Sprinkle with chopped pecans, pine nuts or other nuts of your choice before serving.

1 cucumber, seeded and chopped
1 cup golden raisins
1 lemon, juiced
1/2 cup, chopped cilantro leaves
1 teaspoon ground cumin
1/2 teaspoon paprika
1 pinch cayenne
1 teaspoon honey
1/4 cup extra-virgin olive oil

Steps:

  • In a medium bowl, combine shredded carrots, diced cucumber and raisins. Set aside.
  • For the Dressing: In a small mixing bowl, combine lemon juice, cilantro, spices, and honey. Slowly whisk in extra-virgin olive oil.
  • Pour dressing over carrot salad and toss to coat. Cover with plastic wrap and refrigerate for several hours to allow flavors to meld.

¼ teaspoon garlic powder
ground black pepper to taste
1 (2.25 ounce) can sliced green olives

Steps:

  • Preheat the oven broiler.
  • Place the green bell peppers on a baking sheet, and broil, turning occasionally, 5 minutes, or until tender and scorched on all sides. Remove from heat, peel, and chop.
  • Heat the olive oil in a skillet, and mix in the peppers and tomatoes. Stir in sugar. Season with paprika, parsley, cumin, salt, garlic powder, and pepper. Continue cooking until tomatoes are heated through. Serve topped with olives.

4 cups bite-sized broccoli florets
3/4 cup thinly sliced scallion, including green tops (about 6)
1 medium red bell pepper, cored, seeded, and diced
1/4 cup currants or 1/4 cup raisins
3/4 lb bite-sized cooked seafood (shrimp, bay scallops, crab, surimi, etc)
3 cups chicken broth
1 1/2 cups uncooked couscous
1/4 cup chopped fresh parsley
1/2 teaspoon dried thyme
1/4 cup coarsely chopped pecans (optional) or 1/4 cup other nuts (optional)
2 tablespoons fresh lemon juice
2 tablespoons extra virgin olive oil
1 teaspoon curry powder (can include some hot curry powder to taste)
1/2 teaspoon fresh ground black pepper
1/8 teaspoon red chili pepper flakes (to taste)

Steps:

  • Steam the broccoli florets for 5 minutes, then immediate refresh them under cold running water. Drain well and place in a large bowl.
  • Add the scallions, red bell pepper, currants or raisins,,and seafood (except surimi, which must be added after tossing. Set the bowl aside.
  • Bring the broth to a boil in a medium sized saucepan that has a tight-fitting lid. Add the couscous, parsley, and thyme, and cook the mixture for 30 SECONDS. Remove the pan from heat, cover, and let the mixture stand for 5 minutes.
  • Combine all dressing ingredients in a bowl or a jar with a leak-proof lid. Whisk or shake the dressing until the oil is emulsified.
  • When the couscous is done, add it while it is still hot to the vegetable mixture in the bowl and toss the ingredients to combine them well. Add the dressing and toss well again. If you are using sliced surimi sticks, add them now and toss gently.
  • Cover and chill the salad for at least one hour. Before serving, sprinkle it with the optional nuts.
