Moroccan Cucumber Salad With Mint image

This tangy Moroccan cucumber salad with mint is a perfect side dish for roasted meats and fish.

2 cucumbers, sliced thin
¼ teaspoon salt
3 tablespoons white wine vinegar
2 tablespoons olive oil
1 teaspoon sugar
¼ teaspoon black pepper
2 tablespoons fresh mint, roughly chopped

Steps:

  • Slice the cucumbers lengthwise and then into thin slices.
  • Place the cucumber in a small bowl and sprinkle with salt. Let sit for 20-30 minutes.
  • After, place the cucumber in a colander and allow the accumulated liquid to drain.
  • Place the cucumbers on a paper towel to blot the excess liquid.
  • Place the white wine vinegar, olive oil, sugar, salt, and pepper into a small mixing bowl. Blend with a fork or wire whisk until blended.
  • Add the cucumbers into the dressing and toss with fresh mint.
  • Add an extra sprig of mint for garnish.

Chopped feggous or cucumber is mixed with tomato and a light vinaigrette to make a classic Moroccan salad that can be a base for other salads.

1 pound feggous, or cucumber
1 pound fresh, ripe tomatoes
2 tablespoons chopped fresh mint
2 to 3 teaspoons finely chopped onion
2 tablespoons lemon juice
3 tablespoons olive oil
Dash salt
Dash freshly ground black pepper

Steps:

  • Gather the ingredients.
  • Lightly peel the Armenian cucumber so that some dark green skin remains, and finely chop it. Unless you're using seedless cucumbers , remove the seeds before chopping.
  • Blanch and peel the tomatoes, remove the seeds, and chop the tomatoes into small pieces.
  • Mix the tomatoes with the cucumber, mint, onion, lemon juice, olive oil, and salt and pepper to taste.
  • If time allows, leave the vegetables to marinate at room temperature for up to 1 hour.

Always inspired by what I read, This recipe makes for a healthy delicious feed, SO simple, easy to do, I look forward to my first review! NOTE: Oil in the pan is optional and think on a George Forman grill would make for an even nicer presentation, but the taste is yummy! RE the Moroccan seasoning, can make your own or store bought NOTE: I used french vanilla yogurt; personal taste NOTE: Can use less coriander in patties and in salad; personal preference really

500 g ground lamb
1 zucchini
1 red onion
2 garlic
2 tablespoons currants
2 teaspoons moroccan seasoning
1 cup coriander leaves
1 egg
1 lebanese cucumber
2 tablespoons mint sauce
1/4 cup yogurt

Steps:

  • Grate zucchini and onion; remove excess moisture with a paper towel.
  • Finely dice 1/2 red onion; finely slice remanining onion for salad.
  • COMBINE mince, zucchini, onion, garlic, currants, coriander in bowl to hamburger consistency; MIX WELL.
  • NOTE: May need to add up to 2 tbsp bradcrumbs but want mixture to be moist.
  • I use an egg ring to make 100 gram patties; but feel free to make them any size or shape you prefer.
  • FRY patties in fry pan.
  • NOTE: Have made them with and without oil and find without oil, they brown better in a hot pan.
  • COMBINE cucumber (sliced on an angle), finely sliced onion, mint sauce, yogurt and 1/4 cup coriander.
  • Serve with rissoles and ENJOY!

1 large cucumber, thinly sliced
2 cold, boiled potatoes, sliced
1 each red, yellow and green bell peppers, seeded and thinly sliced
2/3 cup pitted olives
Salt (optional)
3 garlic cloves, chopped
3 scallions, sliced or 1 red onion, finely chopped
4 tablespoons olive oil
1 tablespoon white wine vinegar
Juice of 1/2 lemon
1 tablespoon chopped fresh mint leaves
1 tablespoon chopped fresh cilantro leaves

Steps:

  • 1. Arrange the cucumber, potato and pepper slices, and the pitted olives on a serving plate or in a dish.
  • 2. Season with salt, if you like. (Olives tend to be very salty so you may not wish to add any extra salt.)
  • 3. Sprinkle the garlic, onions, olive oil, vinegar, and lemon juice over the salad. Chill for at least 1 hour. Before serving, sprinkle with the chopped mint leaves and cilantro leaves.

Posting this recipe for ZWT and it is just like a salad I make for my family with the exception of this one not including garlic salt. When I make mine I use apple cider vinegar and olive oil, along with the salt, pepper and garlic salt. This is a recipe I found on About.com under the Moroccan food section.

1 lb cucumber (or feggous)
1 lb tomatoes, fresh, ripe
2 tablespoons parsley, chopped fresh (or mint)
2 -3 teaspoons onions, finely chopped
2 tablespoons lemon juice (or vinegar)
3 tablespoons olive oil (or vegetable oil)
salt, to taste
pepper, to taste

Steps:

  • Lightly peel the feggous so that some dark green skin remains, and finely chop it. (If using regular cucumbers, you'll want to remove the seeds before chopping.).
  • Peel the tomatoes, seed them, and chop them into small pieces. Mix the tomatoes with the feggous, parsley or mint, onion, lemon juice or vinegar, oil and salt and pepper to taste.
  • If time allows, leave the vegetables to marinate at room temperature or in the fridge for up to an hour. Serve in small bowls or on individual salad plates.
