"MORE, MORE!!" APRICOT JIGGLERS



Our baby loves apricots... and loves these finger friendly gels. Hope yours does too! Cut into 25 squares or use your favorite cookie cutters to make fun shapes.

1 envelope unflavored gelatin
3/4 cup milk or 3/4 cup soymilk
2 ounces cream cheese
2 ounces whole fat yogurt, like stoneyfield farms yobaby (choice of flavors, but apple, banana and vanilla seem to be the best choices)
1 1/2 cups apricots, skinned,cut into chunks and blanched
1/2 cup ripe pear, skinned,cut into chunks and blanched

Steps:

  • In a food processor or blender, process the gelatin and milk for 30 seconds or until gelatin is disolved and mixture is smooth.
  • Add the cream cheese and yogurt and process for 10 seconds.
  • Add the fruits and blend until thoroughly puréed.
  • (Be careful not to over blend or the mixture may become foamy.) Spray an 8-inch square baking pan with nonstick spray.
  • Pour gelatin mixture into pan and chill until firm.
  • Once chilled, cut into squares or creative shapes using cookie cutters and serve.

Grilled Maple-Butter Apricots with Vanilla Ice Cream image

Step aside pancakes; butter and maple syrup is a combination worthy of the ripest grilled summer fruits. Can't find apricots? Try this recipe with peaches or plums for a fantastic ice cream topping.

Number Of Ingredients 6

3 tablespoons pure maple syrup
3 tablespoons unsalted butter
1 teaspoon vanilla extract
1/4 teaspoon kosher salt
6 ripe apricots, halved lengthwise and pitted
Vanilla ice cream (for serving)

Steps:

  • Prepare a grill for medium, direct heat, preferably with hardwood or hardwood charcoal.
  • Cook maple syrup, butter, vanilla, and salt in a small skillet over low heat, whisking occasionally, until butter is melted.
  • Grill apricots cut side down, brushing with syrup mixture as they cook, until lightly charred and tender, 8-10 minutes. Transfer to a platter cut side up, and brush with additional syrup mixture. Let apricots cool to room temperature, then serve with ice cream.

2-1/2 cups boiling water (Do not add cold water.)
2 pkg. (8-serving size each) JELL-O Gelatin, any flavor

Steps:

  • Stir boiling water into dry gelatin mix in large bowl at least 3 min. until completely dissolved. Pour into 13x9-inch pan.
  • Refrigerate at least 3 hours or until firm.
  • Dip bottom of pan in warm water 15 sec. Cut into 24 decorative shapes using 2-inch cookie cutters, being careful to cut all the way through gelatin to bottom of pan. Lift JIGGLERS® from pan. Reserve scraps for snacking. Store in tightly covered container in refrigerator.

8 cups chopped de-stoned apricots
4 cups white sugar
1/2 cup lemon juice
2 -3 tablespoons grated fresh ginger
1 tablespoon unsalted butter

Steps:

  • Wash, chop and de-stone apricots. Have jars sterilized in preparation.
  • Measure 8 cups of chopped apricots into a large stock pot, along with the 4 cups of sugar, 1/2 cup lemon juice, and grated ginger.
  • Bring to a boil over a high heat, stirring occasionally. Once at a rolling boil, turn down the heat to keep it at a controlled boil for 23 minutes, stirring often to prevent sticking. Note: It should be bubbling, not simmering. Start your timer when it begins to boil and at this stage add the 1 tablespoon of butter.
  • At the end of 23 minutes it should have reduced down to a thick, sticky consistency but will still slide easily off the spoon. Don't worry, it will thicken as it cools.
  • Jar while it is still warm and moves easily.

This a great recipe to make with kids and for kids. I sent these along with my daughter for her Valentine's Day party. There are many students with allergies, such as milk, wheat, and nuts, and this was a treat they could all enjoy! Cook time is chill time.

4 (85 g) boxes Jello gelatin
2 1/2 cups boiling water (do not add cold water)
cooking spray

Steps:

  • Stir boiling water into gelatin.
  • (Can be done right in the pan.) Dissolve completely.
  • (Very Important!) Lightly spray a 13 x9 inch pan with cooking spray Pour mixture into pan Chill at least 3 hours.
  • Jigglers should be firm after 1 hour.
  • To cut Jigglers dip bottom of pan in warm water for 15 seconds to loosen the gelatin.
  • Cut shapes with cookie cutters all the way through the gelatin.
  • Lift from the pan with index finger or metal spatula.

It's a fun finger food for infants and toddlers that packs a little calcium and vitamin punch. Try vegetarian cream cheese and soy yogurt for the lactose intolerant child or children not yet introduced to milk products. Cook time is approximate chill time. Servings are dependent on size of squares or shapes cut, but we cut the pan into 5 rows and 5 columns, yielding 25 squares.

  • Add hot juice and stir until gelatin completely dissolves, about 5 minutes.
  • Stir in sugar or honey if desired.
