MEDITERRANEAN FISH & COUSCOUS

Mediterranean fish & couscous image

Oven cook or barbecue fish in foil to keep it beautifully moist

Provided by Good Food team

Categories     Dinner, Main course, Supper

Time 30m

Number Of Ingredients 9

2 x 125g sustainable white fish fillets (we used Pollock)
2 lemons, zest and juice 1, the other cut into wedges
1 red chilli, half sliced, half finely chopped
basil, shredded
200g cherry tomatoes
100g couscous
2tbsp balsamic vinegar
½ cucumber, diced
2tbsp pitted black olives, halved

Steps:

  • Heat oven to 200C/180C fan/gas 6. Take one small sheet of foil, about A4 size, and put one fish fillet on top. Season the fish, then drizzle with half of the lemon juice and zest, half the sliced chillies and half of the basil.
  • Halve 4 of the tomatoes and put these around the fish. Place another sheet of foil on top and fold the edges together to seal. Repeat with the other piece of fish and transfer to a baking sheet. Cook for 15-18 mins until the bag has puffed up (or cook on the barbecue).
  • While the fish is cooking pour 100ml of boiling water over the couscous, cover, then leave to swell for 5 mins. Chop the rest of the tomatoes and mix with the couscous, balsamic, cucumber, the remaining basil, lemon juice and zest and olives. Season and serve alongside the fish with the lemon wedges on the side for squeezing over.

MEDITERRANEAN FISH (FLOUNDER)

Mediterranean Fish (Flounder) image

You can use any firm fish for this recipe- I have used flounder-aka sole, mahi mahi, halibut and tilapia. It makes a wonderfully easy baked fish with tomatoes, kalamata olives, caper, onions and white wine. It is my absolute favorite way to make fish! I got the recipe from here but do not see it posted anymore so I will added it again for everyone to enjoy- it is SO EASY and SO GOOD!

Provided by kda949

Categories     One Dish Meal

Time 40m

Yield 4 serving(s)

Number Of Ingredients 12

5 roma tomatoes, chopped or 1 (15 ounce) can chopped tomatoes
2 tablespoons olive oil
1/2 onion, chopped
2 garlic cloves, chopped
1 pinch italian seasoning
1/4 cup white wine
24 kalamata olives, pitted and chopped
4 tablespoons capers
1 teaspoon lemon juice, fresh perfered
6 leaves fresh basil, chopped
3 tablespoons parmesan cheese
1 lb mahi mahi (any firm fish) or 1 lb tilapia fillet (any firm fish)

Steps:

  • Preheat oven to 425 degrees.
  • Prepare tomatoes if using fresh by plunging them into boiling water, imediately removing them to a bowl of ice water and peeling the skins. Or you can chop them with the skins on or use canned- it is a person preference thing.
  • heat olive oil in a medium skillet over medium heat. Add onions and saute until tender. Add garlic and Italian seasoning, stirring to combine. Add tomatoes and cook until tender. Mix in wine, olives, capers, lemon juice and half of the basil. If fresh basil- if fresh basil is not available add a couple teaspoons of dried basil-fresh is always better though. Reduce heat, blend in Parmesan cheese and cook until the mixture is hot and bubbly. If you prefer a thick sauce you can cook until the sauce has reduced to a thick sauce, about 15 minutes.
  • Place fish in a shallow baking dish. Cover with the sauce mixture and bake in preheated oven 15-20 minutes depending on the fish used. Fish should flake easily with a fork when done, except for the mahi mahi which flakes when done, just not easily.

MEDITERRANEAN FISH GRATINS

Mediterranean fish gratins image

These individual portions of fish in tomato sauce, topped with herby breadcrumbs, freeze beautifully - perfect for no-fuss entertaining

Provided by Justine Pattison

Categories     Dinner, Fish Course, Main course

Time 1h20m

Number Of Ingredients 17

3 tbsp olive oil
1 large onion , thinly sliced
1 fennel bulb (about 250g/9oz), trimmed and thinly sliced
3 large garlic cloves , finely sliced
1 heaped tsp coriander seeds , lightly crushed
150ml white wine
2 x 400g cans chopped tomatoes with herbs
2 tbsp tomato purée
good pinch of saffron
1 bay leaf
1 tbsp fresh lemon juice
1 small bunch flat-leaf parsley , leaves roughly chopped
900g mixed skinless fish fillets, (anything you like) cut into chunks
350g raw peeled king prawn
75g finely grated parmesan
50g panko or coarse dried breadcrumbs
green salad , to serve (optional)

Steps:

  • Heat the oil in a large, wide non-stick saucepan or sauté pan and gently fry the onion, fennel, garlic and coriander seeds for 15 mins, stirring regularly until the vegetables are softened and lightly coloured. Pour the wine into the pan and add the tomatoes, tomato purée, saffron and bay leaf. Season and bring to a gentle simmer. Cook for about 15 mins, stirring occasionally, until thick.
  • Heat oven to 220C/200C fan/gas 7. Stir the lemon juice and most of the parsley into the tomato mixture, pop the raw fish pieces and prawns on top and stir well. Cover tightly with a lid and simmer gently over a medium heat for 4-5 mins or until the fish is almost cooked. Stir a couple of times as the fish cooks, taking care not to let it break up.
  • Ladle the hot tomato and fish mixture into 6 individual pie dishes - they will each need to hold around 350ml. Mix the cheese, breadcrumbs, remaining parsley and a little ground black pepper together and sprinkle over the top. Bake on a baking tray for 20 mins or until the pies are golden brown and bubbling. Serve with green salad, if you like.

14 MEDITERRANEAN DIET FISH RECIPES THAT ARE READY IN NO TIME

From purewow.com
Estimated Reading Time 4 mins
  • Slow-Cooked Salmon. Despite the name, this is actually a great weeknight dish. It's in the pan for only 25 minutes, and the low cooking temp makes it oh-so-tender.
  • Healthy Broiled Striped Bass with Provencal Tomatoes and Olives. We love the powerful flavor bomb of roasted tomatoes and garlic, plus briny capers and olives.
  • 15-Minute Mediterranean Couscous with Tuna and Pepperoncini. Added bonus: The leftovers pack up fabulously for an easy workday lunch.
  • Parmesan Pesto Tilapia. We’d eat anything if it was covered in pesto and fresh tomatoes. This simple recipe is officially in our weeknight rotation (just go easy on the Parm to keep it diet-friendly).
  • Rosemary Citrus One-Pan Baked Salmon. Is it weird that we kind of want to make a perfume out of this marinade? It’s fresh, zesty and smells incredible.
  • Panfried Cod with Orange and Swiss Chard. The easiest way to impress company (just don’t tell them how easy it was to make).
  • 20-Minute Pan-Seared Fish with Pomegranate Salsa. Feel free to use whatever fish looks freshest at the market (cod and salmon work particularly well).
  • Whole Roasted Branzino with Shaved Fennel Slaw. Cooking a whole fish sounds super intimidating. We know. But thanks to Coterie member Gaby Dalkin, we’ve found that it’s actually pretty simple (and beautiful, to boot).
  • Honey-Mustard Sheet Pan Salmon. Because no one wants to stare down a pile of dishes on a busy night.
  • Fish Puttanesca en Papillote. Cooking the fish in individual parchment packets lets all the flavors blend together seamlessly. (Plus, it makes cleanup so easy.)

From journeyz.co
  • Atlantic Bonito. Don’t let the name fool you! The Atlantic Bonito is actually native to the Mediterranean Sea, though they can also be found in the Atlantic Ocean and the Black Sea.
  • European Anchovy. Another one of the most common fishes in the Mediterranean is the European Anchovy. These tiny swimmers pack a salty punch, making them a favorite of foodies from around the world.
  • Picarel. Also known as whitebait, picarel is another common Mediterranean Sea fish, though you’ll also find them in the Atlantic Ocean and the Black Sea.
  • Sardines. Completing the trifecta of small (and tasty) Mediterranean Sea fish, Sardines are another common menu item across the region. Often referred to as “the poor man’s fish” for its low price point in comparison to some of the other species that swim in these waters, sardines have been served up for centuries, resulting in a large variety of dishes.
  • Mediterranean Sea Bass. The Mediterranean Sea Bass is one of the most common Mediterranean Sea fish, largely because of extensive farming. This is due to the fact that the countries surrounding the Mediterranean have a taste for this fish, so you’ll see it on menus everywhere.
  • Flying Fish. One of the most intriguing fish that is common in the Mediterranean is the flying fish. These unique creatures spend time both above and below the water, and their birdlike behavior is quite a sight to see.
  • Red Porgy. Red porgy is another one of the most common Mediterranean Sea fish, and its silvery rose color also makes it one of the prettiest. Sometimes referred to as common sea bream, red porgy is one of the most prized catches at fish markets across the Mediterranean.
  • Red Mullet. Similar to many other species on our list, the red mullet is native to the Mediterranean Sea, the Black Sea, and the Atlantic Ocean. This is one of just two species of goatfish and actually isn’t related to other “mullet” species.
  • Flathead Grey Mullet. Distinguishable by its greyish brown coloring and elongated body, the Flathead Grey Mullet is one of the most common Mediterranean Sea fish.
  • European Hake. While certainly not the most beautiful, the European hake (often referred to simply as hake) is one of the most common Mediterranean Sea fish.
