Put together this Monterey Jack Cheese Dip with Verde Salsa in just 10 minutes for a flavorful addition to any appetizer spread! Fresh jalapeño peppers give this Monterey Jack cheese dip an extra boost of flavor.

1 pkg. (8 oz.) KRAFT Monterey Jack Cheese, shredded
1/2 cup KRAFT Mayo with Olive Oil Reduced Fat Mayonnaise
1/4 cup chopped seeded fresh jalapeño peppers
1/2 cup TACO BELL® Verde Salsa

Steps:

  • Mix cheese with mayo and peppers until blended.
  • Spread onto plate, then use back of spoon to make well in center of dip.
  • Spoon salsa into well.

Sounds a little interesting huh? A spicy cheese dip with a little crunch. When my youngest sister comes into town, we always make a batch of this cheese dip up and eat and talk in to the wee hours.

1 lb jalapeno jack cheese, grated
8 ounces sour cream
1/4 cup mayonnaise
1 clove garlic, put through garlic press
2 ounces chopped pimiento
3 green onions, finely chopped
sunflower seeds, to taste

Steps:

  • Mix together the cheese, sour cream, mayonnaise and garlic.
  • Bake in a 350º oven for about 20 minutes or microwave on High for about 10 minutes, stirring occasionally.
  • Mix in half of the pimento, onion and sunflower nuts.
  • Bake for 5 more minutes, or microwave on High for an additional 2-3 minutes.
  • (Can be prepared ahead, refrigerated up to a week and reheated in oven or microwave until hot. Stir well to recombine.) Garnish with remaining ingredients, placing pimento in the center, green onion around the pimento and sunflower nuts around the edge.
  • Serve with tortilla chips, preferably lightly salted, white corn chips.

1 medium red onion, chopped
1 garlic clove, crushed
1 tablespoon sunflower oil or 1 tablespoon canola oil
1 bay leaf
1 lb broccoli, chopped
3/4 cup vegetable broth or 3/4 cup chicken broth
3/4 cup white wine
1 cup water
salt and pepper
1/4 cup sunflower seeds, toasted

Steps:

  • Saute the onion and garlic in oil with the bay leaf for 3 to 4 minutes.
  • Add broccoli, and broth, wine, and water. Note: if using already cooked broccoli, add in after simmering for 10 minutes to just heat.
  • Bring to a boil and simmer gently, covered for 10 minutes. The broccoli should be tender but still bright green.
  • Remove the bay leaf and cool slightly.
  • Blend the soup in blender or food processor until completely smooth.
  • Season to taste with salt and pepper.
  • Return to pot and reheat gently.
  • Pour the soup into bowls and sprinkle with the toasted sunflower seeds.

  • Add dressing and toss.
  • Refrigerate 5-6 hours or overnight.
