Number Of Ingredients 11

1 tablespoon plus 1 1/2 teaspoon olive oil
4 boneless, skinless chicken breasts (about 6 ounces each)
Herbes de Provence
All-purpose flour (for dusting)
3 cloves garlic, sliced
1 shallot, chopped
1/4 cup dry white wine
1/4 cup chicken stock
Juice of 1/4 lemon
1 tablespoon butter
Julienned lemon zest (optional)

Steps:

  • Heat oven to 375°F. Heat oil in a large ovenproof sauté pan over medium-high heat. Season chicken with salt, pepper and herbes de Provence. Dust with flour; tap off excess. Cook, meaty side down, 5 minutes. Turn over; cook 1 minute. Add garlic and shallot; stir 30 seconds. Add wine; cook 1 minute. Add stock; cook 30 seconds. Add lemon juice. Transfer pan to oven. Bake until chicken is cooked through, 9 to 13 minutes. Transfer chicken to cutting board. Place pan over medium heat; simmer sauce 1 minute. Add butter; swirl pan until butter incorporates and sauce thickens slightly. Cut each breast into 4 slices; transfer each to a plate; top with sauce and garlic. Serve with spinach ; garnish with zest, if desired.

Unsalted butter, for griddling
12 slices Texas toast
French Toast Custard, recipe follows
18 slices Swiss cheese
18 ounces shaved ham
16 ounces premade pancake batter
Strawberry-Rhubarb Syrup, recipe follows
6 large eggs
1 cup sugar
3/4 cup milk
1 tablespoon vanilla extract
4 ounces fresh strawberries, stemmed and quartered
4 ounces fresh rhubarb, large dice
1/2 cup sugar
2 ounces maple syrup

Steps:

  • Preheat a griddle and deep fryer to 350 degrees F.
  • Butter the griddle. Dunk the Texas toast on both sides in the French Toast Custard and grill until golden brown. Flip and add 1 slice Swiss cheese to each slice of toast. Then add 3 ounces ham on top of 6 of the toast slices, then top the ham with another slice of Swiss cheese. Top each ham and cheese toast with a cheese only toast, to form 6 sandwiches. Cook until the cheese melts, then remove from griddle and cool. Dunk the cooled sandwiches in the pancake batter until fully covered and put into the fryer. Cook until golden brown on both sides, about 8 minutes. Serve with the Strawberry-Rhubarb Syrup.
  • Beat the eggs well, then add the sugar and mix until emulsified and all the sugar has dissolved. Add the milk and vanilla and whisk until combined.
  • Add the strawberries, rhubarb, sugar and maple syrup to a saucepot. Place over medium heat and cook until fruit is soft, about 20 minutes. Let cool slightly, then carefully puree with a hand blender.

2 cups unbleached all-purpose flour
1 cup cornstarch
1 tablespoon baking powder
1 tablespoon baking soda
1/4 teaspoon cayenne pepper
1 teaspoon kosher salt
1/2 cup club soda
1 1/2 cups dark beer
6 slices white bread or 6 slices whole wheat sourdough bread, each buttered on one side
6 ounces gruyere cheese, sliced into 18 1/16 inch thick slices
8 ounces smoked ham, such as black forest, sliced into 9 1/16 inch thick slices
8 ounces roast turkey meat, sliced into 9 1/16 inch thick slices
5 tablespoons strawberry jam, plus
extra strawberry jam, to serve on the side
vegetable oil, for deep-frying
1/2 cup powdered sugar

Steps:

  • To make the Batter: In a medium bowl, combine the flour, cornstarch, baking powder, baking soda, cayenne, and salt.
  • Whisk in the club soda and beer.
  • The mixture should be the consistency of pancake batter.
  • Refrigerate until you're ready to use it.
  • To assemble the Sandwiches: Set half of the slices buttered side down, and cover with the cheese slices, folding them over if they extend past the edges.
  • Layer the ham and turkey over the cheese, and spread the jam over the turkey.
  • Place the top slice of bread on, buttered side up.
  • Grill the sandwiches on both sides.
  • Pour the oil into a deep heavy-duty saucepan to fill it halfway.
  • Heat the oil to 350°F (175°C), measuring the temperature on a deep-fat thermometer.
  • Cut the sandwiches on a diagonal into thirds, to make 9 triangular pieces.
  • Stir the batter.
  • Dip each sandwich piece into the batter, thoroughly coating it.
  • Fry the pieces 2 or 3 at a time, being careful not to overcrowd them in the pan.
  • Cook them for about 3 minutes on each side, until they're nicely browned, and transfer to a paper towel to drain.
  • Allow the oil to come back up to temperature before you fry the next batch of sandwiches.
  • Place the sandwiches on a platter.
  • Sift a very heavy layer of powdered sugar over them, and serve with a side of jam.

This delightfully quick and easy sandwich will make a Monte Cristo lover out of you. Don't substitute the green can of Parmesan for the freshly-grated stuff...there's a huge difference in flavor. For convenience, this recipe uses a pre-roasted rotisserie chicken from your local market. The amount for the chicken is approximate...you need enough to cover the bread, to taste. Serve this sandwich with a bowl of tomato soup for a hearty lunch or dinner. I also like it made ahead, chilled and eaten cold in a sack lunch.

3 large eggs
1/4 teaspoon salt
1/3 cup milk
2 tablespoons honey mustard
1/2 teaspoon paprika
1/4 teaspoon ground nutmeg
cayenne pepper (a pinch)
2 tablespoons butter, divided
4 slices sourdough French bread, large round artisan-style, cut in half to make 4 sandwiches
4 slices swiss cheese, good quality
2 cups rotisserie-cooked chicken, thinly sliced (I prefer the breast)
1/2 cup parmesan cheese, freshly grated
8 slices thin-sliced cooked ham, good quality (I prefer off-the-bone from the deli)
honey mustard (optional) or raspberry preserves (optional)

Steps:

  • Egg Mixture: Using a fork, lightly beat the eggs and salt together in a shallow pan. Add remaining ingredients and beat to combine. Set aside.
  • Sandwich Prep: Layer the cheese, chicken, Parmesan, and ham on half of the bread slices. Top with remaining slices of bread.
  • To completely cook the egg and melt the cheese, it's better to cook this a little longer and a little slower. Preheat a griddle (I use a cast iron one) over medium-low heat and coat with half the butter.
  • Quickly dip two of the sandwiches in the egg mixture -- the bread should be coated but not saturated.
  • Place in the skillet and cook until golden brown, 4-5 minutes per side, carefully flipping to avoid filling falling out. Also, flip as necessary to prevent scorching. Cook til cheese is melted.
  • Repeat with remaining sandwiches.
  • Serve with more mustard or preserves, if desired.
