Number Of Ingredients 10

4 tablespoons (1/2 stick) plus 2 tablespoons butter
2 tablespoons flour
1 cup chopped onions
1/2 cup chopped celery
2 cups milk
2 dozen oysters, shucked, drained and reserve liquid
Salt and cayenne
Fresh black pepper
1 tablespoon chopped garlic
1/4 cup chopped finely chopped parsley

Steps:

  • In a large saute pan, melt the 4 tablespoons butter. Stir in the flour, stirring constantly and cook for 3 to 4 minutes. Add the onions and celery and cook for 2 minutes. Stir in the milk and oyster liquid. Season the mixture with salt, cayenne and black pepper. Bring the liquid up to a simmer. Simmer the liquid for 3 to 4 minutes. Add the oysters, garlic and parsley. Bring the liquid back up to a simmer and cook for 3 to 4 minutes, or until the oysters curl. Stir in the remaining 2 tablespoons butter and remove from the heat. Ladle the soup into the terrine.

1 slice of bacon, minced (about 1 tablespoon)
2 celery ribs, thinly sliced
1 small yellow onion, quartered and thinly sliced
1 thyme sprig
1 teaspoon sweet paprika
3/4 teaspoon Old Bay seasoning
1 quart freshly shucked oysters, drained, and 1 1/2 cups of liquor reserved (see Note)
1 cup fish stock or clam broth, plus more as needed
1 tablespoon unsalted butter
1/2 pound sea scallops
Salt
1 quart heavy cream
1 1/2 tablespoons Worcestershire sauce
Freshly ground black pepper
Snipped chives, for garnish
Buttered baguette toasts or oyster crackers, for serving

Steps:

  • 1. In a large pot, cook the bacon over moderate heat until softened, about 1 minute. Add the celery, onion, thyme, paprika and Old Bay and cook, stirring frequently, until the onion is translucent, about 2 minutes. Add the oyster liquor and fish stock and bring to a boil. Simmer over moderately low heat for about 10 minutes, until reduced by one-fourth. 2. Meanwhile, in a medium skillet, melt the butter. Season the scallops with salt and cook over high heat until well browned on one side, about 2 minutes; immediately transfer to a plate. 3. Stir the heavy cream into the pot and simmer until slightly thickened, about 3 minutes. Add the oysters and bring just to a simmer. Add the scallops and simmer for 30 seconds. Remove from the heat, stir in the Worcestershire sauce and season with salt and pepper. Discard the thyme sprig. Spoon the stew into bowls, garnish with chives and serve immediately with the toasts or crackers. 4. Note: If you don't have 1 1/2 cups of oyster liquor, add more fish stock to reach the correct amount.

4 tablespoons unsalted butter, divided
12 green onions, chopped (white and green parts)
1/4 cup celery, chopped
1 garlic clove, minced
2 tablespoons flour
1 quart half-and-half cream
1 tablespoon fresh Italian parsley, chopped
1/2 teaspoon red pepper flakes
1/2 teaspoon white pepper
1 teaspoon salt
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/2 teaspoon dried oregano
1/2 teaspoon black pepper
2 pints oysters, jarred (drained)
1/2 lb bay scallop
1 1/2 tablespoons Worcestershire sauce
1/8 cup sherry wine
1 cup crouton (use your favorite type)

Steps:

  • Melt 2 tablespoons of the butter in a sauce pan over medium heat. Add the green onions, celery and garlic and saute until slightly softened. Remove form the heat.
  • In a seperate pan over medium heat, melt remaining butter and whisk in the flour. Whisk in the half & half, and bring just to a simmer, being careful no to boil it. Reduce heat to low and add the seasonings (parsley through black pepper). Add the vegetable mixture and the oysters and scallops. Simmer for 15 minutes, stirring frequently.
  • Add the Worcestershire and sherry and contimue to simmer until the stew thickens.
  • Ladle into bowls and top with croutons and serve.

2 tablespoons butter
1 clove garlic, crushed
2 shallots, minced
½ cup dry sherry or dry white wine
24 freshly shucked oysters, oyster liquor reserved
1 ½ cups whole milk
1 ½ cups heavy cream
2 tablespoons chopped fresh flat-leaf parsley
sea salt to taste
1 pinch sweet paprika
1 cup oyster crackers

Steps:

  • Stir butter and garlic in stockpot over medium heat until butter begins to brown. Remove garlic and discard.
  • Stir shallots into browned butter. Cook and stir until translucent, 5 to 7 minutes.
  • Pour sherry over shallots in the stockpot and bring to a boil while scraping any browned bits off of the bottom of the pot. Simmer until liquid is reduced by half, 3 to 5 minutes.
  • Pour reserved oyster liquor, milk, and cream into the stockpot; bring mixture to a simmer. Reduce heat to medium-low and stir in oysters; cook until oyster edges begin to ruffle, about 3 minutes. Remove from heat.
  • Stir in parsley; season with sea salt to taste. Ladle into bowls and garnish with sweet paprika and oyster crackers.
