2 sticks (1/2 pound) salted butter, softened
1 1/2 cups brown sugar, packed
1/2 cup white sugar
2 whole large eggs
1 tablespoon vanilla extract
1 1/2 cups all-purpose flour
2 teaspoons kosher salt
1 teaspoon baking powder
1/2 teaspoon baking soda
1 1/2 cup oats (either quick or regular)
1 cup chocolate coated candies, such as M&M's
3/4 cup chocolate chips (milk or semisweet)
1/2 cup pecans, chopped
2 1/4 cups rice cereal, such as Rice Krispies
Cold milk, for serving

Steps:

  • Preheat the oven to 375 degrees F.
  • Cream the butter with both sugars in a mixing bowl until fluffy. Add the eggs one at a time, beating well after each addition. Add the vanilla and beat.
  • Combine the flour, salt, baking powder and baking soda. Add to the mixing bowl and mix until combined. After that, add in the oats, chocolate candies, chocolate chips and pecans in whatever quantity you prefer. Add the cereal at the very end, mixing until just combined. Do not over mix!
  • Use a cookie scoop to scoop balls of dough onto a cookie sheet. Bake until golden brown, about 20 to 25 minutes, and then allow to cool on a rack.
  • Serve with glasses of cold milk.

1 1/2 cups creamy or chunky peanut butter (that's one full 16-ounce jar minus 1/4 cup)
2 1/2 cups packed coconut sugar or 2 cups lightly packed brown sugar
1/3 cup melted coconut oil or 5 tablespoons melted butter
3 large eggs
2 teaspoons baking soda
2 teaspoons vanilla extract
2 1/2 cups quick-cooking oats or old-fashioned oats (certified gluten-free if necessary)
3/4 cup bittersweet chocolate chips
3/4 cup candy-coated chocolates (like M&M's) or additional chocolate chips
Optional: flaky sea salt, for sprinkling

Steps:

  • Preheat the oven to 350 degrees Fahrenheit. Line tw0 large, rimmed baking sheets with parchment paper or silicone mats for easy clean-up.
  • In a large mixing bowl, combine the peanut butter with the sugar and coconut oil. Use an electric mixer or a large spoon to mix until well combined. Add the eggs, baking soda and vanilla, and mix well. Add the oats and chocolate chips and mix until they're evenly incorporated.
  • Working with an ice cream scoop or 1/4 cup measuring cup, drop the cookies onto the prepared baking sheets. These cookies spread while baking, so leave several inches around each (I can bake six at a time). If they are irregularly shaped at the base, gently shape them into a more rounded mound. If you'd like your cookies to look extra pretty, dot a few extra M&M's and chocolate chips on each mound of dough before baking.
  • Bake 10 to 12 minutes, until they're just starting to turn golden around the edges. Do not overbake. Let the cookies cool for 10 minutes before transferring to a cooling rack. In the meantime, bake your next six cookies, and so on.
  • If desired, sprinkle the cookies lightly with flaky sea salt. Let them cool completely before storing them in an airtight container. Cookies will keep well for several days at room temperature.

Steps:

2 cups white sugar
½ tablespoon vanilla extract
4 teaspoons baking soda

  • Preheat oven to 350 degrees F (175 degrees C). Lightly grease cookie sheets.

These are very crisp, crunchy cookies that are full of chocolatey goodness. A big hit in our house. For this recipe I recommend weighing your oats, I found that when using a measuring cup I get way too many oats as opposed to using the weight on the carton. I also used a medium cookie scoop to measure out the cookies (probably 1/8th of a cup). Since it makes 66 cookies I recommend making some dough balls and freezing them until firm, then putting them in a freezer bag to bake at a later time. Then you can just pull out what you need and bake them. Prep time is an estimate.

1/2 cup butter (softened)
1 cup brown sugar
1/2 cup creamy peanut butter
1 large egg
2 teaspoons vanilla extract
3/4 cup all-purpose flour

1½ cups quick oats
1 cup mini semi-sweet chocolate chips

Steps:

  • Preheat oven to 350°. Line cookie sheets with parchment paper, use a silpat liner, or spray with cooking spray.
  • In a large bowl (or bowl of a stand mixer) cream together the butter, brown sugar, and peanut butter until light and fluffy, about 1-2 minutes.
  • Mix in the egg and vanilla, scraping down the sides of the bowl as needed.
  • In a separate bowl, add the flour, baking soda, cornstarch, baking powder, and salt and whisk to combine.
  • With the mixer on low speed, slowly add the flour mixture to the wet ingredients and mix until just combined.
  • Add the oats, chocolate chips, and M&M candies. Mix on low speed just until dough is combined.

1/2 cup (1 stick/115 g) unsalted butter, at room temperature
1/2 cup (100 g/3.5 oz) light brown sugar (dark is fine, too)
1/4 cup (50 g/1.7 oz) granulated sugar
½ cup (125 g/4.4 oz) creamy peanut butter
1 large egg (, at room temperature)
1 teaspoons pure vanilla extract
1 and 1/4 cups ((120 g/4 oz) old-fashioned rolled oats)
3/4 cup multi-colored candies (, such as M&M's)
1/2 cup (85 g/3 oz) bittersweet or semi-sweet chocolate chips, optional

Steps:

  • Preheat oven to 350°F/180°C. Line two baking sheets with parchment paper and set aside.
  • In a large bowl, sift together flour, baking soda, and salt. Set aside. In a standing mixer fitted with the paddle attachment, beat butter and sugars for 2-3 minutes, until fluffy. Beat in peanut butter, vanilla, and egg, and beat well until combined. Add flour mixture and beat on low speed just until combined. Don't over mix.   • Store cookies in an airtight container at room temperature for up to 4 days, or freeze for up to 2 months. To thaw, leave on counter, still covered, or overnight in the fridge.
