BEER-CAN CAULIFLOWER

- Preheat a grill to medium high. Pour out one-quarter of a can of beer. Trim the base of a head of cauliflower so it can rest on the beer can but the florets still stay together. Brush melted butter all over the cauliflower and season with salt. Lay a double sheet of foil on the grill. Put the beer can on the foil and rest the cauliflower on the top. Cover the grill and cook until the cauliflower is browned and tender, about 1 hour. Remove the cauliflower and brush with melted butter mixed with hot sauce and grated garlic. Return the cauliflower to the beer can and grill 10 to 15 more minutes. Brush with more spicy butter and sprinkle with salt. Serve with blue cheese dressing.
BEER BATTERED FRIED VEGETABLES
My family really likes these fried vegetables for a change of pace, especially when it's near fair time. You can use any type of dipping sauce that you enjoy with these vegetables.

- In a medium bowl, mix together 1 1/2 cup flour and beer with a wooden spoon; let stand for at least 3 hours at room temperature.
- Mix eggs and milk in a small bowl. In a separate bowl mix together 1/2 cup flour and salt and pepper.
- Heat oil to 375 degrees F (190 degrees C).
- Dip each vegetable in the egg and milk mixture. Next dip the vegetable into the flour and seasoning mixture, finally dip the vegetable in the beer and flour mixture. Place the vegetables into the oil and fry until golden brown,

Great appetizer or snack. The breading is not too heavy. The only time I've seen guys eat cauliflower during a football game is when it's this recipe.

- Preheat fryer oil to 375.
- Place the beaten eggs, milk and salt in a shallow bowl (or a large baggie).
- In a separate shallow bowl (or another large baggie), mix together flour, cheese, garlic powder, thyme, oregano, paprika, cayenne, and pepper.
- Place flowerets into egg mixture and toss (or shake baggie) to coat well.
- Remove and place into flour mixture and toss (or shake baggie) to coat well.
- Fry in batches for 4 - 6 minutes or until golden brown.
- Drain on paper towels and lightly salt.
- *Serve w/ dipping sauces such as marinara, ranch or blue cheese.

This is a great and easy recipe for fried cauliflower. I recommend only using self-rising flour because it helps it get more crispy and the right texture. You can serve this with ranch, blue cheese dressing, or marinara sauce.

- Heat oil in a deep-fryer or large saucepan to 375 degrees F (190 degrees C).
- Preheat the oven to 200 degrees F (95 degrees C).
- Whisk flour, beer, black pepper, and salt together in a bowl to make batter. Submerge cauliflower pieces in batter to coat. Working in batches of 10, drag 1 piece at a time gently against the rim of the bowl to remove excess batter and transfer to the hot oil. Fry cauliflower, stirring gently to keep pieces separate, until golden, 2 to 4 minutes.
- Use a slotted spoon to transfer fried cauliflower to a baking sheet lined with paper towels. Keep warm in the oven.
- Return oil to 375 degrees F (190 degrees C) between batches and continue frying cauliflower.

- Make the slaw:
- Cut the cabbage into the thinnest strips you can and make sure those pieces are no longer than 2 inches. This is a great time to get good with your knife if you are looking for a silver f**king lining in all that chopping. Chop the carrot into thin matchsticks of the same length. Got that s**t down now, right? In a small bowl, mix together the lime juice, vinegar, oil, and salt. Add the dressing right before you are going to eat and toss that s**t well. Fold in the cilantro just before serving.
- Make the tacos:
- Crank your oven to 400°F. Chop the cauliflower into small florets no bigger than a quarter. In a saucepan over medium heat, warm the beer, broth, lime juice, tamari, hot sauce, and garlic. Add the cauliflower and simmer for about 90 seconds. Drain.
- In a large bowl. toss the spices, salt, and olive oil together. Add the cauliflower and onion and stir 'til those f**kers are coated. Dump it on a rimmed baking sheet and bake until browned, stirring halfway, about 20 minutes.
- To assemble the tacos, warm the tortillas in the oven or microwave for a hot minute and then pile them high with the cauliflower filling, slices of avocado, some of the slaw, and top with plenty of salsa.

- 1. Cut the cauliflower into small flowerettes and set a side.
- 2. In a mixing bowl beat the two egg whites till fluffy like foam. While beating add plain flour until the mixture is thickened.
- 3. Once the mixture is a thick paste, add the two ice cubes and keep beating till they melt. At this point, if the mixture is still too thick add another ice cube.
- 4. Add desired amount of chillie flakes and salt to taste.
- 5. Coat the flowerettes well in the mixture. (A little excess mixture on each flowerette won't hurt!).
- 6. Deep fry the coated flowerettes till golden brown. (Make sure the oil is very hot before you throw in the cauliflower).
- 7. Serve with preferred dip.
