Mom's Homemade White Bread Rolls (Or Loaves) image

My mom makes this every year for the holidays, these are delicious and pretty easy to make. I've gotten detailed in the instructions, because she gave me this recipe when I was first learning how to make bread.

Yield 1 ten X thirteen pan of rolls

Number Of Ingredients 7

2 cups water
1 (1/4 ounce) package yeast
1/4 cup lukewarm water
2 tablespoons sugar
1 tablespoon shortening
2 teaspoons salt
6 cups flour

Steps:

  • Dissolve yeast and 2 Tablespoons sugar in 1/4 cup warm water, set aside.
  • Microwave 2 cups water, shortening and salt, until the shortening melts.
  • Stir this mixture until it completely dissolves.
  • Start adding flour about 2 cups to start to this mixture, just a little at a time so that it stays smooth and doesn't get lumpy.
  • Then add yeast mixture, mix well.
  • Continue adding flour and then turn out on floured surface and knead in remaining flour, until no longer tacky.
  • Grease a large bowl or pan with vegetable oil.
  • Put the bread in this bowl cover and let it rise.
  • If you use a fast acting yeast it should take about 45 minutes.
  • Turn out on the counter and fold in sides, put back in bowl and let rise again.
  • After the second rising it is time to turn it out and make the rolls or bread and place it in a pan.
  • Make sure the pan is well oiled with vegetable oil.
  • Place them in the pan (pans) and let rise one last time and then bake them at 375°F oven until done, about 20 minutes or so.

1 1/3 cups milk
1 1/4 teaspoons salt
2 tablespoons granulated sugar
2 tablespoons butter
3 1/4 cups all-purpose flour or 3 1/4 cups bread flour
1 1/4 teaspoons yeast

Steps:

  • Measure ingredients into baking pan of bread machine recommended by the manufacturer. Insert pan into the oven chamber. Select Dough Cycle.
  • Remove dough to a lightly floured surface; cover with a large bowl and let rest for 10 to 15 minutes.
  • Choose one or more of the shaping and finishing method described below.
  • Clover leaf rolls:.
  • Divide the dough into 12 portions. Divide each into 3 pieces. Roll into balls. Place 3 in each cup of a lightly greased muffin tin. Cover and let rise in a warm, draft-free place for 30 to 45 minutes or until doubled in volume. Bake at 375°F (190°C) for 15 to 20 minutes or until rolls sound hollow when tapped on the bottom.
  • Golden Glaze:
  • Brush freshly baked rolls with 1 to 2 tbsp of melted butter.
  • Basic Pan Rolls:
  • Divide dough into 12 portions and place, just touching in a 8 inch pan.

3 1/2-4 cups all-purpose flour
3 teaspoons bread machine yeast or 3 teaspoons other instant yeast
1 tablespoon salt
1 tablespoon superfine sugar
1 1/2 cups milk
1 1/2 tablespoons butter, softened
vegetable oil, for bowl and baking sheet
1 large egg, lightly beaten
1 tablespoon milk
1 pinch salt
1 teaspoon sesame seeds
1 teaspoon poppy seed

Steps:

  • In a large bowl, combine 3 1/2 cups flour, yeast, salt and sugar.
  • In a small saucepan, combine milk and butter, and place over low heat until milk is lukewarm.
  • Pour into bowl of dry ingredients, and mix with a fork to make a rough dough, adding more flour if necessary.
  • Using a mixer with dough hook, or by hand, knead dough until smooth and silky.
  • Place in an oiled bowl, and cover with plastic wrap.
  • Let rise in a warm place until double in size, about 1 hour.
  • Punch air out of dough.
  • Oil a baking sheet, and set aside.
  • Pull off pieces of dough the size of walnuts, and form into round balls.
  • Place on baking sheet almost touching, about 1/4 inch apart, in 6 rows of 5 each.
  • Cover with a kitchen towel, and let rise in a warm place 30 minutes.
  • Meanwhile, heat oven to 425 degrees.
  • When rolls have risen, make a glaze by beating together the egg, milk and salt.
  • Paint rolls with glaze.
  • Sprinkle one row with sesame seeds and the next with poppy seeds; leave the third row plain, and then repeat pattern.
  • (A teaspoon of seeds should decorate 2 rows.) Bake rolls until risen and golden brown, about 15 minutes.
  • Transfer to a cooling rack or serve immediately.
  • To serve, place on a plate so rolls can be torn off to be eaten.

From King Arthur Flour, this is cool because it's made in a pie pan opposed to a regular baking pan. Could probably sub the butter for oil and white flour for wheat flour easily. I'm including both the original instructions, and bread machine instructions!

2 cups all-purpose flour
2 1/4 teaspoons active dry yeast
2 tablespoons sugar
1/2 teaspoon salt
1/2 cup milk
1/4 cup water
2 tablespoons butter

Steps:

  • OLD SCHOOL METHOD: combine 3/4 cup flour, yeast, sugar, and salt in a large bowl.
  • Heat the milk, water, and butter until warm, then add to the flour mixture.
  • Beat 2 minutes at medium speed with an electric mixer, scraping the sides of the bowl occasionally.
  • Add 1/4 cup flour, beat 2 minutes at high speed.
  • Stir in enough of the remaining flour to make a soft dough, knead on a lightly floured surface until smooth and elastic, about 8-10 minutes.
  • Cover, let rest for 10 minutes.
  • Divide the dough into 12 pieces and shape into balls. Place in a greased 8" pie pan. Cover and let rise in a warm draft-free place until doubled in size, about 30 minutes. Go to Step #9!
  • BREAD MACHINE METHOD: Place the ingredients in the order required by your bread machine. With mine, I have to proof the yeast first in the sugar and water for 10-15 minutes. After proofing, do a regular 1-lb dough cycle in your machine. Mine takes 90 minutes. (NOTE- I'd recommend using closer to 2 1/2-3 cups flour for the bread machine method as mine tends to produce runny dough time to time.).
  • When the dough cycle's finished, divide the dough into 12 pieces and shape into balls. Place them into a greased 8" pie pan.
  • Bake at 375F for 20 minutes or until set. Remove from the pan and brush with melted butter if desired, serve warm and immediately.

MOM'S AIR BUNS (ROLLS)

This recipe for light, soft, buns did NOT come from my Mom, but it is so good that I dedicate it to all Moms who bake bread..or anyone who bakes bread for that matter! I will give the original recipe, but I admit that I now use the ABM to knead the dough, and will give instructions for this variation at the end. Preparation time is the length of time for the "dough" cycle on my bread machine. For anyone wishing to make 100% whole wheat buns,(a variation of this recipe, and equally delicious IMHO), I have submitted it as recipe #168802 with minor alterations. More tweaking...I now like Mom's 100% Whole Grain Air Buns, recipe #186744 even better for a healthier version.

1/2 cup warm water
1/2 tablespoon yeast
1 teaspoon sugar
1/4 cup lard (I use shortening)
1/4 cup granulated sugar
1/2 teaspoon salt
1 tablespoon white vinegar
1 1/4 cups warm water
1 1/2 cups white bread flour
3 cups more white bread flour

Steps:

  • Mix the 1/2 cup warm water, yeast, and 1 tsp sugar, and allow to proof.
  • Melt the lard, and mix in sugar, salt, vinegar, and warm water. When body warm, add the proofed yeast, and beat in 1 1/2 cups flour. Let rest for 15 minutes.
  • Knead in approximately 3 cups more flour.
  • Let dough rise till double (approximately 2 hours).
  • Deflate dough, and form into buns, any size, (I make 16 large) or loaves. Rise till double (takes approximately one hour, but depends on size/shape chosen).
  • Bake buns at 350°F for approximately 20 minutes.
  • For ABM, in my machine, on the "dough" cycle, I use 2 teaspoons of bread machine yeast, and I reduce the water to about 1 1/2 cups, the flour to 4 cups, adding a tad more water or flour as it kneads to get a smooth,soft ball of dough. I leave the other ingredients as posted.

My mother was always experimenting with recipes. She had a knack for combining the right ingredients. This is one of my most treasured recipes she shared with me.

Number Of Ingredients 12

1/4 cup finely chopped onion
4 garlic cloves, minced
1/4 cup butter, cubed
1 teaspoon dried basil
1 teaspoon dried oregano
1/2 teaspoon each dried marjoram, parsley flakes and tarragon
1 package (1/4 ounce) active dry yeast
3/4 cup warm water (110° to 115°)
1 teaspoon sugar
1 teaspoon salt
2 cups all-purpose flour
1 egg, lightly beaten

Steps:

  • In a small skillet, saute onion and garlic in butter until tender. Stir in herbs; cool. In a food processor, dissolve yeast in warm water. Add the sugar, salt and onion mixture. Add flour; cover and process until dough forms a smooth ball. , Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a floured surface; divide into 24 pieces. Shape each into a ball. Place 2 in. apart on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , Brush with egg. Bake at 350° for 20-25 minutes or until golden brown. Remove from pans to wire racks. Serve warm.

1 1/2 c milk, 2%
1 stick butter
1/2 c water (very warm)
1 1/2 Tbsp active dry yeast
1/2 c sugar
2 eggs
2 tsp salt
5 1/2 -6 c bread flour
2 Tbsp melted butter (for brushing on baked rolls)

Steps:

  • 1. In a large mixing bowl, proof yeast in the 1/2 cup lukewarm water, with half the sugar dissolved in it.
  • 2. In a 2-cup measuring cup, heat the milk and butter together until the butter is melted.
  • 3. When the yeast is bubbly, add 1 cup flour and beat well.
  • 4. Then add eggs, salt, and another cup flour. Beat well.
  • 5. Last, add the warm milk and butter, remaining sugar, then 3 cups flour and mix by hand; gradually adding another cup of flour.
  • 6. Turn out onto silicone mat or floured surface and knead until you have worked in the flour.
  • 7. Work until the dough is only slightly sticky.
  • 8. Set in a warmed oven covered by a tea towel, to rise.
  • 9. When the dough is doubled in size, remove from oven.
  • 10. Using two 9x13" pans, form dough into dinner roll shapes and place dough into the pans (20 per pan).
  • 11. When rolls have doubled in size, bake in a 375 F preheated oven for 13- 15 min.
  • 12. When out of the oven, brush with melted butter.
