MOM'S TEXAS HASH



Mom's Texas Hash image

This is a quick recipe my mother made a lot when I was growing up. It has a great flavor! Serve over rice.

1 ½ pounds ground beef
1 medium onion, chopped
1 (28 ounce) can diced tomatoes with juice, pureed
2 tablespoons chili powder, or to taste
1 tablespoon Worcestershire sauce, or to taste
salt and ground black pepper to taste

Steps:

  • In a skillet over medium heat, brown the ground beef with the onion, until the meat is no longer pink, and the onion is soft; drain fat.
  • In a Dutch oven or large saucepan, combine the ground beef mixture, and pureed tomatoes. Season with Worcestershire sauce, chili powder, salt and pepper. I just keep adding stuff until it tastes good. Bring to a boil, and let simmer for 15 to 20 minutes to blend flavors. Serve over rice.

2 tablespoons olive oil
1 cup diced onion
1 cup diced green bell pepper
1 tablespoon minced fresh garlic
1 pound ground beef, 80/20
½ teaspoon dry mustard
2 teaspoons chili powder
2 teaspoons kosher salt
¼ teaspoon freshly ground black pepper
½ cup uncooked long grain white rice
2 tablespoons tomato paste
1 14.5-ounce can diced tomatoes with juice
1 cup water
1 teaspoon Worcestershire sauce
1 cup shredded cheddar cheese, optional and not shown in our photo

Steps:

  • In a skillet that has a tight fitting cover, heat olive oil over medium high.
  • Add onion, peppers, garlic, ground beef, dry mustard, chili powder, salt and pepper. Sauté until ground beef is no longer pink, breaking up beef as you cook.
  • Add rice and cook for two minutes letting rice absorb liquid.
  • Add tomato paste and cook for one minute.
  • Add canned tomatoes with juice, water and Worcestershire sauce. Stir, cover and simmer for 20 minutes covered.
  • After 20 minutes, remove lid and fluff the mixture then serve. If the mixture is too wet, cook for another few minutes with lid off.
  • If you are using the cheese, sprinkle on top for last few minutes of cooking time with lid on.

6 to 8 red potatoes, cubed
1 white onion, chopped
2 bell peppers, chopped
2 tablespoons fresh rosemary leaves, minced
Olive oil
Salt and black pepper

Steps:

  • Preheat a grill to between 300 and 350 degrees F.
  • Put potatoes, onion, bell peppers, and rosemary in a large bowl and toss to combine. Coat with olive oil and toss again. Add salt and pepper, to taste.
  • When grill is preheated, place a medium skillet over the fire. Pour the contents of the bowl into the skillet. Continually stir potatoes until cooked thoroughly, approximately 25 minutes. Carefully remove hot skillet from grill and serve.

3 large onions
1 large green pepper, minced
3 tablespoons vegetable oil
1 lb ground beef
2 cups cooked tomatoes
2 cups uncooked noodles
1 teaspoon chili powder
2 teaspoons salt
1/8 teaspoon pepper

Steps:

  • Saute onions& green pepper until onions are yellow.
  • Add meat and brown.
  • Stir in tomatoes, noodles, chili powder, salt& pepper.
  • Pour into greased 2 quart baking dish.
  • Cover& bake at 350 for 1 hour, removing cover during last 15 minutes of baking.

1 lb ground beef
1/2 small onion, diced
1/4 cup diced green pepper
1 tsp chili powder
1 cup rice
1 can (14 oz.) diced tomatoes
1 1/2-2 cups water
4 oz Velveeta Cheese, sliced
Salt and pepper to taste

Steps:

  • In large, deep skillet, or Dutch oven, brown ground beef along with onion and green pepper. Drain. Return to pan.
  • Add chili powder, mix thoroughly then flatten. Layer with rice, then tomatoes. Add enough water to cover tomatoes. Bring to boil.
  • Reduce heat to low and simmer, covered, for 30 to 45 minutes, or until water is absorbed and rice is tender. Remove from heat. Top with Velveeta Cheese. Return lid and let sit 5 minutes or until cheese is melted. Serve.
