OLD FASHIONED GOULASH
A Classic Old-Fashioned Goulash with Beef, veggies and noodles will be your go-to dinner any night of the week. Don't worry about food going to waste, because you can make an entirely new dish using the leftovers!

Steps:
- Cook the macaroni according to package directions, but shorten the cooking time by 3 minutes. Drain and set aside.
- Preheat a large pan over medium heat until hot. Add in the Ground Beef, onion and garlic. Cook for about 10 minutes until reaching 160°F, crumbling the Beef as it cooks.
- Add in the Worcestershire sauce, tomato sauce, diced tomatoes and stir to combine. Allow to simmer on medium heat for about 15 minutes.
- Add in the cooked macaroni. Season with salt, pepper and Italian seasoning.
- Stir to combine and enjoy!

- Heat a large skillet over medium-high heat. Cook and stir beef, onion, bell pepper, and Worcestershire sauce in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add tomatoes, corn, salsa, and taco seasoning. Cover and simmer while preparing macaroni.
- Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain. Stir macaroni into beef mixture.

MOM'S TACO GOULASH

- Brown ground beef in a deep skillet.
- While beef is cooking, grease the inside of an 11" x7", 2 1/2" high baking dish. I use about a teaspoon of canola oil to coat with a paper towel . Set aside.
- When the meat is almost completely browned, stir in the taco seasoning and continue cooking for 1 minute.
- After beef is done browning, add the cream of mushroom soup, black beans, green chile, and whipping cream. Mix well and cook for 2 minutes on low medium heat. Remove from heat.
- Lay 2 tortillas on bottom of the dish, tear another tortilla to fit empty spaces. Spread 3 ladles of the beef/soup mixture on top of the tortillas, then sprinkle 1 cup of cheese. Repeat 2 more layers of tortillas, beef/soup mixture, cheese.
- Cover with foil and place in a 350 preheated oven on the top rack for 25 minutes. Allow 10 minutes to cool before serving.

- In a large pot brown hamburger with onion.
- In a separate pot cook noodles.
- Drain excess fat from hamburger.
- Add mushrooms, celery, tomatoes, catchup, salt and pepper to hamburger.

TACO 'GOULASH'
This recipe came from sheer necessity (kids are home, can't get to the store,have to work with what I have kinda recipes.) My ingredient list is approximate because I never measure anything :) This recipe is fairly basic, but the sky's the limit for additions. I baked mine in the tin trays because the kids got a kick out of having their own 'take out' portion.

- Brown ground beef, with spices to add more flavor, drain fat.
- Cook your rice, this is great for leftover rice!
- To a large pot add kidney beans,chunky tomatoes, taco seasoning,ground beef,rice and spices.
- Simmer until warmed through.
- *At this point, I dished mine out into individual tin trays and baked for about 5 minutes at 325, as you can see in the picture. This step is not necessary.

- Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).

- Bring a large stockpot to boil then add pasta and cook until al dente. Pasta will get too mushy when all mixed together with sauces so resist the urge to cook to soft. Once cooked, drain and set aside.
- While pasta is cooking in a small skillet heat pan to medium high and add olive oil to coat. Cook onions for 1-2 minutes until clear. Add hamburger and cook for 5 minutes, breaking down meat to crumbles. Add 1/2 packet of taco seasoning and cook for 5 minutes. Add canned tomatoes with juices and 1/2 cup water. Continue to cook for 15 or so minutes until the liquid has absorbed. Remove from heat.
- Add tomato soup to pasta, stir to incorporate. Then add hamburger mixture to pasta and stir. Then add pasta sauce and stir well. reserve 3/4 cup cheese. Add the rest of the cheese in 2 parts to allow the cheese to mix and melt completely.
- If serving immediately from the pot, you can just sprinkle the last 3/4 cup of cheese over the top and serve right out of the pot.
