TACO 'GOULASH'

Taco 'goulash' image

This recipe came from sheer necessity (kids are home, can't get to the store, have to work with what I have kinda recipes.) My ingredient list is approximate because I never measure anything :) This recipe is fairly basic, but the sky's the limit for additions. I baked mine in the tin trays because the kids got a kick out of having their own 'take out' portion.

Provided by Corilayn

Categories     One Dish Meal

Time 50m

Yield 9 tin trays, 8 serving(s)

Number Of Ingredients 10

1 -1 1/2 lb ground beef
2 cups cooked red kidney beans
2 cups cooked rice
1 (540 ml) can of chunky tomatoes
1 (35 g) package taco seasoning
1 tablespoon cumin (to taste)
1 1/2 tablespoons chili powder (or more)
1 cup shredded cheese
1 cup shredded lettuce
2 cups nacho chips

Steps:

  • Brown ground beef, with spices to add more flavor, drain fat.
  • Cook your rice, this is great for leftover rice!
  • To a large pot add kidney beans, chunky tomatoes, taco seasoning, ground beef, rice and spices.
  • Simmer until warmed through.
  • *At this point, I dished mine out into individual tin trays and baked for about 5 minutes at 325, as you can see in the picture. This step is not necessary.
  • After plating add shredded cheese and lettuce to the top.
  • Arrange nacho chips around the edge.
  • Dollop with sour cream.

MOM'S SIMPLE GOULASH

Mom's Simple Goulash image

I actually think my mom got this from an aunt of mine...so simple and you can add anything! We added a couple of things to the original...

Provided by TaraAnn66

Categories     Stew

Time 45m

Yield 4 serving(s)

Number Of Ingredients 10

1 lb lean hamburger
1 medium green pepper, chopped
1 sweet onion, chopped
1 1/2 cups elbow macaroni, cooked (or any other type of small pasta)
1 (8 ounce) can tomato sauce
1 (14 1/2 ounce) can stewed tomatoes
1 (8 ounce) can sliced mushrooms
italian seasoning (to taste)
ground black pepper (to taste)
salt (to taste) or garlic salt (to taste)

Steps:

  • Fry hamburger, pepper, and onion in large skillet.
  • Drain fat if needed (if you're not sure, you can also only cook the macaroni part way so that while simmering the uncooked pasta will soak up excess moisture when added to the mixture).
  • Add remaining ingredients and heat well.
  • Add macaroni and heat through.

I make this a lot. Ours is a different variation and simpler. I put peas in mine; the boys leave them out, lol. My sister said I was not remembering that Mom used corn instead of peas. I checked and, yes, the heifer was right, grrr, lol, so you can put corn in too.

  • Bring a large stockpot to boil then add pasta and cook until al dente. Pasta will get too mushy when all mixed together with sauces so resist the urge to cook to soft. Once cooked, drain and set aside.
  • While pasta is cooking in a small skillet heat pan to medium high and add olive oil to coat. Cook onions for 1-2 minutes until clear. Add hamburger and cook for 5 minutes, breaking down meat to crumbles. Add 1/2 packet of taco seasoning and cook for 5 minutes. Add canned tomatoes with juices and 1/2 cup water. Continue to cook for 15 or so minutes until the liquid has absorbed. Remove from heat.
  • Add tomato soup to pasta, stir to incorporate. Then add hamburger mixture to pasta and stir. Then add pasta sauce and stir well. reserve 3/4 cup cheese. Add the rest of the cheese in 2 parts to allow the cheese to mix and melt completely.
  • If serving immediately from the pot, you can just sprinkle the last 3/4 cup of cheese over the top and serve right out of the pot.
