This recipe was shared with me by my mom. This is THE BEST potato salad I have ever had! Whenever we have family get-togethers, I always ask my mom to bring this salad! The vegetables add such a nice refreshing crunch. My mom also likes to add 1/4 cup diced green pepper and 1/4 cup diced cucumber, but I prefer it without.

4 cups cubed red potatoes
1/4 cup onion
1/4 cup diced raw carrot
1/4 cup sliced raw radish
1/4 cup diced raw celery
3 large hard-boiled eggs, sliced
1 cup Miracle Whip
1/2 cup sour cream
2 tablespoons vinegar
2 tablespoons sugar
1 1/2 teaspoons salt
1/8 teaspoon pepper

Steps:

  • Boil potatoes, with skins on, until tender.
  • Drain and allow potatoes to cool.
  • Once cool enough to handle, remove skins and cut into bite-size cubes.
  • Meanwhile, dice onion, carrot, radish, and celery.
  • Mix ingredients for dressing and refrigerate until needed.
  • Combine potatoes, vegetables, and 2 sliced hard boiled eggs.
  • Pour dressing over and mix well to combine.
  • Top with remaining sliced egg and sprinkle with paprika if desired.

MOM'S DILL POTATO SALAD

This is a great alternative to the familiar yellow potato salad. The dried dill weed is much more potent than fresh and alleviates some of the blandness of similar recipes.

3 pounds new red potatoes
1 cup mayonnaise
¾ cup sour cream
2 tablespoons dried dill weed
4 green onions, chopped
1 pinch salt and ground black pepper to taste

Steps:

  • Place potatoes in a large pot and cover with water. Bring to a boil over high heat, then turn heat to medium-low, cover, and cook until tender but still firm, about 15 minutes. Drain, cool in an ice water bath until cold, about 5 minutes. Leaving skins on, cut into bite-size pieces, and place in a large mixing bowl.
  • Combine mayonnaise, sour cream, dill weed, and green onions in a bowl and stir until blended. Season with salt and pepper to taste. Pour mayo mixture over potatoes and toss to coat evenly. Adjust seasoning if necessary. Cover and refrigerate at least 2 hours, or overnight.

6 white potatoes or 6 red potatoes
1 red pepper
1 green pepper
1 Spanish onion (red onion)
4 eggs, boiled
2 cucumbers, remove the seeds (use the meat only)
2 1/2 cups Hellmanns Mayonnaise
1/3 cup Dijonnaise mustard (mom always used plain yellow ( i modified the recipe with the Dijonnaise) or 1/3 cup yellow mustard (mom always used plain yellow ( i modified the recipe with the Dijonnaise)
1 tablespoon horseradish
salt and pepper

Steps:

  • Boil potatoes and cut into cubes, cool.
  • Cut the vegetables and eggs up to whatever size you prefer.
  • Combine veggies with potatoes and toss.
  • Add mayo, mustard, horseradish, salt and pepper to taste. Stir.
  • Better after it has time to "sit".

My mother's potato salad -- chunky and flavorful -- a favorite at our family gatherings. Best if made the day before. Season with salt carefully because the olives will be salty.

5 pounds whole russet potatoes
5 eggs
1 ½ cups mayonnaise (such as Hellman's®)
2 tablespoons prepared yellow mustard (such as French's®)
1 small onion, chopped
3 stalks celery, chopped
7 sweet gherkins, chopped
25 pimento-stuffed green olives, sliced
1 pinch salt to taste
1 green bell pepper, sliced

Steps:

  • Place the potatoes into a large pot and cover with salted water. Bring to a boil over high heat, then reduce heat to medium-low, cover, and simmer until tender, about 20 minutes. Drain and allow to steam dry for a minute or two. Allow to cool, peel, and cut into cubes.
  • Place the eggs into a saucepan in a single layer and fill with water to cover the eggs by 1 inch. Cover the saucepan and bring the water to a boil over high heat. Once the water is boiling, remove from the heat and let the eggs stand in the hot water for 15 minutes. Pour out the hot water, then cool the eggs under cold running water in the sink. Peel and slice once cold. Reserve 1 attractive slice of egg for garnish.
  • Mix the mayonnaise and mustard together in a bowl. In a large salad bowl, lightly mix together the potatoes, eggs, onion, celery, sweet gherkins, and olives until thoroughly combined. Pour the mayonnaise dressing over the salad, and gently toss gain to coat the ingredients with dressing. Season to taste with salt, and top the salad with slices of green pepper and reserved egg slice in the center for garnish. Chill until ready to serve.

3 lbs small red potatoes
2 large celery ribs, thinly sliced or 2 large celery salt
1 cup mayonnaise (to taste)
1 -2 tablespoon mustard (to taste)
2 tablespoons pickle juice
2 tablespoons onions, chopped
2 teaspoons salt
1/4 teaspoon fresh coarse ground black pepper
8 -10 pieces bacon, cooked & crumbled
1 cup pickle, diced

Steps:

  • Place whole unpeeled potatoes in a large saucepan. Cover with water. Cover pan and bring to a boil. Simmer for 25 to 30 minutes, or until potatoes can be pierced easily with a fork. Drain and let cool until easy to handle.
  • Cut unpeeled potatoes into halves or quarters, depending on size of potatoes. Chunks should be no larger than 1 inch.
  • In a small bowl combine mayo, mustard, pickle juice & celery salt or other seasonings you like I add salt & pepper.
  • In a large bowl, combine potatoes, pickles, bacon & sauce mix. stir to blend. Cover and refrigerate until serving time.
  • Serves 10 to 12.

2 tablespoons onion flakes
6 hard-boiled eggs, chopped

1 cup relish sandwich spread (Kraft Original Sandwich Spread)

1 lb shell pasta
4 new potatoes, if small use 6
4 hard-boiled eggs
15 ounces peas
1/4 cup plain yogurt
3/4 cup mayonnaise
1 large sweet onion, diced
2 carrots, chopped finely
2 stalks celery, chopped finely
1 teaspoon Dijon mustard
1 tablespoon fresh dill, finely chopped
salt and pepper, to taste

Steps:

  • Wash and peel the new potatoes than cut into cubes. Add potatoes and eggs to a dutch oven or large pot and over medium high heat cook until potatoes are just fork tender, approximately 20 minutes. (Do not let the potatoes get over cooked because they will turn to mush when making the salad.) Cook pasta according to package directions.
  • Drain pasta well and place in a large mixing bowl. When potatoes and eggs are ready drain well and set eggs in a bowl of ice water to cool. Add potatoes to mixing bowl with pasta and add remaining ingredients. Peel and chop eggs, add to bowl. Gently fold everything together, taste, and season with salt and pepper.
  • Place in refrigerator until chilled or overnight for best flavor. More mayonnaise and yogurt can be added if creamier texture is desired.

6 -8 red potatoes
4 -6 eggs
1 bunch scallion
1 medium onion
1/2 green pepper
mayonnaise
prepared mustard
celery salt

Steps:

  • Boil potatoes and eggs.
  • Cool enough to handle.
  • Peel eggs and chop.
  • Cube potatoes with or without skins. I prefer the skins on it adds color and texture.
  • Add sliced scallions, minced green pepper and minced onion.
