1 cup long grain white rice
4 pork chops, bone in
Salt
One 10-ounce can beef broth, plus more if needed
4 onion slices, separated into rings
1/4 teaspoon pepper

Steps:

  • Preheat the oven to 350 degrees F.
  • In a medium skillet, melt the butter over medium-low heat. Add the rice and saute until it is light brown, about 5 minutes.
  • Spread the rice in a 9- by 13- by 2-inch casserole. Sprinkle the pork chops with salt and arrange them on top of the rice. Pour the broth and 2/3 cup water over the chops. Spread the onion rings over the chops and sprinkle them with the pepper. Cover the dish with aluminum foil and bake until the pork chops are tender, about 45 minutes.
  • Change the oven to broil, add a bit more broth if the rice is dry and return the dish to the oven for a couple of minutes until the pork is browned.

1 ½ cups uncooked rice
1 (10 ounce) can cream of chicken soup
1 cup water
4 ounces shredded Cheddar cheese
1 pound boneless pork chops

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 3-quart casserole dish.
  • Stir chicken broth, rice, cream of chicken soup, and water together with a whisk in the prepared casserole dish until smooth; add Cheddar cheese, season with salt and pepper, and stir.
  • Lie pork chops into the rice mixture in a single layer; season with more black pepper.
  • Bake in preheated oven until rice in the middle of the dish is tender and pork chops are golden brown, about 80 minutes.

1 (10.5 oz) can condensed cream of mushroom soup, NOT diluted
2 cups beef broth
1 cup uncooked long grain white rice
¼ teaspoon garlic powder
¼ teaspoon dried chives
¼ teaspoon onion powder
4 thick cut pork chops ((bone-in or boneless is fine))
1 (1 ounce) packet Lipton Onion Soup & Dip Mix (or other seasoning of choice, see notes below)
Optional garnish: chopped fresh parsley or basil

Steps:

  • Preheat oven to 350°F. Spray a 9 x 13-inch baking dish with cooking spray.
  • Whisk together the soup, broth, rice, garlic powder, dried chives, and onion powder. Transfer to the prepared dish.
  • Pat the pork chops dry; place on top of the rice. Sprinkle onion soup mix over the pork chops, to taste. If you don't like a strong onion flavor or if you don't want the chops too salty, use just a portion of the seasoning (not the whole packet).
  • Cover dish with foil and bake for 30 minutes. Check the pork chops at this point. If they are done (and have reached an internal temperature of 145°F), remove them from the dish, cover with foil, and set aside to rest. Give the rice a stir. The rice will not be tender yet, so cover the dish again and return to the oven for about 25-30 more minutes, or just until rice is tender and most of the liquid is absorbed. Fluff the rice with a fork and serve with the pork chops. Garnish with herbs, if desired.

2 cups rice (Uncooked)
2 1/2 cups water
1/2 cup margarine (Cut into 4 or 5 chunks)
1 package dry onion soup mix
4 -8 center-cut pork chops (I vary number depending on how many I'm feeding)

Steps:

  • Brown pork chops in frying pan, if desired.
  • (This would be for the appearance of the pork chops only. It does not alter the taste of the recipe.) Place rice in 9 x 13 roasting pan.
  • Add water, onion soup mix and combine with rice.
  • Place the 4 or 5 chunks of margarine on top of rice.

2 tablespoons butter, divided
1 1/2 cups uncooked, long grain rice
1/4 teaspoon each kosher salt, fresh cracked black pepper, garlic powder and Creole or Cajun seasoning (I like Slap Ya Mama), {affil link} or to taste
1 1/2 tablespoons cooking oil (vegetable, canola, olive), divided
4 to 6 bone-in, sirloin or rib pork chops or pork shoulder steaks, 1/2 to 3/4-inch thick
3 cups beef stock or broth
2 teaspoons Worcestershire sauce, or to taste
1/4 teaspoon dried thyme, crushed
1/4 teaspoon dried rosemary, crushed
1/2 teaspoon dried sage
1 cup of coarsely chopped onion
1/2 cup of coarsely chopped green bell pepper

Steps:

  • Preheat oven to 350 degrees F. Butter a a 9 x 13 inch baking dish; set aside.
  • Heat 1 tablespoon of butter in a cast iron or other heavy skillet on medium high. Add rice and cook, stirring often, until lightly toasted. Transfer rice to baking dish.
  • Mix together the seasonings and sprinkle both sides of the chops. Heat 1 tablespoon cooking oil in same skillet over high and brown chops, in batches, to quickly sear, about 1 minute per side, adding additional oil as needed; remove and set aside.
  • Whisk together the beef broth, Worcestershire and herbs. Pour half of the broth over the rice and stir together.
  • Transfer chops on top of the rice along with any accumulated pan juices.
  • Reduce heat on skillet to medium and add remaining tablespoon butter, onion and bell pepper to the skillet, cook and stir until slightly softened; pour over the chops.
  • Deglaze pan with a splash of the remaining broth mix and transfer with remaining broth over the chops.
  • Cover baking pan tightly with a double layer of aluminum foil and bake at 350 degrees F, until chops are cooked through, most all of the liquid has been absorbed and rice has swelled up to surround chops, about 45 minutes for 1/2-inch chops and an hour or more for 3/4-inch. Internal temperature should be 145 degrees F on an instant read thermometer, when inserted into the side of thickest chop. Do not overcook!
  • Serve with quick fix green beans or a nice mixed garden salad and some sweet tea.

2 cup hot water
6 1 inch thick pork loin chops, trimmed bone-in
1/4 tspn pepper
10 ounce Can cream of condensed celery soup, undiluted
1/2 cup Milk

Steps:

  • Combine rice, seasoning packet from rice mix, and hot water; place in a lightly greased 9x13x2 inch baking dish. Set aside
  • Sprinkle pork chops with pepper and place over rice mixture
  • Cover and bake at 350* for 1 hour
  • Uncover casserole; combine cream of celery soup and milk, and pour over casserole. Bake casserole, uncovered, 15 minutes or until thoroughly heated.

2 cups Carrots, sliced
1 cup Onion, diced
1 clove Garlic, Minced
10 cups Kale, chopped
4 Pork Chops, boneless 1" thick
1 Tbls Salt ((enough to sprinkle on pork))
1 Tbls Fresh Ground Pepper ((enough to sprinkle on pork))
4 tsp Extra Virgin Olive Oil ((2 tsp for Kale, 2 tsp for pork))
2 Tbls Corn Starch
1/4 cup Milk ((Skim, 1% or 2% are all fine))
2 cups Chicken Broth
8 oz Gruyere, finely shredded
Salt, to taste
Fresh Ground Pepper, to taste

Steps:

  • Peel and slice Carrots into quarter size disks. If the carrot diameter is larger, just cut slices in half.
  • Dice Onion. Mince Garlic.
  • Rince, pat dry, then roughly chop the Kale. You will need roughly 9-10 cups to cook down to enough for 4 servings. It will look like a TON, but trust me, it will cook down.
  • Preheat oven to 350 F degrees.
  • Preheat a medium-large skillet (large enough to fit 4 pork chops) on high. Add 2 tsp Extra Virgin Olive Oil to the skillet to coat. Then add the Kale in batches until it is all cooked down. Turn the kale so that it all gets access to heat and starts to cook down. Add a couple tablespoons of water to help it wilt if needed with each additional batch of kale, but just make sure that the liquid cooks off.
  • Once all kale is cooked, transfer it from the skillet to a 9x9 casserole dish.
  • Season the pork chops with salt and pepper on both sides liberally. Make the sure the skillet is back on high heat and add another 2 tsp of Extra Virgin Olive Oil to the skillet to coat and then add the pork chops to sear. Leave cooking without moving for 4-5 minutes. When they easily lift, flip the chops over to sear the other side for another 4 minutes.
  • Transfer the pork chops to the casserole dish laying them directly on top of the Kale in a single layer.
  • To the same pan with the pork chop drippings, add the onion, the minced garlic, and the carrots. Stir and cook for 5-8 minutes until the carrots are starting to soften and the onions are getting translucent.
  • While the veggies are cooking, make the cornstarch slurry by adding 2 tbls of cornstarch to 1/4 cup cold milk in a small mixing bowl. Stir to dissolve.
  • Add 2 cups of chicken broth to the carrots, onions, and garlic while keeping the heat on high. Stir to combine.
  • Add the cornstarch slurry to the broth and veggies and whisk it in as it comes up to a simmer and begins to thicken.
  • Once thickened, pour the sauce and veggies over the pork chops in the casserole dish. Spread the carrots and sauce around evenly.
  • Final step! Sprink the top of all this goodness with CHEESE! I prefer the finely shredded Gruyere as I think it is just delicious with Pork in this dish and it melts so nicely.
  • NOW, at this point, you can store the uncooked casserole in the fridge and cook when you are ready to eat it. If you do this, you need to Bake it in a 350 degree F oven for about 5-10 minutes longer (total 35-40min) covered or until the pork reaches 165 internal temp. Remove the cover for the last 10 minutes so that the cheese can brown on top.If you Bake the casserole immediately, then bake it in a 350 degree oven covered for 30 minutes. Remove the cover for the last 10 minutes so that the cheese can brown on top. You can even turn the broiler on for 2-3 minutes at the very end to really brown the top.
  • Serve over rice, quinoa, or potatoes and enjoy!

2 cups beef broth or stock or bouillon

  • Preheat oven to 400 degrees
  • Pour rice in 9 X 13 pan or casserole dish
  • Pour soup and broth over top of rice and mix

BASIC BRINE
3 c water
2 c ice cubes
1/4 c Kosher salt
1/4 c sugar
PORK CHOPS
6 bone-in pork chops
1 egg, beaten with a little water to make an egg wash
Italian bread crumbs
vegetable or canola oil
1/2 large onion, sliced thin
2 clove garlic, minced
1 1/2 c chicken broth
1/2 c dry white wine
1/2 tsp dried parsely flakes
1/4 tsp dried basil
1/4 tsp freshly ground black pepper (or to taste)

Steps:

  • 1. Place all brine ingredients in a plastic bowl that has a tight-fitting lid. Stir. Add pork chops. Cover and keep in the fridge for at least 4 hours. (I know this is an extra step but it really makes the pork chops super tender.)
  • 2. Remove pork chops from brine and pat dry with a paper towel.
  • 3. Dip pork chops in egg wash.
  • 4. Then Italian bread crumbs to coat.
  • 5. Heat oil in a large skillet. Just enough to coat the bottom. Fry pork chops in the skillet for approximately 3 minutes per side. They should be a nice golden brown.
  • 6. Then set them aside.
  • 7. Remove oil from skillet leaving approximately one tablespoon. Add the onions to the skillet and saute on medium heat until translucent - about 5 minutes. Add the minced garlic and cook for one more minute - stirring.
  • 8. Add the chicken broth and white wine.
  • 9. Add seasonings to the skillet. Simmer over low heat for about 5 minutes.
  • 10. Put the pork chops back into the skillet with the chicken broth mixture. I place them around the sides of the skillet overlapping slightly to form a circle.
  • 11. Cover and cook over low heat for approximately 20 minutes. Serve over rice or noodles.
