MOM'S FAMOUS CHOP SUEY AND NOODLES

2 to 2 1/2 pounds Wah King Noodle Company #4 Chinese Noodles
1 cup soy sauce
4 tablespoons brown sugar
5 tablespoons oil
4 tablespoons oyster sauce
4 chicken breasts slices into thin strips
6 to 8 pork chops sliced into thin strips
4 cups soy sauce
2 tablespoons oil
2 tablespoons cornstarch
2 to 3 tablespoons brown sugar
3 slices crushed ginger
4 cloves crushed garlic
2 to 3 tablespoons oyster sauce
2 tablespoons sherry
3 bundles green onions
2 heads broccoli
1 head cauliflower
1/2 pounds tender green beans
5 large carrots
1 large jicama
1 bunch celery
1 pound fresh mushrooms
1 pound Chinese snow peas
2 cans sliced water chestnuts
2 cans bamboo shoots

Steps:

  • Boil noodles in water until tender. Drain and convert to large bowl. Add seasoning, soy, brown sugar, oil, oyster sauce and blend well. Spray large metal broiler pan with cooking spray and spread 1/4 of the noodles onto the pan evenly. Bake at 350 degrees, turning noodles every 10 minutes for 30 minutes total, or until dry. Repeat with remaining noodles, baking 1/4 of the batch at a time. Marinate meat separately. Then, set meat aside in separate marinades while preparing vegetables.
  • Clean, wash, and julienne the vegetables. Set each vegetable aside in separate piles. Bring big pot of water to boil. Partially boil each vegetable group separately dipping them in the hot water for 1 minute or less. Do not par-boil the mushrooms or green onions. Saute the mushrooms in butter until cooked. Once the vegetables are all par-boiled or cooked, you can mix them together in a large bowl, along with the green onions.
  • Add 1 tablespoon of oil to a hot stir-fry pan. Remove garlic pieces and ginger from the meat marinade. Divide pork and ginger from meat marinade. Divide pork and chicken into 3 batches a piece. Stir fry each batch very quickly until cooked through and mix meats. Set aside.
  • Add 1 tablespoon of oil to the hot pan. Stir fry 2 to 3 handfuls of mixed vegetable for half a minute. Stir in small portion of meat mixture. Add 2 tablespoons of oyster sauce while stir frying. Toss together and serve on a bed of noodles. Repeat with the remaining ingredients. Be sure to keep the amount of vegetable you are stir frying in small batches until all has been cooked and blended together.

1/2 pound salt pork, cut into 4 chunks
1 medium onion, peeled and finely chopped
6 cloves garlic, peeled and minced
1 green bell pepper, stemmed, seeded and finely chopped
3 cups white rice
6 cups water
Salt and freshly ground pepper
3 (15-ounce) cans red kidney beans, drained, rinsed and drained again

Steps:

  • Place a large pot over medium-high heat, and add the salt pork. Cook for several minutes, until the pork renders a tablespoon or so of fat. Add the onion, garlic, and pepper to the pot, lower the heat to medium-low, and continue to cook, stirring, until the onions are translucent, 5 to 7 minutes.
  • Add the rice to the pot and stir to combine. Pour in the water and season with salt and pepper. Bring to a boil over high heat, then reduce the heat to a simmer and cook, covered, for 20 minutes. Check the pot and stir its contents to make sure that the rice isn't sticking to the bottom.
  • Stir in the beans into the rice and cook for 10 minutes more. Remove the salt pork and discard. Serve immediately.

1 can (10-3/4 oz.) reduced-fat reduced-sodium condensed cream of mushroom soup
1 cup frozen peas
1/2 cup KRAFT 2% Milk Shredded Colby & Monterey Jack Cheeses, divided

Steps:

  • Cook noodles in medium saucepan as directed on package.
  • Meanwhile, cook chicken in medium nonstick skillet sprayed with cooking spray on medium-high heat 5 min. or until done, stirring occasionally. Add Neufchatel and milk; cook and stir 1 to 2 min. or until Neufchatel is melted and mixture is well blended. Add soup and peas; cook 5 min., stirring occasionally.
  • Drain noodles; return to saucepan. Add chicken mixture and half the shredded cheese; cook until cheese is melted and mixture is well blended. Sprinkle with remaining cheese.

1 package (12 ounces) frozen small peas
1/4 cup grated Parmesan cheese
1/4 cup virgin olive oil
1 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 cup cooking water from the pasta

Steps:

  • Bring 3 to 4 quarts of water to a boil in a large pot. Add the pasta, and boil it until tender (about 10 minutes for imported pasta).
  • Place the frozen peas in a strainer, and run them under hot tap water until all the ice particles have melted and the peas are defrosted. Place the peas in a large serving bowl with the cheese, oil, salt and pepper.
  • When the pasta is cooked, remove 1 cup of its cooking liquid, and add it to the bowl with the peas. Drain the pasta and add it to the bowl. Toss well and serve immediately.

Steps:

  • Cook shallots in butter in a 10-inch heavy skillet over moderate heat, stirring occasionally, until beginning to brown, 5 to 7 minutes.

This was a dish my mother made during Lent when we were kids and at other times to stretch our grocery dollars. It's easy to make and simple in taste. This recipe can be multiplied easily to serve the number of people eating.

1 cup uncooked whole-wheat pasta shells
⅓ cup frozen peas
2 eggs, beaten
2 tablespoons grated Parmesan cheese
¼ teaspoon ground black pepper
1 teaspoon grated Parmesan cheese

Steps:

  • Fill a saucepan with lightly salted water and bring to a rolling boil over high heat. Once the water is boiling, stir in the shell pasta, and return to a boil. Cook the pasta uncovered, stirring occasionally, until the pasta has cooked through, but is still firm to the bite, about 10 minutes. Stir in the frozen peas, and cook for 1 more minute; drain well in a colander set in the sink. Return the pasta and peas to the saucepan.
