2 heads romaine lettuce, thinly sliced
2 tomatoes, large diced
1 cucumber, large diced
1 red onion, thinly sliced
1/2 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 tablespoons sour cream
1 teaspoon fresh oregano, chopped
1 clove garlic, minced
Kosher salt and freshly cracked black pepper

Steps:

  • Combine the romaine, tomatoes, cucumber and onions in a large bowl.
  • Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
  • Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.

This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

16 ounces uncooked elbow macaroni
4 carrots, shredded
1 large red onion, chopped
½ green bell pepper, seeded and chopped
½ red bell pepper, seeded and chopped
1 cup chopped celery
2 cups mayonnaise
1 (14 ounce) can sweetened condensed milk
½ cup white sugar
½ cup white vinegar
salt and pepper to taste

Steps:

  • Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
  • In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

Everyone always loves Mom's Pasta Salad when at any gathering! Tender pasta, tomatoes, olives, broccoli, and mozzarella tossed in an Italian dressing!

1 lb tri-color rotini, cooked
1 bottle Robusto Italian dressing
1 cup broccoli florets, chopped
1 cup grape tomatoes, halved
1 cup olives, sliced
1 cup mozzarella, diced
salami, chopped

Steps:

  • Cook pasta according to boxed directions. Drain and allow to cool completely.
  • To assemble pasta salad, place cooked pasta, broccoli, tomatoes, olives, mozzarella, and salami in a large bowl.
  • Pour desired amount of dressing on top of pasta mixture and toss to coat. Use as much or little dressing as desired to taste.
  • Refrigerate until ready to serve! Enjoy!

I like to cook up a package of chicken tenders and add them to this salad for a light supper. Very easy to adapt to your tastes -- take out the veggies you don't like and add the ones you do like. Cook time is chilling time in the fridge.

1 (6 ounce) jar marinated artichoke hearts, drained and chopped
1/2 cup parmesan cheese
1/2 cup mayonnaise
1/2 cup Italian dressing
1 teaspoon dried parsley flakes
1/2 teaspoon dill
1/2 teaspoon pepper

Steps:

  • Cook and drain pasta.
  • Mix with all other ingredients.
  • Chill and enjoy!

When my mom or I make her version of pasta salad, we always get rave reviews. We like it because it differs from typical pasta salad in that it uses smoked Keilbasa sausage, colby-jack cheese, cheddar cheese, lots of veggies and parmesan-Italian dressing that ties it all together. Now don't get me wrong. I enjoy many types of pasta salad, but truth be told, Mom's version will always be #1 in my book. :)

1 (12 ounce) box rotini pasta, rainbow, cooked
1 (14 ounce) package smoked sausage, Keilbasa (I prefer Hillshire Farms Turkey Smoked Sausage)
1 red bell pepper, medium, sliced
1 yellow bell pepper, medium, sliced
1 red onion, medium, sliced
1 cup seedless cucumber, quartered and sliced
1 pint grape tomatoes, sliced in half
8 ounces mild cheddar cheese, cut into 1/2-inch pieces
8 ounces colby-monterey jack cheese, cut into 1/2-inch pieces
1 (16 ounce) bottle Italian dressing (parmesan variety)

Steps:

  • Cook pasta according to package instructions, rinse with cold water, drain thoroughly and place in an extra large bowl.
  • While pasta is cooking, chop all the vegetables, cheeses and Keilbasa as directed above. Place all in the extra large bowl with the pasta.
  • Pour entire bottle of Italian dressing over everything and toss to combine.
  • Cover and refrigerate until ready to serve. (Note: I recommend making this salad well ahead of time to allow the dressing to marinate with the other ingredients and intensify the flavor, but serve immediately if you wish).

my mom always makes it when we had company over or for a side dish .. it also makes a great summer dish also.. its easy to make and doesnt take very long at all.. just a few ingredients and you are all set. the cool thing about it also is that you dont have to have all the ingredients that i post . you can add your own variety if you choose. but this is how mom always makes it and its the one that i will stick with forever. when i make it at my house its gone in a matter of no time at all.. my husband loves it and always gets seconds and thirds.. sometimes it is our dinner when we are in the mood for something light. hope you can enjoy this as much as my family has!!

1 (16 ounce) box tri-colored pasta
1 (24 ounce) bottle Italian salad dressing (no specific brand-any works)
1 cucumber, chopped into small chunks
1 (8 ounce) container mushrooms (sliced-preferably fresh not out of a can)
1 (16 ounce) package cherry tomatoes
1 (4 ounce) jar black olives (the olives can be sliced or whole whichever you prefer- i buy the 8 ounce jar and just use half and )
1 (4 ounce) jar green olives
8 ounces monterey jack pepper cheese (cubed)

Steps:

  • cook the pasta , after cooked cool in fridge or over ice.
  • in a medium mixing bowl put italian dressing, cucumber, mushrooms, tomatoes, green and black olives , and cheese.
  • stir the ingredients and let it marinate until your pasta cools.
  • when pasta is cool put pasta in mixing bowl with veggies and dressing.
  • stir.
  • cool in fridge for about an hour or so.
  • eat and enjoy!

1 pounds pasta shells
4 ounces bread
1 units onion
4 ounces cheddar cheese
12 ounces tuna
0.5 cups kraft miracle whip
1 units pepper
1 units garlic powder

Steps:

  • Bring a large pot of water to boil, add box of pasta to boiling water, and cook for about 7 minutes, stirring occasionally.
  • Drain the pasta, and rinse in cold water to cool off the shells. Chop up the pickles and onion and add them to a large bowl. Cube the cheese (or buy the cheese already cubed to save time) and add to the pickles. Add the tuna to the pickles and cheese.
  • Add the cooled pasta shells to the bowl along with the Miracle Whip and mix everything together. Add pepper and garlic powder to taste. The Miracle Whip should just evenly coat the tuna and shells, but not too thick a coat.
  • Cover the bowl and chill it in the refrigerator at least 2 hours before serving.

1 (16 ounce) package elbow macaroni
2 ½ cups mayonnaise
¼ cup white vinegar
1 ½ teaspoons seasoned salt, or to taste
1 teaspoon white sugar
1 teaspoon garlic powder
½ teaspoon ground black pepper, or to taste
2 (5 ounce) cans chunk light tuna in water, drained and flaked
2 (4 ounce) cans baby shrimp, drained
1 large cucumber, seeded and chopped
1 small sweet onion, chopped
4 hard-boiled eggs, chopped
2 hard-boiled eggs, sliced
1 pinch paprika

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain. Rinse macaroni with cold water until chilled; drain.
  • Mix mayonnaise, white vinegar, seasoned salt, sugar, garlic powder, and black pepper in a large bowl with a whisk until smooth. Stir tuna, baby shrimp, cucumber, and sweet onion into the mayonnaise mixture to coat ingredients completely; add chopped eggs and stir. Pour chilled macaroni into the bowl and stir; top with sliced eggs. Garnish salad with paprika.
  • Cover bowl with plastic wrap and refrigerate at least 1 hour to overnight before serving.

12 oz Rotini Tri Colored Pasta
1 chopped red pepper
1 chopped green pepper
1 sliced cucumber
1 can of sliced black olives
2 tomatoes, chopped
1 small can of mushrooms
1 small package pepperoni (cut into quarters, or you can use the new mini pepperoni)
8 oz block of marbled cheddar, cut into cubes (any cheese will work)
1 red onion (diced)
16 ounces Italian Dressing (any brand works great)

Steps:

  • Cook the pasta as it directs on the package. Pour cooked pasta into a large bowl. Then add red and green peppers, cucumber, sliced olives, tomatoes, mushrooms, pepperoni, cheese cubes, and onion.
  • Pour Italian dressing on salad (you can use fat-free or low-fat if you want). Mix well. Put salad in fridge for a couple of hours before serving. Stir again before serving. Sprinkle grated Parmesan cheese on top.

1 cup celery, sliced

2 cups crab pollock, cut in chunks
1 cup mayonnaise
2 tablespoons white vinegar
1 tablespoon prepared mustard
2 teaspoons salt
1/4 teaspoon pepper

Steps:

  • Cook fusilli in boiling salted water until tender. Drain and rinse under cold water.
  • Add remaining ingredients. Combine dressing ingredients and pour over salad. Toss. Chill thoroughly, at least a couple hours.
