M&M OATMEAL COOKIES

M&M Oatmeal Cookies are soft, chewy and loaded with mini chocolate chips and M&Ms. Delicious M&M cookie recipe that is loaded with oats too!

Number Of Ingredients 13

1 cup butter (softened to room temp)
1 cup light brown sugar
½ cup sugar
2 eggs
1 ½ tsp vanilla extract
1 ½ cups flour
1 tsp ground cinnamon
½ tsp baking soda
½ tsp baking powder
¼ tsp salt
3 cups old-fashioned oats
1 ½ cups mini M&Ms (divided)
1 cup mini chocolate chips

Steps:

  • Preheat oven to 350°.
  • In a large bowl, mix butter and sugars together for 2-3 minutes. Add eggs and vanilla and blend for another 2 minutes.
  • In a separate bowl, mix together the flour, cinnamon, baking soda, baking powder and salt until well combined.
  • Add the flour mixture to the butter mixture and mix just until combined. Add the oats, half of the M&Ms and chocolate chips and stir until evenly distributed throughout the dough.
  • Place the other half of the M&Ms into a small bowl. Use a cookie scoop to scoop the dough into balls and then press the top of each cookie dough ball into the M&Ms, so that each cookie dough ball is well coated with M&Ms on the top.
  • Place cookie dough balls onto a well-greased cookie sheet or a cookie sheet that has been lined with parchment paper or a silicone baking mat.
  • Bake cookies for about 12 minutes or until the edges just barely begin to brown. Don't overbake! Let the cookies cool on the cookie sheet for a few minutes before transferring them to a wire rack to cool completely.

Mom's delicious cut out cookie recipe. The oat flour makes this almost savory and oh so special. The buttercream frosting adds a sweetness that makes these to die for! I WOULD RECOMMEND HALVING THE FROSTING RECIPE. IT EASILY MAKES TWICE WHAT YOU NEED. By far THE BEST cut out cookies I've ever had in my life. Never come out as good as mom makes 'em, tho. But still the best hands down.

1 1/2 cups confectioners' sugar
1 cup butter or 1 cup margarine
1 egg
1 teaspoon vanilla
2 1/4 cups all-purpose flour (or mix with whole wheat)
1 cup oat flour
1 teaspoon baking soda
3 cups powdered sugar
1 cup half shortening or 1 cup half butter
1 teaspoon vanilla
2 tablespoons milk, as desired for creaminess

Steps:

  • To make ground oat flour:.
  • place 1 1/4cups quick or old fashioned oats, uncooked, in a blender or food processor. Cover and blend 60 seconds. Makes about 1 cup.
  • To make cookies:.
  • Beat together sugar and butter until light and fluffy.
  • Blend in egg and vanilla.
  • Combine flours and baking soda.
  • Gradually add to butter mixture, mixing well after each addition.
  • Cover, chill an hour.
  • Heat oven to 375 degrees F.
  • Roll out dough to 1/8 inch thickness on lightly floured surface.
  • Cut with cookie cutter.
  • Bake on ungreased cookie sheet for 7 to 8 minutes until edges are golden brown.
  • Cool thoroughly.
  • Decorate with butter cream frosting and sprinkles, as desired.

3/4 cup packed brown sugar
1/2 cup sugar
1 large egg
2 teaspoons vanilla extract
2-1/2 cups all-purpose flour
1 cup quick-cooking oats
1 teaspoon baking soda
1/2 teaspoon salt
FROSTING:
1/4 cup butter, softened
1 package (8 ounces) cream cheese, softened
1 teaspoon vanilla extract
4 cups confectioners' sugar
Colored sugar

Steps:

  • In a large bowl, cream butter and sugars until light and fluffy. Beat in egg and vanilla. In another bowl, whisk flour, oats, baking soda and salt; gradually beat into creamed mixture., Divide dough in half. Shape each into a disk; wrap in plastic. Refrigerate 1 hour or until firm enough to roll., Preheat oven to 350°. On a lightly floured surface, roll each portion of dough to 1/4-in. thickness. Cut with a floured 2-3/4-in. cookie cutter. Place 1 in. apart on greased baking sheets., Bake 9-11 minutes or until edges are light brown. Remove from pans to wire racks to cool completely., For frosting, in a small bowl, beat butter, cream cheese and vanilla until blended. Gradually beat in confectioners' sugar until smooth. Spread over cookies. Decorate with colored sugar. Store in airtight containers in the refrigerator.
