MOM'S TUNA NOODLE CASSEROLE
Tuna noodle casserole recipes are a dime a dozen here but this is what I grew up on and I don't think it can be beat! I think this came from an old Cambell's soup cookbook. You can tell that can sized have gotten smaller over the yeas.....I had to adjust the tuna can size and the soup size both by an ounce to reflect today's packaging!

Steps:
- Preheat oven to 425 degrees.
- Cook noodles and drain. In a 2 quart casserole dish combine noodles, tuna, celery, onion, and green pepper.
- In a medium sauce pan combine salt, mayo, soup, milk, and cheese; stirring until cheese has melted and mixture is smooth. Pour over noodles and stir to combine.
- Bake at 425 degrees for 20 minutes.
MOM'S EASY TUNA NOODLE CASSEROLE

- Preheat oven to 400°F. Spray 8 x 8 x 2-inch glass baking dish with vegetable oil spray. Whisk wine and cornstarch in small bowl to blend. Whisk flour in heavy medium saucepan to remove any lumps. Gradually add milk to flour, whisking until smooth. Add broth and thyme and whisk over medium heat until liquid thickens and boils, about 4 minutes. Add cornstarch mixture and whisk until liquid boils and is smooth, about 1 minute. Remove from heat. Add Neufch‰tel cheese and whisk until melted. Stir in both cans of tuna with their liquid and frozen peas. Season to taste with salt and pepper.
- Meanwhile, cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain pasta. Return to pot.
- Add tuna mixture to pasta; stir to blend well. Transfer to prepared baking dish. Sprinkle with potato chips. Bake until top is golden and sauce bubbles around edges of dish, about 25 minutes.
MOM'S HAMBURGER CHICKEN NOODLE CASSEROLE
This is a recipe that my mom made frequently when we were growing up. This is "comfort food" at it's best and is also economical and fast to fix. The amounts can be increased to feed a crowd or decreased to serve your family. I like to make it as written so that I have leftovers the next day.

- Preheat oven to 350 degrees.
- Spray 5 quart, oven proof dutch oven with non-stick spray.
- Crumble ground beef into dutch oven, add chopped onion and salt and pepper.
- Brown ground beef and drain grease well.
- Return ground beef to dutch oven.
- Stir in soup, water and rice.
- Cover and bake for 30 minutes.
- May need to remove lid at end of baking time and bake for an additional 10 minutes to absorb liquid.
- If doubling this recipe to serve a crowd, brown the beef and onion and seasoning, and place in large roaster sprayed with non-stick cooking spray.
- Recipe as posted serves 8.

MY MOM'S AWESOME TUNA NOODLE CASSEROLE
If you're looking for a different-than-the-potato-chip-covered tuna casserole, look no further than the one I grew up with. It's almost like a strata or custard - give it a try! I've never had a better tuna casserole! It tastes even better the second day and freezes well when cut and wrapped in individual pieces. I recommend American cheese over Velveeta - tried it once and it just wasn't the same. You can use a larger can of tuna if you like.

Steps:
- Prepare egg noodles as directed on the package; drain.
- In a 13x9" baking dish, combine noodles with all remaining ingredients.
- You may want to combine all the ingredients in a large bowl, then pour into the baking dish (it's a little less messy).
- Shake paprika on top for color.
- Set dish in another pan of hot water so that the hot water reaches 1/2 way up the sides of the baking dish.
- Bake at 350F for 1 1/2 hours, or until set.
- Let stand for 5 minutes, cut into serving pieces, and eat!
- Serve with a salad for a complete meal.

NOT YOUR MOMMA'S TUNA NOODLE CASSEROLE
This fabulous Tuna-Noodle Casserole certainly isn't the one Mom used to make, but is just as comforting. This is based on a recipe found in the Weight Watchers New Complete Cookbook, but altered to fit what was in my pantry at the time. While not as low in points and calories, this one is still a healthy alternative to classic Tuna Noodle Casserole.

- Preheat oven to 350°F; spray a shallow casserole dish with nonstick spray. Cook the noodles according to package directions; drain.
- While noodles cook, spray a large Wok-style pan with nonstick cooking spray; heat. Saute onions and celery for 2 minutes. Add bell pepper, cabbage, and green onions; cook, stirring, until tender.
