2ND TIME'S THE CHARM CORNBREAD PUDDING
Mmm-mmm, good! Whenever I make cornbread, I always double the recipe and voila! 2nd time's the charm with this delectable cornbread pudding. I use the leftover cornbread the second day so the bread sops up all the delicious pudding!

Steps:
- Preheat oven to 375 and spray glass loaf pan, then layer cornbread in bottom.
- In a mixing bowl, whisk eggs, milk, sugars, and aromatics.
- Pour over cornbread, pressing chunks of bread down into liquid. Liquid should cover all bread.
- Bake at 375 until all pudding mixture is baked and golden.
- Delicious served hot or cold!
CREAMED CORN BREAD PUDDING
Steps:
- Preheat the oven to 375 degrees F. Butter a 9-by-12-inch casserole dish and set aside.
- Spread the cubed bread on a baking sheet and toast until golden, about 8 minutes. Transfer the bread to the prepared casserole dish.
- Meanwhile, heat the butter in a large skillet over medium heat. Add the celery, leeks and some salt and pepper and cook until softened, 5 to 8 minutes. Stir in the creamed corn and sour cream, then lower the heat to medium low. Stir in the eggs 1 at a time.
- Pour the creamed corn mixture over the bread. Bake until puffed and cooked through, about 30 minutes.
EASY CORNBREAD PUDDING RECIPE

- Preheat oven to 350°F. Combine first six ingredients in a medium bowl and stir well. If you are a green onion fan, stir in a 1/2 cup chopped onions into the mix. - 2. Melt butter in a baking dish in the preheated oven.
- 3. Mix both whole and creamed corns, sour cream and muffin mix until combined.
- 4. Pour on top of the melted butter. Butter will pool around the corn which is OK.
- 5. Bake in a 350 degree oven for 50 minutes or until golden brown on top.

- Heat oven to 350°F.
- Scald milk with butter; set aside to cool.
- In a large bowl place torn bread pieces, sprinkle with as much cinnamon as you like. Sprinkle 1/2 cup sugar, 1/4 tsp salt and 2 eggs (slightly beaten) over cinnamon sugar bread pieces. Mix gently.
- Pour cooled scalded milk and butter over the bread mixture and add any optional items before pouring into greased loaf pan. Mixture should fill the bread pan.
- Place the loaf pan in a large baking pan and fill with 1" of water (called a water bath).
- Bread pudding is done when a knife inserted in center comes out clean. Oven temps may vary and so would the baking time.
- Slice into 1" slices and serve warm. top with a dollop of the Hard Sauce(see below).
- May be warmed in microwave for leftovers.

- Beat butter until creamy. Gradually add powdered sugar and then vanilla until all mixed.
- Spoon a dollop on a slice of warm bread pudding. Mmm--enjoy!
