1 2/3 cups graham cracker crumbs
1/2 cup butter (1 stick - melted)
2 tbsp sugar
3 cups coconut (sweetened, flaked)
14 oz sweetened condensed milk (1 can)
1 cup seedless raspberry preserves (or the flavor of your choice)
1/2 cup pecans (chopped )
1/2 cup semisweet chocolate chips
1/3 cup white baking chips
1 tsp shortening

Steps:

  • Preheat oven to 350 degrees.
  • Combine the graham cracker crumbs, butter, and sugar in a small bowl.
  • Press into a lightly greased 9x13 baking dish.
  • Sprinkle the coconut over the crust and drizzle the sweetened condensed milk over the top.
  • Bake for 20-25 minutes or until coconut is lightly browned.
  • Let cool completely.
  • Spread the preserves over the cooled coconut crust and sprinkle with pecans.
  • Melt the chocolate chips in the microwave and stir until nice and smooth. Drizzle over pecans.
  • Melt the white chips in the microwave and add shortening. Stir until nice and smooth. Drizzle over the top.
  • Let chocolate firm up in the fridge or on the counter and cut into bars.
  • Makes 36 bars.

1 box Betty Crocker™ Super Moist™ devil's food cake mix
1/2 cup butter or margarine, softened
2 tablespoons milk
1 egg
1 cup raspberry pie filling (from 21-oz can)
2 packages (8 oz each) cream cheese, softened
1/2 cup sour cream
1/2 cup sugar
1 teaspoon vanilla
2 eggs
1 tablespoon Gold Medal™ all-purpose flour
1/4 cup semisweet chocolate chips
2 teaspoons shortening
48 fresh raspberries

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). In large bowl, mix cake mix, butter, milk and 1 egg with spoon until dry ingredients are moistened. Spread in bottom of ungreased 15x10x1-inch pan. Spread raspberry pie filling over crust.
  • In large bowl, beat cream cheese, sour cream, sugar and vanilla with electric mixer on medium speed until smooth and creamy. Add 2 eggs, one at a time, beating after each until mixed. On low speed, beat in flour. Pour over pie filling.
  • Bake 30 to 38 minutes or until cheesecake filling is set. Cool completely, about 1 hour.
  • In microwavable food-storage plastic bag, place chocolate chips and shortening; seal bag. Microwave on High 15 seconds; squeeze bag. Microwave about 15 seconds longer or until melted; squeeze bag until chocolate is smooth. Cut off tiny corner of bag; squeeze bag to drizzle chocolate over bars. For bars, cut into 8 rows by 6 rows. Refrigerate 30 minutes before serving. Top each bar with 1 fresh raspberry just before serving. Store covered in refrigerator.

One 12-ounce bag frozen unsweetened raspberries, thawed
Butter, for greasing the pans
All-purpose flour, for dusting
One 18.25-ounce box chocolate cake mix, such as Betty Crocker Super Moist Chocolate Fudge
1 1/2 cups semisweet chocolate chips, such as Ghirardelli
1/2 cup vegetable oil
3 large eggs, at room temperature
1 1/2 cups powdered sugar
1 cup unsweetened cocoa powder
1 cup (2 sticks) unsalted butter, at room temperature
1/2 cup (4 ounces) cream cheese, at room temperature
1/3 cup sour cream, at room temperature
Fresh raspberries or chocolate curls, for garnish

Steps:

  • For the puree: Place the raspberries in a blender and blend until smooth (yields 1 1/4 cups of puree). Remove 1/4 cup of puree and reserve.
  • For the cake: Place an oven rack in the center of the oven. Preheat the oven to 325 degrees F. Butter and flour the bottom and sides of two 8- or 9-inch round nonstick baking pans. Set aside.
  • Place 1 tablespoon of the cake mix and the chocolate chips in a small bowl. Toss until the chocolate chips are coated.
  • In a large bowl, combine the remaining cake mix, 1 cup of the raspberry puree, vegetable oil, eggs and 1/4 cup water. Using an electric hand mixer, blend on low speed for 30 seconds. Increase the speed to medium and beat for 2 minutes, scraping the bottom and sides of the bowl with a spatula as needed. Mix in the chocolate chips. Divide the batter between the prepared pans and bake until a cake tester inserted into the center of the cakes comes out clean, 30 to 35 minutes.
  • Cool the pans on a wire rack for 15 minutes. Remove the cakes from the pans and cool completely on a wire rack, about 1 hour.
  • For the frosting: In a large bowl, combine the powdered sugar, cocoa powder, butter, cream cheese and sour cream. Using an electric hand mixer, beat on low speed until smooth. Increase the speed to high and beat until light and fluffy, about 1 minute.
  • In a small bowl, mix together 3/4 cup of the frosting and the reserved 1/4 cup puree until smooth.
  • To assemble the cake: Place one cake layer, flat side-up, on a cake stand. Using a spatula, spread the raspberry-chocolate frosting over the cake layer leaving a 1/2-inch border. Place the other cake layer on top. Frost the top and sides of the cake with the remaining chocolate frosting. Decorate with fresh raspberries or chocolate curls. Using a damp knife cut the cake into wedges and serve.
  • Cake can be made 1 day in advance. Refrigerate in an airtight plastic container. Allow the cake to stand at room temperature for 1 hour before serving.

1/4 cup + 2 Tablespoons sugar
1/2 teaspoon lemon juice
1/2 cup fresh raspberries
2 cups heavy whipping cream
3/4 cup flour
1/2 cup cocoa
1/2 teaspoon salt
3/4 cup butter
1 1/2 cups sugar
1 teaspoon vanilla
2 eggs

Steps:

  • Preheat oven to 350 degrees. Grease a 9-inch square baking pan.
  • In a large bowl, combine flour, cocoa, and salt. Melt butter in a large saucepan and remove from heat. Stir in sugar and vanilla. Quickly whisk in eggs, one at a time.
  • Add butter mixture to flour mixture and stir until well blended. Spread brownie batter into prepared pan and bake for 25-30 minutes. Cool completely.
  • Meanwhile, make raspberry and whipped cream layers. With an electric mixer on high speed, beat the cream cheese, raspberry pie filling, 1/4 cup sugar and lemon juice in a large bowl until well combined. Mix in the fresh raspberries (you want the raspberries to break apart when you mix them in).
  • In a separate bowl, beat the cream and remaining 2 tablespoons sugar on high speed until stiff peaks form.
  • Fold 1 cup of the whipped cream into the raspberry mixture, refrigerate the remaining whipped cream. Spread the raspberry mixture evenly over the cooled brownies.
  • Chill for at least 30 minutes, then spread the remaining whipped cream over the raspberry layer.
  • Refrigerate for at least 4 hours, or until set. Cut into squares and serve. Garnish with chocolate shavings and fresh raspberries, if desired. Store leftover bars covered, in the refrigerator.

Steps:

  • Line a pie plate with parchment paper or foil. Arrange the raspberries and the pecans in a single layer.
  • Melt 4 tablespoons butter and 4 tablespoons coconut oil together until smooth. Whisk in the cocoa powder, 2 tablespoons honey, 1/2 teaspoon vanilla, and a pinch of salt. Taste, adjust, and pour the mixture over the berries in the pie plate.

  • Heat oven to 350°F.

1 tbsp cornstarch
2 tsp water
2 cups (225g) raspberries*
1 3/4 cups (228g) all purpose flour
2 cups (414g) sugar
3/4 cup (85g) natural unsweetened cocoa
2 1/4 tsp baking soda
1/2 tsp baking powder
1 tsp salt
1 cup (240ml) milk
1/2 cup (120ml) vegetable oil
1 1/2 tsp vanilla extract
2 large eggs
1 cup (240ml) hot water
1 1/2 cups (336g) unsalted butter, room temperature
12 oz semi sweet chocolate chips, melted
5 tbsp (35g) Hershey's dark cocoa powder
6 cups (690g) powdered sugar
1/2 tsp salt
10-12 tbsp (150-180ml) heavy whipping cream
9 oz (1 1/2 cups) semi-sweet chocolate chips
3/4 cup heavy whipping cream

Steps:

  • TO MAKE THE RASPBERRY FILLING:
  • Combine the sugar, cornstarch and water in a medium-sized saucepan over medium heat and stir to combine. Heat until the mixture is wet and the sugar begins to melt.
  • 2. Add the raspberries and stir to coat with the sugar mixture.
  • 3. Continue to cook until the raspberries start to soften and let out juice. Use your spatula to mash the raspberries.
  • 4. Remove from heat when raspberry juice has begun to thicken, after about 5 minutes. Pour the mixture into another bowl and refrigerate until cool. TO MAKE THE CAKE LAYERS:
  • Preheat oven to 350°F (176°C) and prepare three 8 inch cake pans with non-stick baking spray and parchment paper in the bottom.
  • . Add the flour, sugar, cocoa, baking soda, baking powder and salt to a large mixer bowl and combine. Set aside.
  • . Add the milk, vegetable oil, vanilla extract and eggs to a medium sized bowl and combine.
  • . Add the wet ingredients to the dry ingredients and beat until well combined.
  • . Slowly add the hot water to the batter and mix on low speed until well combined. Scrape down the sides of the bowl as needed to make sure everything is well combined.
  • 0. Divide the batter evenly between the prepared cake pans and bake for 22-25 minutes, or until a toothpick comes out with a few moist crumbs.
  • 1. Remove cakes from oven and allow to cool for 2-3 minutes, then remove to a cooling rack to finish cooling. TO MAKE THE CHOCOLATE FROSTING:
  • p id="instruction-step-13″>12. Add the butter to a large mixer bowl and beat until smooth.
  • 3. Add the melted chocolate and mix until well combined.
  • 4. Add the cocoa powder and mix until well combined.
  • 5. Add about half of the powdered sugar, salt and half of the heavy cream and mix until well combined.
  • 6. Add the remaining powdered sugar and mix until smooth.
  • 7. Add the remaining heavy cream as needed to get the right consistency of frosting. TO MAKE THE GANACHE AND FINISH THE CAKE:

  • 9. Heat the heavy whipping cream in the microwave until it just begins to boil. Keep an eye on it because it happens quickly.
  • 0. Pour the hot cream over the chocolate chips and let it sit for 2-3 minutes, then whisk until smooth. Set aside.
  • 1. To layer the cake, first use a large serrated knife to remove the domes from the tops of the cakes so they are flat. See my tips on how to level a cake and how to stack a cake.
  • 2. Place the first cake layer on a serving plate or on a cardboard cake circle.
  • 3. Pipe a dam around the outside of the cake layer with some of the chocolate frosting.
  • 4. Spread about 1/4 cup of chocolate ganache on top of the cake, in the center of the dam.
  • 5. Drop spoonfuls of the raspberry filling (use about half of the raspberry filling per layer) over the chocolate ganache and then spread into an even layer.
  • 6. Add the second layer of cake, then repeat steps 23 thru 25.
  • 7. Add the third and final layer of cake on top.
  • 8. Frost the top and outside of the cake with the remaining chocolate frosting.
  • 9. Use the remaining chocolate ganache to drizzle chocolate around the edges of the cake, then fill in the center. If the ganache has gotten a little firm from sitting, just reheat for a few seconds until pourable again. See my tips on making a chocolate drip cake.
  • 0. Pipe swirls with the remaining chocolate frosting around the top of the cake, then decorate with additional raspberries and chocolate sprinkles, if desired. Refrigerate the cake until ready to serve. Steps:

  • Preheat oven to 350°F. Grease 9 x13" pan. Bottom Layer: In small saucepan over low heat, melt 4 ounces chocolate and 1/2 cup butter, stirring constantly; remove from heat. Cool. In large bowl, beat 2 cups sugar, vanilla and 4 eggs. Stir in melted chocolate mixture just until blended. Lightly spoon flour into measuring cup; level off. Stir in flour just until blended. Spread mixture evenly in pan. Bake 25-30 minutes or until set. Cool.
  • Filling: Spread raspberry preserves over base. In small saucepan over low heat, melt 2 oz. semi-sweet chocolate and 1 ounce unsweetened chocolate, stirring constantly. Remove from heat. In another small saucepan, bring 1/3 cup sugar and water to boil. Boil 1 min. In large bowl, beat 2 eggs until frothy. Gradually add sugar water mixture; beat on highest speed 5 minutes or until thick and lemon colored. Gradually add butter a small piece at a time. Beat well after each addition. Add melted chocolate and beat until smooth. Spread over preserves.
  • Glaze: In small saucepan over low heat, melt chocolate and butter, stirring constantly. Drizzle over filling. Chill 1 hr. Cut into bars.

With the Christmas holidays drawing near, I thought these would be a great addition to cookie & sweet trays! They are quite an attractive looking bar and they look nice cut into triangles. You can even substitute your favourite jam, such as apricot, peach & strawberry, but I think the raspberry (or the strawberry), red in colour for Christmas would be nicest! Found this recipe in a booklet of baking recipes that I picked up at the grocery store put out by Robin Hood flour. Add 1 1/2 hrs. to the cook time listed for chilling. These are supposed to freeze well for those of you who want to get a head start on your holiday baking! Hope you enjoy!

1/4 cup icing sugar
1/2 cup butter
1/3 cup raspberry jam
1 cup white chocolate chips (Hersheys chipits)
4 ounces cream cheese, softened
2 tablespoons light cream or 2 tablespoons milk
1 cup semi-sweet chocolate chips (Hersheys chipits)
3 tablespoons butter

Steps:

  • For Base: Preheat oven to 375 degrees.
  • Spray a 9 inch square cake pan with non-stick cooking spray.
  • Combine flour& icing sugar;cut in butter until mixture is crumbly.
  • Press firmly into greased pan.
  • Bake at 375 for 15-18 minutes, or until golden.
  • For Filling: Spread jam on warm crust.
  • Melt white chocolate chips as directed on package.
  • Beat cream cheese and cream in small mixer bowl.
  • Add melted white chocolate,beating until smooth.
  • Mix well.
  • Spread evenly over jam.
  • Chill to set, about one hour.
  • For Topping: Melt semi-sweet chocolate chips and butter together over low heat, stirring until smooth.
  • Spread over filling.
  • Chill until set.
