MOM'S SALAD

Steps:
- Combine the romaine, tomatoes, cucumber and onions in a large bowl.
- Whisk the olive oil, vinegar, sour cream, oregano and garlic in a small bowl to make the vinaigrette.
- Pour the vinaigrette over the salad, season with salt and pepper and toss to combine. Serve with more freshly cracked black pepper over the top.
MOM'S BEST MACARONI SALAD
This is, by far, the best macaroni salad I've ever put into my mouth. It has a perfect blend of sweetness and tartness, and it is so pretty with all of the multi-colored veggies. Be ready for this to disappear before you put it on the table! I have six children, and it is all I can do to keep them from nibbling on it while I'm mixing it up!

Steps:
- Bring a large pot of lightly salted water to a boil. Add macaroni, and cook until tender, about 8 minutes. Rinse under cold water, and drain.
- In a large bowl, stir together the carrots, red onion, green pepper, red pepper and celery. Mix in the mayonnaise, condensed milk, sugar, vinegar, salt and pepper. Add the macaroni, toss gently, cover and refrigerate for at least 8 hours. I usually make this a day ahead of time, and stir it occasionally to blend the flavors. The macaroni will absorb some of the liquid.

MOM'S FAMOUS PASTA SALAD
Steps:
- 1. Cut up the tomatoes into nice small pieces. Don't use the inside-cut up the outer part. 2. Drain in colander, stir, add a little salt, try to get as much of the juice out so it won't go into the salad. 3. Cut up the cucumber. Slice it the long way into quarters-cut out the middle seed section. Dice up the unseeded part into little pieces 4. Cut up the green onions-only use the white part. 5. Cook the pasta according to the package. Drain in a colander and rinse with cold water. 6. In a large bowl, mix the pasta with the tomatoes, cucumbers, green onions. Add the parmesan and the dressing (start by adding half the bottle of dressing) and mix up. Add more to your taste. 7. Add poppy seeds according to taste.

Steps:
- 1. Cook up macaroni til tender and boil eggs.
- 2. While macaroni is cooking, slice up celery, onion, sweet pickles into bite size pieces and combine in big tupper.
- 3. Drain and add in olives. Then add in mayonnaise and mustard and stir mixture.
- 4. Once mixture is stirred up well, chop up eggs into bite size pieces then add eggs and macaroni. Be careful when stirring these in, as you don't want to mush them up too much. Try to have most of your mixing done before adding the eggs and macaroni.
- 5. Refrigerate salad for about 8-12 hours(or overnight) before serving if possible, as this always tastes better after sitting.
- 6. One thing to keep in mind, is that everything in this salad is to taste, so if your family doesn't like olives as well, don't put as much in. This is a VERY subjective recipe! Enjoy :-)
