1 pound boneless skinless chicken breast halves
1 can (16 ounces) kidney beans, rinsed and drained
1 can (14-1/2 ounces) diced tomatoes with mild green chilies, drained
1 medium green pepper, julienned
1 medium sweet red pepper, julienned
1 medium sweet yellow pepper, julienned
1 medium onion, halved and sliced
2 teaspoons ground cumin
2 teaspoons chili powder
1 garlic clove, minced
1/4 teaspoon salt
6 flour tortillas (8 inches), warmed
Shredded lettuce and chopped tomatoes, optional

Steps:

  • In a 3-qt. slow cooker, combine first 11 ingredients. Cook, covered, on low until chicken is tender, 5-6 hours. Remove chicken; cool slightly. Shred and return to slow cooker; heat through. , Spoon about 3/4 cup chicken mixture down the center of each tortilla. If desired, top with lettuce and tomatoes.

2 tablespoons lemon juice
1-1/2 teaspoons seasoned salt
1-1/2 teaspoons dried oregano
1-1/2 teaspoons ground cumin
1 teaspoon garlic powder
1/2 teaspoon chili powder
1/2 teaspoon paprika
1/2 teaspoon crushed red pepper flakes, optional
1-1/2 pounds boneless skinless chicken breasts, cut into thin strips
1/2 medium sweet red pepper, julienned
1/2 medium green pepper, julienned
4 green onions, thinly sliced
1/2 cup chopped onion
6 flour tortillas (8 inches), warmed
Optional: Shredded cheddar cheese, taco sauce, salsa, guacamole, sliced red onions and sour cream

Steps:

  • In a large bowl, combine 2 tablespoons oil, lemon juice and seasonings; add the chicken. Turn to coat; cover. Refrigerate for 1-4 hours. , In a large cast-iron or other heavy skillet, saute peppers and onions in remaining oil until crisp-tender. Remove and keep warm. , Drain chicken, discarding marinade. A bright, citrusy fajita chicken recipe perfect for family dinners or big get-togethers!

1 cup red wine vinegar
1 cup fresh lime juice
2/3 cup vegetable oil
1 tablespoon Adolph's meat tenderizer
1 tablespoon seasoning salt
1 teaspoon ground cumin
2 garlic cloves, grated with a microplane or
2 to 3 pounds boneless skinless chicken breast

Steps:

  • Combine all of the marinade ingredients in a large container with a lid. Add the chicken, turning once to ensure the chicken is coated. Preferably, use a container that will completely submerge the chicken in the marinade. Cover and refrigerate for at least 8 hours. Do not marinate more than 12 hours or the acid in the marinade will begin to affect the texture of the chicken.
  • To cook, preheat a grill or grill pan over medium heat. Cook the chicken for 8 to 10 minutes per side, until the juices run clear and the chicken is cooked through. Slice and serve.

1 each green and red pepper, cut into strips
1 onion, cut into thin wedges
1/2 cup KRAFT Thick & Spicy Barbecue Sauce
8 flour tortillas (6 inch), warmed
1 cup KRAFT Mexican Style Finely Shredded Four Cheese
1/2 cup TACO BELL® Thick & Chunky Salsa
1/4 cup sour cream

Steps:

  • Heat grill to medium-high heat.
  • Combine chicken, vegetables and barbecue sauce. Let stand 5 min. Poke holes evenly in bottom of 13x9-inch disposable foil roasting pan with fork or skewer. Spoon chicken mixture into pan; place pan on grill grate. Cover grill with lid.
  • Grill 20 min. or until chicken is done and vegetables are crisp-tender, stirring occasionally.

2 fresh jalapenos, chopped
2 large onions, sliced in rings (2 cups)

6 tablespoons butter
1 tablespoon soy sauce
2 teaspoons garlic powder
1 teaspoon black pepper
2 -2 1/2 lbs chicken breasts, sliced into strips

Steps:
