This was not served when I was a kid. I think Mom learned to make it when she decided she liked Hamburger Helper Stroganoff and she wanted to do it from scratch. Someone at church gave her this recipe and it is good and easy.

1 lb lean ground beef
1/2 c chopped onions
1/2 tsp salt
1/2 tsp paprika
dash of black pepper
1 can(s) cream of mushroom soup
1 small can sliced mushrooms, optional
1 c sour cream
hot buttered noodles for 4-6 servings

Steps:

  • 1. In a large skillet brown and crumble beef. Drain grease from pan. Add onion and cook until it is tender, stirring occasionally. Add remaining ingredients except sour cream and noodles and reduce heat to a simmer. Cook, stirring frequently, for about 20 minutes.
  • 2. Meanwhile prepare noodles according to package directions. When beef mixture is ready stir in sour cream and heat thoroughly without boiling. Serve over noodles. Optional garnish: Sprinkle a bit of paprika over the dish before serving.

16 oz. cremini mushrooms (sliced)
Salt & pepper to taste
1 small onion (diced)
2 to 3 cloves garlic (minced)
1 lb. of lean ground beef
2 to 3 hefty teaspoons smoked paprika + more if needed
4 cups beef stock
8 oz. egg noodles (uncooked)
1 tablespoon cornstarch slurry * (see notes for instructions, if needed)
1/2 cup sour cream
fresh parsley (finely diced for garnish)

Steps:

  • Using a large pot or large sauté pan, heat the olive oil over medium high heat. Add the mushrooms and season with salt and pepper. Add in the onions and garlic. Cook until the onions are translucent.
  • Add the ground beef and cook until all browned. Stir in the smoked paprika. Add in the beef stock and uncooked egg noodles. Stir together and cover with lid.
  • Let simmer for about 15 to 20 minutes. Mix together once halfway through, mixing and incorporating all of the egg noodles. Lower the heat, mix in the cornstarch slurry if needed and stir until thickened. Add in the sour cream and mix together until incorporated. Taste and season generously with more salt and pepper. Garnish with parsley, serve and enjoy!

1/2 cup yellow onion, chopped small
1 tablespoon Worcestershire sauce
1 teaspoon salt
1 teaspoon fresh black pepper

4 ounces cream cheese, cubed (not fat free)

Steps:

  • In a large nonstick skillet over medium high heat, add in the meat, onions, salt, pepper and Worcestershire sauce. Stir occasionally to break up the meat into small nickel-sized pieces. Cook until the meat is almost cooked through but still slightly pink, ~5 minutes. Drain excess grease.

Slowly pour in the beef milk mixture into the pan and cook over medium-high heat. Stir to combine and let the mixture start to bubble then reduce the heat to a simmer to allow it to thicken slightly. ~2-4 minutes. Add in the peas and gently stir in. Add in the yogurt or sour cream and gently combine. Taste for seasoning and add salt and pepper if necessary.

This is probably one of those recipes that was passed around in the 80s by all the cool moms. I'm sure there are similar ones out there, but this is our take. Oh, and if you didn't read my story earlier in this blog post, be sure to include mushrooms (unless you're allergic) to get the full taste. I'm not a fan, but I always add them. I like to use cremini, mostly because I enjoy the flavor and you can get them individually at the grocery store, but feel free to substitute your favorite. Anywho, this meal makes an affordable an easy meal that I gravitate towards on my busy weeknights.

1 small-medium onion, chopped

  • Pre-heat a large skillet over medium heat. Add beef and cook till browned, about 5 minutes.
  • Skim fat and then add butter, onion, mushrooms, and garlic. Cook till beef is well browned and onions are translucent, stirring often, about 5-7 minutes.
  • Add water, sherry, lemon juice, bouillon cube(s). Cook till all the liquid is gone, stirring frequently. Mom's tip: be sure to wait till all the liquid is gone before moving to the next step or the sauce will be too liquidy.
  • Turn off heat, add sour cream, and stir till well combined.
  • Serve over pasta or rice. Top with parsley and paprika, if using. Serve with a vegetable, too - I like steamed broccoli with a drizzle of melted butter.
