BEEF AND CORN CASSEROLE
This recipe was passed down from my mother. It's now a stand-by for me as well as our three grown daughters. It's a great dish to pass at potlucks.-Ruth Jost, Clear Lake, Iowa

Steps:
- Cook noodles according to package directions; drain. In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add the noodles and remaining ingredients., Transfer to a greased 13-in. x 9-in. baking dish. Cover and bake at 325° for 30 minutes. Uncover; bake 30-35 minutes longer or until bubbly.

WESTERN BEEF AND CORN CASSEROLE

- In a large skillet, cook beef over medium heat until meat is no longer pink; drain. Stir in the remaining filling ingredients; set aside. , For crust, in a large bowl, combine the flour, cornmeal, sugar, salt and baking powder. Fold in 1/2 cup cheese. Cut in butter until mixture resembles coarse crumbs. Stir in milk and egg. , Spread crust mixture over the bottom and up the sides of a greased 9-in. square baking dish. Pour filling into crust. Bake, uncovered, at 400° for 20-25 minutes or until bubbly. Sprinkle with remaining cheese; bake 5 minutes longer or until cheese is melted.

This is my families favorite casserole. This came from a Company's Coming book. When I am cooking for the youth on our yearly mission trip this is always requested. I've even made it for groups of 200 hungry youth.

- Add browned beef; mix.

MOM'S DRIED BEEF AND CORN CASSEROLE
This was my mom's favorite casserole when she was younger. However, she didn't get it very often because her brothers didn't like it as much. I like it, though, so I posted it! To make the dish less salty, rinse the beef in water before cooking. Also, cut down on the addition of salt in the recipe. (I find I need to do these things, to suit my tastes)

Steps:
- Saute 1 tablespoon butter and onion, add beef and mushrooms.
- For the white sauce: Melt 2 tablespoons butter with a wooden spoon.
- Blend in flour, salt and pepper, and stir until bubbly and then remove from heat.
- Stir in milk.
- Put it back on the burner, and stir constantly.
- Bring to a boil, and boil for 1 minute- Keep stirring so it doesn't burn.
- In a small bowl, beat egg yolks and add the prepared mustard, and salt and pepper to taste.
- Combine the egg yolk mixture with the white sauce mixture and dried beef mixture.
- Add the 2 cups corn.
- Pour into a 2 1/2 quart baking dish.
- Grate 1/2 cup cheese on top.
- Sprinkle paprika on top.
- Bake covered at 350 degrees for 30 minutes.

- Cover and microwave dried beef and 1 cup water in 2-qt casserole on high (100%) to boiling, 2 to 3 minutes; drain.
- Stir in onion, noodles, soup, milk, water and parsley flakes.
