Steps:
- Place all ingredients in a slow cooker. Cover and cook until beans are tender - approximately 8 hours on LOW or 4-5 hours on HIGH.
- Discard bay leaf.
- Use a handheld immersion blender (or a regular blender) to puree the soup until it reaches desired consistency. You can puree all of the soup to make it smooth, or only puree about half of the soup if you like a chunkier texture. Season with additional salt and pepper, to taste. Ladle soup into individual bowls and garnish with desired toppings.

- Heat the oil in a large pot over medium heat. Stir in the onion, bell pepper, carrot, and garlic, and cook 5 minutes, until tender. Mix in 1 can black beans and chicken broth.
- In a blender, puree remaining can of beans until smooth. Mix into the pot. Bring soup to a boil. Reduce heat to low. Mix in ham, cumin, salt, and pepper. Simmer 20 minutes. Garnish with Cheddar cheese and sour cream to serve.

Steps:
- Discard imperfect beans or stones.
- Rinse & soak overnight.
- Drain & place in large soup kettle with bone or carcass & 5 q. water.
- Add the onion stuck with cloves and carrots.
- Add the bay leaf, & celery leaves tied in a little bouquet.
- Cover & simmer for 3-4 hours.
- Remove the bones, onion, & bouquet with slotted spoon.
- Spin beans, liquid, & carrots in blender.
- Add cornstarch to soup in blender.
- Reheat stirring frequently.
- Taste for seasoning.
- Serve in bowls with pat of butter, slice of lemon & sprinkling of parsley.
- (Soaking overnight not included in "times to make").

BLACK BEAN SOUP

- Put the beans in a large saucepan and cover with cold water by 2-inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover and set aside for 1 hour. Drain and reserve.
- In a large soup pot heat the butter or oil over medium heat. Add the onions, celery and carrots, and saute until wilted and golden, about 10 minutes. Add the garlic and thyme and saute for 3 minutes more. Add the beans, hocks, water or stock, and bring to a simmer. Cover, adjust the heat to maintain a gentle simmer, cook until beans and meat are tender, about 1-1/2 hours.
- Turn the soup off. Remove the hocks from the soup, set aside to cool. Remove the meat from the hocks, discarding the bones, fat and skin. Cut the meat into small cubes and reserve. Puree the soup, with an immersion blender or in batches in a blender. Simmer the soup with the reserved meat. Season with salt and pepper to taste and add the sherry. To serve, divide the soup among warmed bowls, and top with one or more of the garnishes, if desired.

BLACK BEAN SOUP

- Set a multi-cooker to the saute function. Add the lard or butter and melt. Add the garlic, onion, bell pepper and jalapeno. Cook until the vegetables are softened, about 3 minutes. Sprinkle over the chili powder, cumin and salt. Stir and cook for about a minute. Add the beans and pour in the broth.
- Put on the lid and set the valve to sealing. Set to pressure cook on manual for 50 minutes.
- Once the pressure-cook cycle is complete, allow the pressure to release naturally for 10 minutes, then release the rest of the steam using quick release.
- Remove the lid and add the lime juice. Using an immersion blender, puree the soup until it is a good mix of smooth and textured. Taste and adjust the seasoning if needed. If the soup is too thick, add some additional broth to thin it.
- Ladle into bowls and garnish with the red onion, cilantro, tomato, sour cream, avocado and lime wedges.
MAMAN'S SUPER BLACK BEAN CASSEROLE
My mom makes this great black bean casserole. I have always loved it, and now it's on my husband's top 10 list of favorite foods!

- nota:diced tomatoes and chili powder can be replaced with an equivalent amount of salsa.
- Preheat oven to 350°F.
- In a large fry pan, heat oil and fry the onions, garlic, and celery until tender and onions translucent.
- Add tomatoes/salsa and spices, and heat through.
- Add black beans.
- Spoon a quarter of the mixture in the bottom of the casserole dish.
- Add a tortilla.
- Spoon another quarter of the mixture over the tortilla and spread to cover.
- Add a third of the grated cheese.
- Continue in this way until all the ingredients have been used up.
- Place casserole in the oven and heat for 20 minutes, or until heated through and the cheese is melted.
- Sprinkle green onion and green pepper over the dish (if desired) and serve.

- In a small bowl, mash 1 can black beans; set aside. In a large saucepan, saute the celery, onion, red pepper and jalapeno in oil until tender. Add garlic; cook 1 minute longer. , Stir in the broth, tomatoes, cumin, coriander, hot sauce, pepper, bay leaf, mashed black beans and remaining whole beans. Bring to a boil. - Peel 3 garlic cloves by smashing each firmly with the flat side of a knife to break into smaller pieces. Discard skins.
