You only need 10 minutes of prep for this healthy Black Bean Soup recipe that's made in the Crock Pot!

½ lb. dried black beans, rinsed
4 cups vegetable broth
1 onion, diced
1 carrot, diced
2 stalks celery, diced
1 bay leaf
1 ¼ teaspoons cumin
1 teaspoon garlic powder
½ teaspoon pepper
½ teaspoon salt (or more, to taste)
½ teaspoon liquid smoke ((optional))
Optional, for garnish: lime slices, sliced green onion, tortilla strips or chips, grated cheese, diced avocado, sour cream, fresh cilantro

Steps:

  • Place all ingredients in a slow cooker. Cover and cook until beans are tender - approximately 8 hours on LOW or 4-5 hours on HIGH.
  • Discard bay leaf.
  • Use a handheld immersion blender (or a regular blender) to puree the soup until it reaches desired consistency. You can puree all of the soup to make it smooth, or only puree about half of the soup if you like a chunkier texture. Season with additional salt and pepper, to taste. Ladle soup into individual bowls and garnish with desired toppings.

2 tablespoons vegetable oil
1 medium onion, chopped
1 green bell pepper, chopped
1 large carrot, peeled and thinly sliced
3 cloves garlic, minced
2 (15 ounce) cans black beans
1 (14 ounce) can chicken broth
2 cups cubed cooked ham
¼ teaspoon cumin
½ teaspoon salt
ground black pepper to taste
1 cup shredded Cheddar cheese
1 cup sour cream

Steps:

  • Heat the oil in a large pot over medium heat. Stir in the onion, bell pepper, carrot, and garlic, and cook 5 minutes, until tender. Mix in 1 can black beans and chicken broth.
  • In a blender, puree remaining can of beans until smooth. Mix into the pot. Bring soup to a boil. Reduce heat to low. Mix in ham, cumin, salt, and pepper. Simmer 20 minutes. Garnish with Cheddar cheese and sour cream to serve.

1 lb black beans
1 beef bones or 1 chicken carcass
1 large onion
2 cloves
2 carrots
1 bay leaf
8 -10 celery leaves
1 tablespoon cornstarch
salt & pepper, to taste
2 -3 tablespoons butter

Steps:

  • Discard imperfect beans or stones.
  • Rinse & soak overnight.
  • Drain & place in large soup kettle with bone or carcass & 5 q. water.
  • Add the onion stuck with cloves and carrots.
  • Add the bay leaf, & celery leaves tied in a little bouquet.
  • Cover & simmer for 3-4 hours.
  • Remove the bones, onion, & bouquet with slotted spoon.
  • Spin beans, liquid, & carrots in blender.
  • Add cornstarch to soup in blender.
  • Reheat stirring frequently.
  • Taste for seasoning.
  • Serve in bowls with pat of butter, slice of lemon & sprinkling of parsley.
  • (Soaking overnight not included in "times to make").

1 pound black beans, picked over, rinsed and drained
2 tablespoons unsalted butter or oil
1 cup finely chopped onion
1/2 cup finely chopped celery
1/2 cup finely chopped carrot
3 cloves minced garlic
1 teaspoon minced fresh thyme
2 large smoked ham hocks, about 1-1/2 pounds
9 cups water or homemade chicken stock
Kosher salt and freshly ground pepper
1/2 cup dry sherry
Optional serving garnishes: Sour cream or creme fraiche, finely chopped hard cooked egg, or 1 minced scallion

Steps:

  • Put the beans in a large saucepan and cover with cold water by 2-inches. Bring to a boil and lower the heat to a simmer. Cook for 5 minutes; remove from the heat, cover and set aside for 1 hour. Drain and reserve.
  • In a large soup pot heat the butter or oil over medium heat. Add the onions, celery and carrots, and saute until wilted and golden, about 10 minutes. Add the garlic and thyme and saute for 3 minutes more. Add the beans, hocks, water or stock, and bring to a simmer. Cover, adjust the heat to maintain a gentle simmer, cook until beans and meat are tender, about 1-1/2 hours.
  • Turn the soup off. Remove the hocks from the soup, set aside to cool. Remove the meat from the hocks, discarding the bones, fat and skin. Cut the meat into small cubes and reserve. Puree the soup, with an immersion blender or in batches in a blender. Simmer the soup with the reserved meat. Season with salt and pepper to taste and add the sherry. To serve, divide the soup among warmed bowls, and top with one or more of the garnishes, if desired.

1/4 cup lard or butter
5 cloves garlic, minced
1 yellow onion, diced
1 red bell pepper, diced
1 jalapeno, thinly sliced
2 tablespoons chili powder
1 tablespoon ground cumin
2 teaspoons kosher salt
2 cup dried black beans
5 cups chicken or vegetable broth, plus more to thin as needed
2 limes, juiced, plus lime wedges, for serving
1/2 cup diced red onion, for garnish
1/2 cup fresh cilantro leaves, for garnish
1/2 cup diced tomato, for garnish
1/2 cup sour cream, for garnish
2 avocados, diced, for garnish

Steps:

  • Set a multi-cooker to the saute function. Add the lard or butter and melt. Add the garlic, onion, bell pepper and jalapeno. Cook until the vegetables are softened, about 3 minutes. Sprinkle over the chili powder, cumin and salt. Stir and cook for about a minute. Add the beans and pour in the broth.
  • Put on the lid and set the valve to sealing. Set to pressure cook on manual for 50 minutes.
  • Once the pressure-cook cycle is complete, allow the pressure to release naturally for 10 minutes, then release the rest of the steam using quick release.
  • Remove the lid and add the lime juice. Using an immersion blender, puree the soup until it is a good mix of smooth and textured. Taste and adjust the seasoning if needed. If the soup is too thick, add some additional broth to thin it.
  • Ladle into bowls and garnish with the red onion, cilantro, tomato, sour cream, avocado and lime wedges.

1 onion, chopped
2 -3 cloves garlic (or more if you like)
1 stalk celery, diced
1 -2 tablespoon oil
1 (14 ounce) can diced tomatoes
1 teaspoon ground cumin
1/4 teaspoon hot chili powder (or to taste)
1 (19 ounce) can black beans
3 tortillas, cut to fit into casserole dish
grated cheddar cheese or soy cheddar cheese, to taste
chopped green onion (optional)
chopped green pepper (optional)

Steps:

  • nota:diced tomatoes and chili powder can be replaced with an equivalent amount of salsa.
  • Preheat oven to 350°F.
  • In a large fry pan, heat oil and fry the onions, garlic, and celery until tender and onions translucent.
  • Add tomatoes/salsa and spices, and heat through.
  • Add black beans.
  • Spoon a quarter of the mixture in the bottom of the casserole dish.
  • Add a tortilla.
  • Spoon another quarter of the mixture over the tortilla and spread to cover.
  • Add a third of the grated cheese.
  • Continue in this way until all the ingredients have been used up.
  • Place casserole in the oven and heat for 20 minutes, or until heated through and the cheese is melted.
  • Sprinkle green onion and green pepper over the dish (if desired) and serve.

3 cans (15 ounces each) black beans, rinsed and drained, divided
3 celery ribs with leaves, chopped
1 large onion, chopped
1 medium sweet red pepper, chopped
1 jalapeno pepper, seeded and chopped
2 tablespoons olive oil
4 garlic cloves, minced
2 cans (14-1/2 ounces each) reduced-sodium chicken broth or vegetable broth
1 can (14-1/2 ounces) diced tomatoes with green peppers and onions, undrained
3 teaspoons ground cumin
1-1/2 teaspoons ground coriander
1 teaspoon Louisiana-style hot sauce
1/4 teaspoon pepper
1 bay leaf
1 teaspoon lime juice
1/2 cup reduced-fat sour cream
1/4 cup chopped green onions

Steps:

  • In a small bowl, mash 1 can black beans; set aside. In a large saucepan, saute the celery, onion, red pepper and jalapeno in oil until tender.   • Heat ¼ cup oil in a large stock pot or Dutch oven over medium. Add onion, carrot, and garlic. Cook, stirring occasionally, until onion is golden, 5–7 minutes. Don't worry if the veggies start sticking to the bottom of the pan a little bit—that's a good thing! Those little browned bits have a ton of flavor, and we'll be adding some liquid in the next step to get them up, a process that's also called "deglazing." Cool, huh?
