MOM'S SWEDISH MEATBALLS
My Mom's Swedish Meatballs is a tried and true family recipe that's easy to make and incredibly flavorful with a delicious gravy!

Steps:
- Pre-heat oven to 325 degrees.
- Melt 1 tablespoon of butter in a sauté pan. Add onion and cook for 2-3 minutes until onions are soft. Add to a large bowl.
- Add bread crumbs to a medium sized bowl. Add milk, starting with 1/4 cup - just enough to wet all of the bread.
- Add meats to large bowl with onions and add the parsley, egg, salt, ginger, and nutmeg. Mix well and then add the milk soaked bread crumbs. If there is any extra milk in the bowl with the bread, do not add.
- Add meat mixture to fridge for at least 15 minutes, this will help with shaping the meatballs.
- Shape meat into 2 - 3ish inch meatballs and add to a rimmed baking sheet. Don't worry about crowding.
- Bake for 30 minutes.
- Once meatballs are done, remove meatballs with tongs and add to a plate or bowl. Then use a spatula to scrape all of the drippings from the pan into a large pot or dutch oven.
- Heat pot to medium and add 2 tablespoons of butter to the meatball drippings. Add flour and mix flour and butter to create a roux.
- Slowly add beef broth, mixing roux with it as it's added until all the broth is incorporated.
- Add the meatballs back to pan and let simmer on medium low for 15-20 minutes.
- Serve over noodles, rice, or whatever you'd like!

Steps:
- Melt butter in a skillet over medium heat; cook and stir onion in the melted butter until tender, 5 to 10 minutes.
- Place bread cubes in a bowl; pour 1/2 cup evaporated milk over bread cubes. Set aside until bread cubes absorb milk.
- Mix ground beef, ground pork, cooked onion, bread cube mixture, eggs, Worcestershire sauce, parsley, nutmeg, allspice, salt, lemon pepper, and ground black pepper together in a large bowl. Form mixture into golf ball-sized meatballs.
- Heat olive oil in the same skillet used for onion over medium-high heat; cook meatballs in the hot oil, turning with tongs, until all sides are browned, 10 to 15 minutes. Pour in beef stock and simmer until meatballs are cooked through, 15 to 20 minutes. Transfer meatballs to a serving bowl, reserving liquid in the skillet.
- Remove 1 cup beef stock from skillet; whisk flour into the 1 cup stock until smooth. Pour flour mixture back into skillet, whisking until mixture is smooth. Gradually whisk remaining evaporated milk and sherry into beef stock mixture. Simmer, stirring occasionally, until gravy is warmed and smooth, 5 to 10 minutes. Pour gravy over meatballs to serve.

MOM'S SWEDISH MEATBALLS
This recipe is such comfort food for me. It reminds me of being little and my mom making this; it's creamy and delicious on the egg noodles!

- Mix beef, pork, and veal together in a bowl with the onions, egg, white bread broken up into small pieces, and sprinkling of salt and pepper.
- Roll into balls about the size of a golf ball or a little smaller.
- Saute meatballs in melted margarine and the oil until browned.
- Remove meatballs from the pan and set aside.
- Add flour to the grease in the pan(to make a roux) and stir constantly for 30-60 seconds.
- Add 1/2 of the carton of half and half, the gravy master, and salt and pepper to taste.
- Stir until it starts to thicken, and then add meatballs back to the pan.
- Simmer on low for 40 minutes.
- As it thickens more, you can add the rest of the half and half as needed. (I usually end up adding the rest little by little because I like it saucey and because some of the sauce cooks away while simmering.).
- Re-season with salt and pepper to your taste, before serving on top of cooked egg noodles. Enjoy!
MOM'S CHRISTMAS SWEDISH MEATBALLS
My mom found this recipe years ago in the newspaper and has perfected it over the years. We all make it every year for Christmas, it just isn't Christmas without these luscious meatballs!

- Saute onions in 3 T. butter. Let cool a bit and lightly mix the meat, onions, bread crumbs, eggs, 1 1/2 cups of the cream. salt, pepper, nutmeg and parsley. Form into meatballs, about the size of a small walnut, place on cookie trays, and bake at 375 for 20-25 mn.
- Put in two casseroles, and make the cream gravy.
- Melt the 1/4 cup butter in a large, heavy saucepan Add the 1/4 cup flour, a touch more salt and pepper, cook for at least one minute. Do not brown. Gradually add the remaining cream, stirring continuously, until thickened. I like to add some Kitchen Bouquet for more flavor and some color at this point.
- Pour over the meatballs.
- Note: At this point, we generally freeze them and then defrost and bake for an hour or so on Christmas, as this recipe makes a lot of meatballs, so it is time consuming and who wants to do all that on the day of, right?.
- Also, you can freeze the cooked meatballs alone, and make the gravy later and pour it over the meatballs right before you bake them.

- Preheat oven to 200 degrees. Tear bread into pieces and place in a small mixing bowl along with milk. Set aside.
- Melt 1 tablespoon of the butter in a large electric skillet over low heat. Add onion and pinch of salt and sweat until onions are soft. Remove from heat and set aside.
- In the bowl of a electric mixer, combine bread and milk mixture, ground chuck, pork, egg yolks, 1 teaspoon of kosher salt, pepper, allspice, nutmeg, and cooked onions. Beat on medium speed for 1-2 minutes.
- Using a scale, weigh meatballs into 1 ounce portions and place on a sheet pan (an ice cream scoop heals here). Shape meatballs into rounds.
- Heat remaining butter in the skillet over medium-low heat, or set to 250 degrees. Add meatballs and saute until golden brown on all sides, about 7-10 minutes. Remove meatballs to an ovenproof dish using a slotted spoon and place in warmed oven.
- Decrease heat to low and add flour to skillet. Whisk until lightly browned, approximately 1-2 minutes. Gradually add beef stock and whisk until sauce begins to thicken. Add cream and continue to cook until gravy reaches the desired consistency. Remove the meatballs from the oven, cover with the gravy and serve.
MOM'S SWEDISH MEATBALLS
In my house growing up one got to choose their birthday dinner meal. This one was always my first choice. Mom makes the best swedish meatballs - they are different from the standard heavy, thick gravy appetizer and instead are light and fluffy with a hint of sweet and spice. When I grew up mom gave me the recipe. My husband just told me the other day that I've finally perfected it and mine taste just like mom's. (I'll never tell her that, though - her's will always be "the best"!)

- Take off any rings - your hands are going to get sloppy!
- If using instant potatoes, make them first.
- Preheat oven to 350 degrees.
- Combine all ingredients in a large bowl, except for flour and milk, and mix well using your hands.
- Form into medium sized balls and roll in Wondra flour until coated.
- Place on baking pan coated w/ Pam about 1-2 inches apart.
- Bake for eight minutes, then turn meatballs over and bake for another eight minutes.
- Put meatballs in a large casserole dish and pour evaporated milk all over. Sprinkle additional nutmeg over the entire dish.

- Melt 2 tablespoons butter in heavy medium skillet over medium heat.
- Add onion and sauté until translucent, about 5 minutes.
- Cool slightly.
- Combine bread and stock in large bowl.

MOM'S SWEDISH STYLE MEATBALLS
This is a recipe I remember my mother making for dinner parties when I was very young. I loved to sneak in and sample a few when she wasn't looking. Mom served this with rice as a main dish. This has a very different sauce from other Swedish meatball recipes I have since tasted -so I am not sure if these are authentically Swedish or not. I just know that they are rich and tasty and there were never any leftovers. I snagged this from Mom's recipe collection. This makes about 30 medium sized meatballs.

- Soak breadcrumbs in cream 5 minutes,or until very soggy.
- Meanwhile, in a small skillet, melt 2 tsp butter and sauté onion until soft and tender.
- Combine meats well (if you can't get each type, that's ok- just end up with 1 1/2 pounds ground meat total).
- Add soaked bread crumbs mixture, sautéed onion, egg, parsley, salt, pepper, and spices to taste to the meat mixture.
- Mix well until combined.
- Cover and chill meat mixture for 30 minutes to firm up.
- Form about thirty 1 1/2" size meatballs (using a meatball scoop).
- Brown meatballs in 1-2 Tbsp butter in a very large deep sided skillet until browned on all sides, but not cooked all the way through yet; then remove from skillet using a slotted spoon and set aside in a covered dish to keep warm.
- Combine boiling water,coffee powder and crumbled bouillon cube together until blended.
- In the hot drippings from the pan, add 2 Tbsp butter and stir until melted.
- Whisk in 2 Tbsp flour, sprinkling in the flour gradually so it doesn't clump and whisking vigorously until blended.
- Whisk in the coffee mixture and cook and stir until gravy thickens and bubbles, over medium or medium-high heat.
- Add meatballs to the pan, cover,lower heat to medium low, and let meatballs cook in the gravy until fully cooked (approx 30-40 minutes), stirring occasionally.

SWEDISH CARDAMOM MEATBALLS
From a Food Network "Calling All Cooks" segment several years ago as made by Inglill Mutti with my alterations. These are about as Swedish as they get and my once a year MUST make recipe each Christmas season. This joins my Top Ten favorite recipes! Two tips: Cardamom can be expensive & hard to find. I finally found it at "Wild Oats" where bulk spices are sold by the ounce. I also use Tyler Florence's recipe for the accompanying Lingonberry Sauce, another hard to find item. I found 2 brands at Cost Plus World Market, and I also hear it's sold at Ikea if there's one near you.

- Soak bread crumbs in milk or buttermilk in large mixing bowl for 5 minutes. Add meat, eggs, salt & pepper, cardamom and 1 cup chopped onion. Mix well and roll into 1-1/2" meatballs. It helps to wet your hands as you roll.
- Saute meatballs in 1/4 cup butter approximately 20 minutes. Remove browned meatballs and set aside.
- In same skillet, saute 1/2 cup chopped onion with 1/4 cup butter, sugar and pepper unti caramelized, about 10 minumtes.
- Add beef broth to onion & sugar mixture, scraping up any browned bits from the pan. Briefly cook over high heat.
- Add cream, gravy maker and all other spices and bring to a simmer.
- Make a slurry of the cornstarch & water and whisk the slurry into the mixture to thicken.
- If you're going to serve the meatballs right away, add them to the sauce and simmer another 20-30 minutes. Otherwise, cool and refrigerate sauce & meatballs, either together or separately. (I do this separately, as I often freeze the meatballs without the sauce.).
- Combine all ingredients for the lingonberry sauce and mix well.
- Serve meatballs in a chafing dish with sauce and lingonberry sauce on the side as a dip.
