Meet the Cook: This recipe was inspired by my husband's love of corn bread. It's so good, he and folks who dine with us (like our two grown children) eat it plain. We're retired but still "commute" - between our rural home and our fishing camp! -Lois Triplet, Springhill, Louisiana

Number Of Ingredients 11

1 cup plus 1 tablespoon cornmeal, divided
1/3 cup all-purpose flour
1-1/2 teaspoons baking powder
3/4 teaspoon salt
1/4 teaspoon baking soda
5 large eggs, room temperature, beaten
1 package (16 ounces) frozen chopped broccoli, thawed and drained
1-1/2 cups shredded cheddar cheese
1-1/2 cups 4% cottage cheese
1 medium onion, chopped
3/4 cup butter, melted

Steps:

  • In a bowl, combine 1 cup of cornmeal, flour, baking powder, salt and baking soda. In another bowl, combine the eggs, broccoli, cheeses, onion and butter. Add to cornmeal mixture; mix just until moistened., Sprinkle remaining cornmeal in a greased 13x9-in. baking pan. Pour batter into pan. Bake at 350° for 30-40 minutes or until a toothpick inserted in the center comes out clean. Serve warm.

1 (8 1/2 ounce) box Jiffy corn muffin mix
1 large onion, chopped
1/2 cup margarine or 1/2 cup butter
4 eggs
1 cup cheddar cheese, shredded
1 (10 ounce) package frozen chopped broccoli, thawed and drained
8 ounces sour cream, i use low fat
1 teaspoon salt

Steps:

  • Preheat oven to 425 degrees Fahrenheit.
  • Mix all ingredients together well.
  • Grease a 8x8 pan, I use Pam.
  • Pour into prepared pan.
  • Bake@ 425 degrees Fahrenheit for 40 minutes or until bread is pulling away from side of pan.
  • Let sit for 15 minutes until cutting.

10 ounces frozen broccoli, chopped
1 Jiffy cornbread mix
3 eggs
1 medium onion, chopped
1 cup shredded cheddar cheese (4oz)
1/2 cup butter, melted
1/2 teaspoon salt
1/4 teaspoon garlic powder
1/4 teaspoon red pepper

Steps:

  • Press broccoli between paper towels to remove excess moisture.
  • Combine cornbread mix, eggs, onions, cheese, butter and seasonings.
  • Stir well.
  • Stir in broccoli.
  • (Batter will be thick) Pour mixture into a greased 8 inch square pan.
  • Bake 375 degrees for 25 to 30 minutes or until golden brown.
  • Cool slightly and cut into squares.

3 tablespoons vegetable oil
1 1/2 cups self-rising buttermilk cornbread mix
1/2 cup chopped sweet onion, such as Vidalia
10 ounces pepper Jack cheese, grated
8 ounces fresh broccoli florets, chopped (about 2 cups)
1/2 teaspoon freshly ground black pepper
1 jalapeno pepper, seeded and chopped
1 cup sour cream
3/4 cup buttermilk
2 tablespoons unsalted butter, melted

Steps:

  • Preheat the oven to 350 degrees F. Pour the vegetable oil in a 9-inch cast-iron skillet that has been well seasoned to prevent sticking.
  • Combine the cornbread mix, onion, cheese, broccoli, black pepper and jalapeno in a large bowl. Stir in the sour cream, buttermilk and melted butter to make a thick batter.
  • Heat the oil in the skillet over medium heat until hot and shimmering. Spoon in the batter, spreading it to the edges. The oil will come up around the edges of the batter. Spread it over the top of the batter. (During the baking process the oil will help brown the bread.)
  • Bake until golden brown and a toothpick inserted in the center comes out clean, about 45 minutes. Cool in the pan for 10 minutes, and then carefully loosen the edges and bottom with an egg turner or large spatula and turn onto a rack. Serve warm or at room temperature.

My mom used to make this all the time. Every time her senior citizens group from the church had a covered dish dinner she got asked to bring this dish. It's a little different from the other broccoli cornbread recipes posted because she used cream cheese instead of cottage cheese.

1/2 cup olive oil
10 ounces elbow macaroni
8 garlic cloves, sliced
1 wedge kraft romano cheese, diced
1 tablespoon salt
12 ounces frozen bag broccoli florets

Steps:

  • Pour olive oil in a large pot on low heat add garlic. Saute until oil is flavored.
  • do not brown the garlic(just a few minutes).
  • Add frozen broccoli saute until thawed, about 3-5 minute.
  • pour in enough water to boil the pasta about 3-4 quarts.
  • add salt, follow directions on pasta.
  • While waiting for the water to boil, dice the cheese.
  • Once the pasta is done, remove pot from heat. Let it sit for 20 minutes uncovered to cool a little, then add the cheese one handful at a time stir briefly.
  • Serve in 15 minutes.
  • Salt to taste.

My fiance and I eat at this little country restaurant that serves corn muffins with broccoli in them and they are to die for, especially for a broccoli lover like me. They also aren't open to sharing recipes... so this is my best approximation on how they make it (with onions and cheese added). I tried this on my fiance and his brother and it got good reviews... so I am satisfied.

1 (8 1/2 ounce) package Jiffy corn muffin mix
1 egg
1/3 cup milk
1/4 cup diced onion
1 cup frozen chopped broccoli floret
1/2 cup shredded cheddar cheese (reduced fat works too)

Steps:

  • Thaw and drain broccoli
  • Preheat oven to 400 degrees.
  • Combine first three ingredients, mix thoroughly.
  • Stir in onion and broccoli
  • Sprinkle in cheese and continue mixing, batter will be lumpy.
  • Pour mix into muffin tin or square baking pan (I use an 8x8).
  • Bake at 400 degrees until golden brown and solid in the middle.
  • NOTE: Bake time may not be exact, my old oven is a little "off".
