Beef Barley Soup is comfort food in a bowl. Healthy, filling and affordable, this nutritious dish is made in one pot and reheats amazingly.

2 tbsp oil
2 lb beef (cut in cubes)
8 oz mushrooms (chopped)
1 large carrot (chopped)
1 yellow onion (diced)
3 bay leaves
3 garlic cloves (pressed)
4 cups beef broth
1/2 cup barley
1 tbsp salt (adjust to taste)
1 tsp pepper (adjust to taste)

Steps:

  • In a preheated pot, brown beef with oil.
  • Add onion, carrot and mushrooms to the beef and sauté until veggies turn slightly golden.
  • Add salt, pepper, bay leaves and galic to the mix.
  • Pour beef broth and allow everything to simmer on medium heat for 45 minutes with the lid on.
  • Add barley and cook for 20 more minutes or until it's fully cooked. Serve right away.

Easy to make, and you probably have all the ingredients on hand already. My mom use to make this in our family restaurant; it always sold out quickly!

1/2 cup Carrots chopped
1/2 cup Celery chopped
1/2 cup Onions chopped
1 tbs Butter
4 cups Beef broth
4 cups Water
1lb beef (steak, chuck, stew meat, or whatever leftovers you have)
1 (14.5oz) can of diced tomatoes
3/4 cup Barley (use quick-cook if you prefer)
1 tsp Salt (or less if you prefer)
1 tsp Pepper, black
1/2 tsp Basil
1/2 tsp Oregano

Steps:

  • In soup kettle or dutch oven, saute carrot, celery and onion in butter until tender (about 5 minutes).
  • Add the broth, water, beef, tomatoes, barley, salt, pepper, basil, and oregano; bring to a boil.
  • Reduce heat, cover and simmer until barley is tender (about 20 minutes for quick-cook, about an hour for regular).

The aroma in the Test Kitchen as we prepared this was nearly irresistible! We couldn't wait until it was finished and dig in. Let's just say, we weren't disappointed one bit!

2 Tbsp oil, margarine or butter
4 ribs of celery sliced
1 large white or yellow onion diced
1/2 c finely diced green pepper
5 large carrots sliced into medallions
1-2 lb stew meat cut up 1/2 in cubes. you can use round steak or a well trimmed chuck roast as well
1/2+ c sherry, beef broth, water or dry red wine for pan deglazing
6 c beef broth
6 c water
1 tsp Lawry's seasoned salt or similar product. this is added to taste.
2 bay leaf
1 c pearled barley (or hulled barley which requires longer cooking time but provides more fiber)
1/2 tsp black pepper
1 can(s) beans (pinto or great northern whites) dained and rinsed
any veggies you may want to add. adding green beans, peas or similar veggies do not change the basic flavor of the soup.

Steps:

  • 1. Add 1 tbsp of oil (or margarine/butter) to a large Dutch oven and brown beef in batches. Be sure to dry your beef off with some paper towels BEFORE you brown or the beef won't brown appropriately, it will just turn grey. You want the browning for flavor You can also do this in a frying pan and then transfer all the ingredients to a soup pot.
  • 2. Deglaze the pan with a bit of broth, water, sherry or dry red wine and save the drippings. Sherry really makes a nice rich flavor.
  • 3. Into the same pan now cleaned, add other tablespoon of oil.
  • 4. Saute onions, green pepper and celery until soft. Add carrots and continue sauteing for 3-5 minutes
  • 5. Add the meat and saute another 3-5 minutes. Add water and broth. (Or transfer to soup pot and then add all the ingredients.)
  • 6. Add the bay leaf, seasoned salt and the pepper.
  • 7. Bring to boil, turn down and gently simmer covered for about 1 hour.
  • 8. Add pearl barley, Cover pan and simmer until soft about 1 hour. (Hulled Barley about 2 hours.) The barley will absorb salt. You may need to add more seasoned salt or you may omit the salt earlier and season after the barley cooks. It depends on the broth you use. Some are very salty.
  • 9. Add beans. You may stop with the beans or you may add any other veggies like peas, or green beans. Continue cooking for another 1/2 hour or so.
  • 10. Serve with a crusty bread and a salad for a complete meal.

1 cup large lima beans
1/2 cup barley
3 -4 cups vegetables, of your choice chopped (including carrots, celery, zucchini, mushrooms, whatever)
1 large onion, diced
oil
salt
pepper
dill

Steps:

  • Boil lima beans in water for one minute. Drain! Then add 8-10 cups of hot water, barley, vegetables.
  • Bring to a boil again, and then simmer for about an hour or more, until beans are soft.
  • While soup is cooking, saute onion in oil until well done, or even browned. Add to soup.
  • Season with salt, pepper, dill to taste.

This is a great full-flavored beef and barley soup. The red wine gives it just a hint of sweetness and the beef bouillon adds savoriness to the broth. The use of the barley for a filler instead of potatoes really helps cut down on the carbs. The big chunks of beef and mushrooms tie all the flavors together. Delicious!

3 lb beef stew meat, cut in bite sized pieces
2 medium onions, diced
5 c water
1 c red wine
7 Tbsp beef base (Better than Bouillon)
2 bay leaves
2 c white mushrooms, sliced
1 c sliced carrots
2 tsp rosemary, dried
1 tsp pepper
28 oz stewed tomatoes (chop fine or run through Cuisinart)
1 c barley, uncooked
salt, to taste

Steps:

  • 1. Brown beef in small amount of olive oil. Do about 1/3 of the meat at a time over a medium high heat, removing each batch after it is browned and the excess liquid has evaporated.
  • 2. When all meat is browned and removed from pan, pour off any excess oil. Add 1 cup of red wine to the pot, scraping up all the browned bits from the bottom of the pan.
  • 3. Return meat to the pan, including any juices, along with all remaining ingredients except the barley. Bring to a boil, then reduce heat, cover and simmer for 2 hours.
  • 4. Stir in barley, return to boiling. Then reduce heat and simmer until barley is cooked.

5 cups water
1 (16 ounce) can tomatoes, cut up
1 large onion, sliced
1 tablespoon instant beef bouillon granules
2 teaspoons salt
3/4 teaspoon dried basil, crumbled
2 cups sliced carrots
1 cup sliced celery
3/4 cup chopped green pepper
2/3 cup quick-cooking barley
1/4 cup snipped parsley

Steps:

  • In Dutch oven slowly brown short ribs on all sides; drain off excess fat.
  • Add water, undrained tomatoes, onion, bouillion granules, salt, and basil.
  • Simmer, covered, for 1-1/2 hours.
  • Add carrots, celery, green pepper, barley, and parsley.
  • Simmer, covered, 45 minutes more.
  • Remove meat and bones.
  • Chop meat; discard bones.
  • Skim excess fat from soup.
  • Return meat to soup; heat through.

1 pound beef top round steak, cut into 1/2-inch cubes
1 tablespoon canola oil
3 cans (14-1/2 ounces each) beef broth
2 cups water
1/3 cup medium pearl barley
3/4 teaspoon salt
1/8 teaspoon pepper
1 cup chopped carrots
1/2 cup chopped celery
1/4 cup chopped onion
3 tablespoons minced fresh parsley
1 cup frozen peas

Steps:

  • In a large saucepan, heat oil over medium heat. Brown beef on all sides; drain. Stir in broth, water, barley, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour. , Add carrots, celery, onion and parsley; cover and simmer until meat and vegetables are tender, 30-40 minutes. Stir in peas; heat through.

This is what I consider the ultimate beef soup. Great on a frosty day. For beef stock, I use 2 1/2 quarts water and 6 teaspoons beef base. Also, use inexpensive red wine. No need for the good stuff here, and cheaper actually works better! Try with leftover pot roast.

1 tablespoon vegetable oil
1 ½ cups chopped onion
1 cup chopped celery
1 cup chopped carrots
2 cloves garlic, minced
10 cups beef stock
¾ cup barley
1 bay leaf
3 sprigs fresh thyme, chopped
½ cup red wine
2 cups cubed potatoes
2 cups diced cooked beef
1 teaspoon browning sauce
1 ½ cups chopped cabbage
salt and pepper to taste

Steps:

  • In a large pot over medium heat, combine the oil, onions, celery, carrots, and garlic. Saute for 5 minutes, or until tender. Add the beef stock, barley, bay leaf and thyme and simmer until barley is softened but not mushy. Add the wine, potatoes and beef.
  • Add the browning and seasoning sauce now if you want your soup to have more of a brown color. Simmer another 15 minutes and add the cabbage. Allow to simmer another 15 minutes, or until all vegetables are tender. Salt and pepper to taste.
