Steps:
- Preheat over to 350. Spray muffin tin pan with non-stick cooking spray. In a large bowl combine flour, baking soda, and salt.
- In a separate bowl cream together the butter and sugar. Stir in eggs and mashed banana. Then add banana mixture to flour mixture and stir until combined.
- Fill muffin tins with batter [almost to the top]. Bake for 20 minutes.
MOM'S BANANA BREAD
Growing up, I loved the taste of my mom's fresh banana bread. As do my children. Always- such a great, tasty way to use up those overripe bananas. My sister adds chocolate chips to her's. Also tastes great as muffins with cream cheese frosting!

Steps:
- Cream sugar and butter.
- Add eggs, beat well.
- Add rest of ingredients.
- Pour into loaf pan.
- Sprinkle walnuts over top.
- Bake at 325 degrees for 1 hour 20 minutes. Or until toothpick comes out clean.
- Keep in pan 10 minutes then put on wire rack until completely cooled.
- Muffins- 325 degrees for 25 minutes.
- Mini Muffins- 325 degrees for 15 minutes.

Old fashioned banana bread, excellent use of your over-ripe bananas! Same recipe makes either a loaf or 12 muffins. Walnuts are optional, we usually don't add them.

- Preheat oven to 350 degrees. Either grease and flour a 9" X 5" loaf pan or place 12 cupcake papers in a muffin pan.
- Cream sugar and shortening, beat in eggs then bananas.
- Combine baking soda with milk, stir into creamed mixture.
- Sift flour with salt and spices; add a little at a time to the creamed mixture, beating well after each addition.
- Stir in nuts; pour into prepared pan.
- For muffins, bake for 22 minutes at 350 degrees, or until knife in center comes out clean.
- For loaf, bake for 35 minutes at 350 degrees, then cover with aluminum foil and continue to bake for 25 additional minutes or until knife in center comes out clean.

- Preheat the oven to 350 degrees F.
- Sift together the flour, baking soda and salt in a medium bowl. Mix together the vanilla, eggs and orange juice in a measuring cup or small bowl. Cream the sugar and butter in a medium bowl until pale yellow and fluffy, about 5 minutes. Add in the egg mixture and beat until creamy. Mix in the bananas until smooth. Pour the flour in 2 batches into the batter and mix on low speed until incorporated. Stir in the chocolate chips with a wooden spoon. Pour into a greased loaf pan and bake 1 hour, covering lightly with foil if the top gets too brown. Cool, remove from the pan and slice. Serve dusted with the confectioners' sugar.
BANANA BREAD MUFFINS

- Preheat the oven to 425 degrees F.
- Lightly brush a 12-muffin tin with butter and set aside.
- Whisk the flour, baking soda, brown sugar, and cinnamon together in a medium bowl; set aside.
- Whisk the banana, oil, milk, eggs, salt, and vanilla in a large measuring cup with a spout or another bowl.
- Make a small well in the center of the dry ingredients. Pour wet ingredients into the center; then stir with a wooden spoon until the dry ingredients are moistened but still lumpy. Do not overmix the batter or your muffins will come out dense. Gently stir in the nuts. Divide the batter evenly into the muffin tin.
- Put the muffins in the oven and immediately reduce oven temperature to 375 degrees F. Bake until golden brown, about 25 minutes, rotating the pan halfway through the cooking. (Insert a toothpick into the center of a muffin to check if it is done. Toothpick should come out clean). Cool muffins in the pan on a rack for a couple minutes. Turn the muffins out of the pan and cool on the rack. Serve warm or at room temperature.
BANANA BREAD OF MUFFINS
Recipe here to make a yummy banana bread but can also be used to make Banana muffins.

- Preheat the oven to 180 C/ Gas 4
- Mash the bananas and combine with the sugar, egg and melted butter.
- Sieve in the flour and baking powder, mixing in as you go.
- Pour into a banana bread case and place in the oven for 30 minutes, check the banana bread and remove once golden and risen.
- Alternatively spoon into muffin cases and bake for 25 minutes, check on muffins and remove once golden and spongy.
- Whilst the banana bread/muffins are cooling down. Begin to make the icing.
- Whip together the melted butter and cream cheese. Then add 300g of the icing sugar and mix well.
- Then add the lime juice and vanilla extract to the mixture. After this slowly add as much as required of the the rest of the icing sugar until the icing is sweet enough and you will know the texture is ready when a flattened tea spoon of icing is turned side ways it doesn't drip off.
- Ice your Banana bread or Muffins once they have cooled down and add sprinkles (optional).
BANANA BREAD MUFFINS
I had some over ripe Bananas & wanted to make Banana bread, but couldn't find my loaf pans. I modefied this Banana Bread recipe, & ended up with the most fantastic Banana Muffins! My Husband (who's very picky), & son (just as picky), went nuts over these. Very good. The best part, is not having to slice up a loaf. Just peal off the cupcake papers & eat!

- Line Cupcake tin with papers & spray with vanilla pam (pam for baking).
- In Large bowl, combine flour soda & salt.

I promise you that my mom's banana bread recipe is the absolute BEST you'll ever make or taste -- I've tried other banana bread recipes, but - they don't even come close to my Mom's -- Love you Mommy!

- Cream together butter, sugar, & egg yolks until creamy.
- Sift dry ingredients together (flour, baking soda, salt, cinnamon & nutmeg). Alternately add the dry mixture to the creamed butter mixture as well as the milk & mashed bananas. Beat the egg whites until a stiff peak forms and fold in with a wooden spoon, (make sure you only use a wooden spoon to do this - this is KEY), next - fold in the chopped nuts also stir in with the wooden spoon.
- Bake in a loaf pan that you have sprayed with olive oil or non-stick spray and dusted lightly with flour at 350° for approximately 45 minutes - insert a toothpick in the center of the loaf to ensure it is not runny, if it is - allow to bake an additional 5-10 minutes.
- Cool on a wire rack and serve with cream cheese or your favorite margarine.
- Note: I love to wait a day and then toast a piece in my toaster oven - it is SO good when it gets re-heated and toasty with butter on it and a cup of coffee - YUM!

- Blend in eggs.

- Whisk the flour, baking soda and salt in a medium bowl.

- Preheat oven to 350°. Prep. muffin tin, with butter/spray or liners.
- Melt Butter in Microwave for 30 seconds. Meanwhile, in a meduim mixing bowl, mash your banana.
- Then in the same bowl add; sugar, brown sugar,milk, melted butter, egg. Then cream together.
- Once creamed, add Baking Soda, Salt, and flour. Mix well.
- Then fill the muffin tins 3/4 up, and place in the middle of the rack.
- Let them bake for 17 minutes, or until middle comes out clean with a knife.

In another bowl or a blender is even better, combine the bananas, eggs, milk, vanilla, then add the vegetable oil, and coconut oil and mix together (a minute or so, until it becomes liquid).Stir the liquid ingredients into the dry mixture, and then add the pecan pieces. Spray 2 medium size loaf pans with vegetable spray and line the bottom of the pans with parch paper. Pour mixture into two medium size loaf pans. Sprinkle 2 or 3 teaspoons of raw sugar evenly over the batter in each pan. Banana bread will bake for one hour and 5-10 minutes. Test with a toothpick for doneness.
- Preheat the oven to 350 degrees. Follow the instructions above, but scoop the batter into muffin tins with paper cups (sprinkle 1 teaspoon of raw sugar onto each muffin) and bake them for about 34-36 minutes in muffin tins. Test for doneness with a toothpick as well. I used Tulip cupcake holders for these.
