- Whisk together the flour, salt and baking soda in a large bowl. Add white sugar, melted butter, vanilla extract, sour cream, buttermilk and eggs. Mix well with a spoon. Fold in shredded apples. Spray a 9 x 5 bread pan with cooking spray and add the batter.

- Preheat oven to 350 degrees F. Spray a 9-by-5-inch loaf pan with nonstick spray or line with foil and spray with nonstick spray, for easy removal.
- Mix brown sugar and 1 teaspoon cinnamon together in a bowl; set aside. Toss apples with 2 tablespoons granulated sugar and remaining teaspoon cinnamon in another bowl.
- Beat butter and remaining 2/3 cup granulated sugar together in another medium bowl with an electric mixer until smooth and creamy, about 5 minutes. Beat in eggs, 1 at a time, until blended in; add vanilla extract.
- Whisk flour and baking powder together in another bowl, then add to creamed butter mixture and beat until blended. Mix 1/2 cup milk into batter until smooth.
- Pour half the batter into the prepared loaf pan; add half the chopped apple mixture.
- Sprinkle half of the brown sugar/cinnamon mixture on top of apple layer.
- Pour the remaining batter over apple layer and top with remaining chopped apples, then the remaining brown sugar/cinnamon mixture.
- Lightly pat apples into batter; swirl brown sugar mixture through apples using a knife or spoon.
- Bake until a toothpick inserted in the center of the loaf comes out clean, approximately 1 hour and 10 minutes.
- Mix powdered sugar with remaining 1 to 3 tablespoons milk for a glaze, depending on preferred thickness.
- Let the loaf cool for about 15 minutes, then drizzle with glaze.

- 1. Apple Bread: Preheat oven to 350^. Grease the bottom and corners of 9-inch loaf pan (I sometimes use two 8- inch loaf pans and they turn out great-I like this way)Cut and fold foil to fit in pan and hang over ends of pan, for easy removal after baking. Spray foil , but not sides of pan (not spraying sides makes bread rise nicely). Turn temperature to 325^ if using dark pans or glass. In a large mixer bowl beat margarine and sugars together until combined and fluffy. Add eggs, and vanilla. If using the lemon or vinegar mixture mix it up now and set aside. Combine flour,and remaining dry ingredients (sprinkle a fit of this flour mixture over apples-set aside) and add remaining flour mixture alternately with the buttermilk. Blend after each addition. Remove bowl from mixer and stir apple mixture and nuts in by hand just to incorporate. Spoon batter in prepared pan or pans;spreading evenly. Sprinkle topping over batter and bake for 50 to 60 minutes testing with toothpick for doneness. Let rest in pan or pans for 5 minutes, then run a table knife inside pans around sides to loosen. Carefully lift out bread by the overhanging foil. Place on wire rack to cool completely before slicing. --- Topping: In a small bowl combine the brown sugar and spices with the flour. Using a pastry blender cut the butter in until coarse crumbs form. Stir in nuts. Sprinkle on top of bread loaf or loaves and bake.
MOM'S APPLE PIE I
My Mom makes the best Apple Pie I have ever tasted. Now I would like to share her secret with you. Serve with vanilla ice cream if you wish.

- Preheat oven to 450 degrees F (225 degrees C). Fit bottom crust into a 9 inch pie plate.
- In a small bowl, mix together sugar, flour, salt, cinnamon, and nutmeg. Place sliced apples in a large bowl and sprinkle with sugar mixture. Toss until apples are thoroughly coated. Spoon apples into pan.
- Dot apples with butter or margarine, then sprinkle with whiskey. Cover with top crust. Seal edges and cut steam vents in top.
- Bake in preheated oven for 10 minutes. Lower temperature to 350 degrees F (175 degrees C) and bake an additional 40 minutes. Serve warm.

TOM'S MOM'S APPLE PIE

- For the pie crust: Place the flour, granulated sugar and salt in a food processor. Pulse once or twice to evenly incorporate. Add the butter and lard and pulse until the fat is broken down into pea-size pieces, 5 to 6 pulses. Add the cider vinegar and 1 tablespoon of the cold water and pulse to combine. Continue adding a tablespoon of water at a time and pulsing after each addition until the dough just comes together (you may not need the full 1/3 cup water). Remove the dough from the food processor and form a third of the dough (about 9 ounces) into a disk. Form the remaining two-thirds of the dough (about 1 pound) into another disk. Wrap the disks in plastic wrap and refrigerate at least 2 hours or up to overnight.
- Position an oven rack in the lower third of the oven and preheat to 425 degrees F.
- Remove the dough disks from the refrigerator and let sit at room temperature for 10 to 20 minutes to take the chill off.
- For the filling: Combine the brown sugar, granulated sugar, cornstarch, cinnamon, salt, ginger and nutmeg in a small bowl. Set aside.
- Put the apple slices in a large bowl and stir in the sugar mixture and orange juice. Mix to combine.
- Dust a clean work surface with flour and roll out the larger disk of dough into a 13-inch round. Transfer to a 10-inch pie dish. Pour the apple filling into the shell and then evenly distribute the butter pieces over the apples. Roll out the second disk of dough into an approximately 11-by-10-inch rectangle. Cut the dough into six strips, about 11 inches long by 1 1/4 inches thick.
- Form a lattice top by laying 3 parallel dough strips vertically across the pie. Fold the middle strip of dough in half back over itself and lay one piece of dough horizontally across the middle of the pie, perpendicular to the other dough strips. Fold the original strip of dough back down. Next, lift the other two strips of dough and fold them back over themselves. Lay another strip of dough perpendicular to the folded-over dough pieces. Fold those pieces back down and repeat on the other side with the remaining piece of dough. Trim the dough around the edges of the pie dish so there is no more than a 1/2-inch overhang.
- Fold the bottom crust up and over the edges of the lattice top and crimp the edges together between your forefingers and thumbs. Place the pie on a baking sheet and transfer to the oven. Bake for 20 minutes. Remove the pie from the oven and cover the edges with foil or a pie crust shield. Return to the oven and continue to bake until the filling begins to bubble, another 35 to 40 minutes. Let cool at least 1 hour.
- For the mascarpone whipped cream: Combine the mascarpone, cream and confectioners' sugar in the bowl of a stand mixer fitted with a whisk attachment. Beat on high speed until the mixture forms soft peaks and is thick. Serve immediately or store in the refrigerator until ready to serve. (This can be made the day before.)
- Cut the pie into slices and top with the mascarpone whipped cream.
MOM'S HARVEST APPLE PIE

- Preheat the oven to 400 degrees F.
- In a large bowl, combine the sliced apples, orange zest, cranberries, raisins, walnuts, flour, brown sugar, cinnamon, and nutmeg and mix well. Roll out the bottom dough and place it into a 9-inch pan, leaving 1-inch of pie dough hanging over. Pour the pie filling into the crust. Roll out the top dough and cut it with a scalloped pastry wheel into 15 strips. Gently twist the strips 2 or 3 times, beginning with the longest ones, and place them on top of the pie, working outward and in various angles. Gently fold the bottom crust up over the edge of the pie and flute the edges with your fingertips. With a pastry brush, gently brush the half-and-half over the entire top crust and edges and then sprinkle generously with sugar.
- Bake until apples are cooked, about 45 to 50 minutes. (You can check the apples with a fork to make sure they are tender). Remove to a rack to cool. Serve warm or at room temperature.
MAIDA HEATTER'S FREE-FORM APPLE PIE
This is a delicious apple pie that's a little different from the usual apple pie. Raisins, walnuts, and apricot preserves make this little number very tasty. I think the recipe came from BHG or LHJ.

- Combine flour, sugar, and salt in a bowl.
- Cut in butter until mixture resembles coarse crumbs.
- Add water and toss with a fork until pastry holds together.
- Shape pastry into a ball and flatten into a disk.
- Wrap and refrigerate 1 hour.
- Melt butter in a 12" skillet over medium heat.
- Increase heat to high and add sugar and brandy.
- Stir in apples and cover and cook 3 minutes, stirring apples twice.
- Uncover and add raisins and cook apples, stirring until tender and liquid evaporates, about 6 minutes more.
- Cool apples completely.
- Stir in nuts.
- Heat oven to 425.
- Meanwhile, on a lightly floured surface, roll out pastry into a 14 inch circle.
- Transfer pastry to a large cookie sheet.
- Arrange apples on pastry, leaving a 2 to 2 1/2 inch border around the edge.
- Fold edge of pastry over apples.
- The pie shell should be about 9 inches in diameter.
- Bake 15 minutes.
- Reduce oven temperature to 400 and bake 30 minutes, until crust is golden brown.
- Melt preserves through a sieve into a cup.
- Drizzle over filling.
- Cool on cookie sheet.
- Transfer to serving platter when cool.

- In a small bowl, combine the first five ingredients. In a large bowl, toss apples with lemon juice. - Prepare your pie crust, dividing in two.
- Placing 1/2 of rolled pie crust in bottom of pan.

My Mother made this a lot in the fall. It always smelled so good baking. My family loves it. Before baking I mix up some cinnamon and sugar and sprinkle on top of bread.(quite a bit)

- Mix 1st 2 ingredients. Add eggs(I mix them slightly before adding)& milk. Mix dry ingredients together and combine with shortening mixture. Add apples.
- Put in 2 loaf pans that have been sprayed with cooking spray,or 6 mini pans . Bake 45 min for large loaves or about 30-35 min. with mini .When a toothpick inserted comes out clean they are ready.
- You can also make muffins: Fill greased muffin cups 2/3 full and bake 20-25 min.or until toothpick comes out clean.(PREHEAT OVEN BEFORE BAKING-350)

- Peel, core, and pare apples.
- Mix all dry ingredients.
- Spread 1/3 of apples, followed by 1/3 of sugar mixture into the bottom of prepared unbaked 9in pie crust, repeat twice.
