- Preheat oven to 350°. In a large bowl, combine the first 7 ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in an ungreased 15x10x1-in. baking pan., In a small bowl, combine remaining ingredients, stirring to dissolve sugar; remove 1/2 cup for sauce. - Preheat the oven to 350 degrees F.
- In a small bowl, stir together the oats and milk. Thinly slice 1/4 of the onion and set aside. Finely chop the remaining onion. In a large bowl, combine the turkey, oat mixture, chopped onion, bell pepper, eggs, Worcestershire sauce, ketchup, salt and a few grinds of pepper. Mix just until well combined.
- Transfer the mixture to a 9-by-13-inch baking dish and shape into a loaf about 5 inches wide and 2 1/2 inches high. Pour the tomato sauce over the meatloaf and sprinkle with the sliced onions. Bake for about 1 hour or until an instant-read thermometer registers 160 degrees.F.
- Remove from the oven and let rest for 10 to 15 minutes before slicing.

- Preheat oven to 400 degrees F (200 degrees C). Spray a 9x5-inch loaf pan with cooking spray.
- Heat olive oil in a skillet over medium heat; cook and stir green bell pepper and onion in the hot oil until onion is transparent and bell pepper is softened, 5 to 10 minutes. Add garlic and cook until fragrant, 1 to 2 minutes.
- Combine ground beef, bread crumbs, eggs, carrot, zucchini, salt, pepper, and bell pepper mixture in a large bowl; mix well using your hands. Press meat mixture into the prepared loaf pan.

- Preheat oven to 350 degrees Fahrenheit
- Combine the milk and crushed saltine crackers in a small bowl. Allow to soak for about 5 minutes or until the crackers are soft. Whisk in the egg, salt, sage, dill, and pepper.
- Place ground beef in a large bowl and add in onion and milk mixture. Gently mix until just combined.
- Line a baking sheet with parchment paper or aluminum foil and shape meat into a loaf shape. Dip fingers in water and smooth out the cracks with your if needed.

- Preheat oven to 375 degrees
- In a small bowl mix together 1/4 cup of the ketchup and 1 tablespoon Worcestershire sauce, mix together and set aside for later basting.
- Throw 1 pound of ground beef 80/20 fat content into a big bowl. Break up into chunks and salt and pepper. Just give the salt shaker a couple of good shakes, and a little more with the pepper. If you like garlic shake in a bit of garlic powder, NOT garlic salt.
- Dice up ½ a medium onion and toss into the bowl.
- Squirt in ketchup, probably about ¼ cup to start.
- Shake in Worcestershire sauce until it just smells right, about 1 tablespoon. It's a personal preference with the amount. If you really have no idea how much to use then give the bottle a couple of good shakes to start.
- In a small bowl, lightly beat two eggs and mix into the ground beef mixture
- Pour in a ½ cup of plain bread crumbs.
- Use a wooden spoon to get everything mixed up nicely. Compress into a big ball.
- Line a baking sheet with parchment paper and plop the meatloaf onto the lined baking sheet and mold the meatloaf into a rectangle.
- Put the meatloaf into the oven and bake for about 15 minutes then baste with the ketchup Worcestershire sauce. Continue cooking for a total of 60 minutes. Use a thermometer to check the internal temperature reaches 165 degrees to ensure it's fully cooked.
- I like a little crispy to the sides so I broil at the end for a couple of minutes. Watch it so you don't burn the top.

MEDITERRANEAN-STYLE MEATLOAF
You'll never have dense, dry, tasteless meatloaf again! The leftovers from this recipe are fantastic in sandwiches or over pasta. You can use jarred roasted red bell peppers or even pimentos in the filling and sauce. Polenta, rice, or mashed potatoes make great sides.

- Preheat the oven to 350°. Add all ingredients for the meatloaf to a large mixing bowl (with the exception of the coatings). I usually add 2 large pinches of salt and several grinds of black pepper, but you can adjust that to your own taste. Work the ingredients through the meat mixture just enough to incorporate (it doesn't matter if ingredients aren't distributed uniformly. Check the consistency of your mixture: you want to be able to form it into a loaf without having it fall apart, but you don't want it to be too dry. If the mixture is too wet and falling apart, add an additional 1/4 cup of breadcrumbs. If the mixture is too dry, add another tbsp. of tomato sauce (more if needed).
- Line a baking sheet with aluminum foil. Set a baking rack onto the foil and coat generously with cooking spray. Form the meat mixture into a loaf, making sure that it's roughly the same thickness throughout for even cooking. Rub on the tomato sauce and sprinkle with Romano cheese. Sprinkle lightly with salt and fresh-ground pepper.
- Tent some aluminum foil over the meatloaf: I sometimes lay 2 pieces of foil over each other and fold one side of the long ends over several times. This is the "spine" of the tent. The foil doesn't need to cover the meatloaf tightly: just tuck the open ends down toward the baking rack. Place the meatloaf in the oven.
- Meanwhile, make the sauce. Heat the olive oil in a skillet over medium-high heat. Add the peppers, onions, and garlic. Sauté until soft and translucent, 6-8 minutes. Add the crushed tomatoes and tomato sauce, stir to combine. Sprinkle with the vinegar and sugar or Splenda; stir. Bring almost to a boil, then reduce heat to a low simmer. Stir occasionally to prevent scorching. Simmer for 45 minutes.
- Check the meatloaf after an hour with an instant-read thermometer: the meatloaf needs to be 160° throughout. Remove the foil. At this point, you can spoon some of the sauce on top of the meat loaf if you'd like. Continue baking as needed.
- Remove the meatloaf from the oven and rest for 10 minutes. Slice thickly and serve with the sauce. Enjoy!

- Preheat the oven to 350 degrees F.
- Pulse the celery, carrots and onions in a food processor until finely chopped. Add the oil to a saute pan over medium-low heat, then add the chopped veggies and cook, covered, until translucent. Transfer the veggies to a plate and cool in the refrigerator.

- Some cooks put all ingredients into a loaf pan "raw", but I prefer to sauté the onions first to take the "bite" out of them.
- Drain and set aside to cool.
