SLOW COOKER POOR MAN'S STEW
A budget friendly meal that costs less than $2 per serving! This recipe is Whole30 and Paleo compatible, and you can make it in the Slow Cooker, Instant Pot, OR Dutch Oven!

- Heat a medium sized skillet over medium heat. Add the beef to the skillet, using a spatula to turn the meat and break it apart as it cooks. Transfer the cooked meat to the slow cooker.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your slow cooker and use a large spoon to mix everything together. Cover and cook on low heat for 4-5 hours or high heat for 2-3 hours. If using frozen peas, add them in the last 30-45 minutes so that they cook through but aren't mushy. Test to make sure the vegetables are cooked through and tender, then season to taste with salt and pepper and serve.
- Set your Instant Pot to Sauté mode. Add the beef and cook for about 5 minutes, breaking it apart and turning with a spatula as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your Instant Pot. Cover and turn to High Pressure for 15 minutes. Allow for a Natural Pressure Release (do nothing and allow the pressure to naturally dissipate) for at least 10 minutes, then turn the steam release valve. Carefully open the Instant Pot.
- If using frozen peas, stir them into the stew now. Set the Instant Pot back to Saute mode and cook together, stirring occasionally, for about 10 minutes.
- Season to taste with salt and pepper and serve.
- Place your dutch oven on the stovestop and turn the heat on the burner to medium. Add the ground beef. Cook for about 5-6 minutes, using a spatula to turn the meat and break the pieces apart as it cooks.
- Dice the carrots, onion, and potatoes. Mince the garlic.
- Add all the recipe ingredients (except peas, if using) to your dutch oven. Stir together. Bring to boil, then lower the heat, cover, and simmer for about 45 minutes, opening and stirring occasionally.
- If using frozen peas, stir them into the stew the last 10-15 minutes.
- Season to taste with salt and pepper and serve.

MOM-MOM'S HAMBURGER STEW
This is a very tasty and inexpensive meal. Mom always served it with mashed potatoes & corn. As a kid, I would make a mess on my plate of the hamburger stuff, mashed potatoes & corn, all mixed together. (I still do! lol) This is HFCS-Free.

- 1. In a large skillet, saute onions & peppers until onions are translucent. Brown the ground beef. Season with salt, pepper & garlic powder.
- 2. Add some water & bullion to make gravy in the pan. Simmer 20 minutes on low, or until bubbly. Ladle out some of the broth into a cup & dissolve 2 Tablespoons of cornstarch into it. Add to beef mixture. Stir & simmer until thickened.
- 3. To serve: Place a heaping ladle of the Hamburger Stew on top of mashed potatoes. Add corn on the side.

- 2. Add the veggies and allow to cook in the burger/onion mix for about 5-10 minutes.

- 2. add the beef broth, chopped onion, carrots, potatoes, and tomato paste.

- Cut the roast into chunks, about 1 inch (or larger if that is your preference). Heat oil in bottom of pressure cooker until hot and add the meat all at once (do not turn for at least 1 minute - you really want to let the meat sear - this gives the stew such yummy flavor.
- Stir the meat, letting it brown on all sides. Add the chopped garlic, stir for 1 minute, then add the onions, carrots, celery, potatoes, salt, pepper, parsley, water and optional beef bouillon(the bouillon gives a stronger flavor - you can also wait to see how it comes out, and if you feel that it's not flavorful enough, you can add the beef bouillon and boil the stew for a minute or so).
- Lock the pressure cooker lid in place and bring to high pressure over high heat.
- Cook 15 minutes.
- Cool pot immediately and serve. ENJOY!
- Optional ingredients - you can add some chopped tomatoes if you'd like before cooking, or after bringing it to pressure, you can throw in some canned mushrooms or frozen peas and heat thoroughly.

- In a Dutch oven or heavy stockpot over medium heat brown the ground beef. When it is about halfway through the browning process add the onion and cook until the onion is soft and the ground beef is browned; approximately 5-6 minutes. Drain any excess grease.
- Reduce heat to low. Add garlic, oregano, parsley, rosemary, and thyme; cooking for 1 minute stirring constantly. Add the potatoes, carrots, and fire roasted tomatoes.
- In a bowl or large measuring cup whisk together the beef broth and tomato paste. Stir it into the pot. Simmer covered for 15 minutes.
- Add the peas and simmer covered until the potatoes and carrots are tender. Season with salt and pepper to taste.
