This recipe was given to me 41 years ago by my husband's grandmother.

2 cups raisins
2 cups water
½ cup packed brown sugar
2 tablespoons cornstarch
½ teaspoon ground cinnamon
¼ teaspoon salt
1 tablespoon distilled white vinegar
1 tablespoon butter
1 recipe pastry for a 9 inch double crust pie

Steps:

  • Combine raisins and water in a small saucepan. Boil 5 minutes. Blend brown sugar, cornstarch, cinnamon, and salt together; add to hot raisins. Cook and stir until syrup is clear. Remove from heat, and stir in vinegar and butter or margarine. Cool slightly.
  • Turn filling into a pastry lined pan. Cover with top crust. Seal edges, and cut slits in the top crust.
  • Bake at 425 degrees F (220 degrees C) for 30 to 35 minutes.

3/4 cup shortening
1 cup packed brown sugar
1/4 cup molasses
2 eggs
2-1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon ground ginger
1 teaspoon ground cinnamon
1/2 teaspoon salt
1/2 teaspoon ground cloves
1/2 cup raisins
1/2 cup chopped walnuts

Steps:

  • In a large bowl, cream shortening and brown sugar. Beat in molasses. Add eggs, one at a time, beating well after each addition. Combine the flour, baking soda, ginger, cinnamon, salt and cloves; gradually add to creamed mixture. Stir in raisins and nuts., Drop by rounded tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 375° for 8-10 minutes or until edges are lightly browned. Remove to wire racks to cool.

2-1/2 tablespoons all-purpose flour
1-1/2 cups cold water
2 cups raisins
1/2 teaspoon salt
1/2 teaspoon ground cinnamon

Pastry for double-crust pie (9 inches)

Steps:

  • Preheat oven to 375°. In a saucepan, stir together sugar and flour. Add water and mix well. Stir in raisins, salt and cinnamon; cook and stir over medium heat until bubbly. Cook and stir 1 minute more. Remove from heat and stir in butter. Pour into a pastry-lined 9-inch pie plate. Top with lattice crust, or cover with top crust and cut slits for steam to escape. Bake until crust is golden brown, about 45 minutes.

1 recipe pastry for a 9 inch double crust pie
⅓ cup lemon juice
1 teaspoon grated lemon zest
½ cup orange juice
2 teaspoons grated orange zest
1 ¼ cups water
1 cup brown sugar
2 cups raisins
¾ cup all-purpose flour
½ cup water

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • In a medium saucepan, mix together lemon juice, lemon rind, orange juice, orange rind, 1 1/4 cup water, sugar, and raisins. Bring to a boil over low heat, stirring occasionally.
  • In a small bowl, mix flour and 1/2 cup water to a smooth paste. Slowly stir into raisin mixture. Cook an additional 5 minutes, stirring constantly. Pour mixture into pastry-lined pan. Cover with top crust. Seal edges and cut steam vents in top.

1 cup dried currant, soaked in boiling water for 1 hour and then drained
1 tablespoon butter

1/2 cup shortening
1-1/4 cups sugar
2 large eggs, room temperature
1/2 cup molasses
2 cups quick-cooking oats
1-3/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Place raisins in a bowl. Cover with boiling water; let stand for 5 minutes. Drain and set aside. , Meanwhile, in a large bowl, cream shortening and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses. Combine the oats, flour, baking soda, salt and cinnamon; gradually add to the creamed mixture and mix well. A golden oldie raisin pie recipe from about 1960 or earlier. I remember adding the beaten egg white tip to brush the bottom of the pie shell, to keep it from getting soggy, a few years later. Decorating the pie on top with the leftover pastry cut outs was also an addition in later years. Serve the pie warm if you like your pie runny and juicy. Times given are approximate.

1 pinch salt
1 pastry for a double-crust 9-inch pie
1 egg white, beaten

Steps:

  • Wash raisins in cool water and drain. Place raisins and boiling water in a saucepan and cook until raisins plump.
  • Blend brown sugar with flour and add to the raisin mixture. Cook over low heat until thickened, stirring frequently. Remove from heat.
  • Add lemon rind, lemon juice and pinch of salt. Cool. Stir.

You can also buy a ham steak, cook it however you like, and then serve this sauce ladled over the top of each portion. This version does not contain vinegar or mustard, but is instead molasses based. This is rather sweet. Servings are just an estimate.

1 tablespoon granulated sugar
4 teaspoons all-purpose flour
1 cup water
1/2 cup seedless raisin (I like golden raisins)
3 tablespoons molasses (such as Brer Rabbit)

1 pinch salt, to taste
1 tablespoon unsalted butter

Steps:

  • Mix sugar and flour together in a small saucepan (no heat yet).
  • Gradually whisk in the water until blended.

1/2 cup water
1 tablespoon lemon juice
1/2 teaspoon salt
6 apples, peeled and sliced
1/4 cup of melted butter
1/4 cup flour
2 cups all-purpose flour
1 teaspoon salt
2/3 cup shortening
5 -7 tablespoons cold water

Steps:

  • Mix the molasses, water, lemon juice and salt in a saucepan.
  • Bring to a boil.
  • Add the sliced apples and simmer until the apples are tender.
  • remove the apples from the syrup.
  • Melt the butter in a saucepan, and blend in the flour.
  • Pour this into the hot syrup and simmer, stirring constantly until the syrup is smooth and thick.
  • Fold the apples into the syrup.
  • Preheat the oven to 425 degrees F.
  • Make Pastry for 2 crust 9 inch pie by mixing shortening, salt, and flour with a fork until crumbly.
  • Add 5 tablespoons water and mix well, adding more water if too dry.
  • Form into a ball.
  • Roll out half of it and line the pie pan, letting it hang over the edge about 1 inch.
  • Fold the extra pastry over toward the middle and flute the edges with your fingers for a built up rim.
  • Roll out the rest of the pastry, and cut into narrow strips for a lattice top.
  • Spoon the apple syrup mixture into the pastry lined pan.
  • Arrange 7 or 8 strips over the top.
  • trim the ends, moisten, and press into the rim.
  • Lay more strips over them.
  • leaving a diamond shaped spaces, and trimming, moistening and pressing into the edge like the first ones.
  • Bake the pie at 425 degrees for 30 minutes.

Shoofly pie is often thought of as the cake baked in a pie shell, or so wrote Jean Hewitt, The New York Times food writer who offered this recipe in the paper in 1965. This pie was served at a Pennsylvania Dutch luncheon hosted by the International Cuisine Group of the College Woman's Club of Westfield, N.J., in the spring of that year. One of the organizers dug up the recipe from her mother's "Housekeeper's Scrap Book, 1896." There were four versions of the pie in the book; this was the one marked: "We like this one better."
