Steps:
- 10 to 12 small plastic cups or shot glasses
- Bruise the mint leaves in the bottom of a cocktail shaker. Add the lime juice, pineapple juice and shake the 2 together. In a medium bowl combine the lime and pineapple gelatins, and the sugar. Stir in the boiling water and whisk until the sugar dissolves. Stir in the rum and pour into the plastic shot glasses. Refrigerate until set, about 3 hours. Enjoy!

- In a cocktail shaker, crush the mint to release the oil.
- Add the rum, sugar and lemon juice and shake thoroughly.
- Mix with the water, strain and mix in jello till well dissolved, pour in 2 oz shot glasses 3/4 the way up and refrigerate till set.
MARGARITA JELL-O® SHOTS
I had to make hundreds of Jell-O® shots for a wedding, so I decided to have fun with them and try out some new mixes. This was my margarita-flavored shot, a bit strong but good if you want variety with your selection. If you want them more palatable, substitute water for a bit of the alcohol.

Great to bring to a party! Bring different colors to match themed events. These are so much better than most of the ones you get at bars. You will need to find the 2oz. plastic cups and lids from your local restaurant supply store.

- Boil cup of water.
- Empty jello powder into a large mixing bowl and add the boiling water.
- Continue stirring for two minutes or until the jello is completely dissolved.
- Add in the 1/2 cup of cold water and 1/2 cup of vodka.

- Pour 1/4 to 1/2 inch of sugar onto a small, shallow plate. Run one of the lime quarters around the rim of each cocktail glass, then dip the glasses into the sugar to rim; set aside.
- Squeeze all of the lime quarters into a sturdy glass pitcher. Toss the juiced limes into the pitcher along with the mint, strawberries, and 1 cup of sugar. Crush the fruits together with a muddler to release the juices from the strawberries and the oil from the mint leaves. Stir in the rum and club soda until the sugar has dissolved. Pour into the sugared glasses over ice cubes to serve.

- In a blender or food processor, puree enough watermelon to get 1 cup of juice. (The water content is so high in watermelon it's very easy to get that much juice) I used half of a small watermelon. Strain the watermelon puree so you get out all the seeds. Pour the watermelon juice in a saucepan (no heat yet). Sprinkle on two packets of Knox gelatin. Let it sit for a few minutes then whisk it until it's combined. Turn on the stove-top to medium heat. Add 4 tablespoons of sugar and whisk until combined. When simmering add one cup cold water. Pour your watermelon mixture into a 9×13 pan that has been lightly (very lightly) greased. Refrigerate until firm (2 hours or so). Chop some fresh mint leaves. Pour 1 cup water into a saucepan (no heat yet) Sprinkle on two packets of Knox gelatin. Let it sit for a few minutes then whisk it until it's combined. Turn on the stove-top to medium heat. Add 4 tablespoons of sugar and whisk until combined. When simmering add one cup cold white rum. Add your chopped mint into your rum mixture then pour into your 9×13 pan. Refrigerate until firm (2 hours or so). With a cookie cutter of choice (I started with a square as you can see, but then decided on the triangle) slowly cut out your jello shots. Press down slowly and make sure you don't have any mint leaves caught on the cutter when you move on to the next.

BASE JELLO SHOTS RECIPE WITH FRUIT FLOATERS
This is a base recipe so you can work with what jello and/or liquor you already have in your bar. Usually it's best to model the shot after an already existing drink, or to use plain vodka or light rum with a fruit flavor and using the same type of fruit as a floater. Cooking time is chill time.

- To make this easier, you may want to have a two quart pitcher with a handle and a pour spout to mix it with and then to pour it into the shot cups.
- First boil the water and then put it in the pitcher. Then add the package of gelatin. Stir, or shake, if your container has a tight fitting lid, to dissolve.
- Add cold water or equivalent amount of ice, fruit juice, and then liquor. Definitely use ice instead of the cold water if you are having the party in less than 4 hours because it will solidify faster. Taste to ensure there is enough liquor and consider adding more. If you use a citrus juice then you can add more liquor. Do NOT use pineapple juice, it will interfere with the gelatin setting.
- Pour the mixture into 3 oz Dixie cups, filling 2/3 full (after all, you want enough of these to go around). I normally lay down a sheet of wax paper, and then pour the cups and place them on a cookie sheet. If you do two batches you can place the cookie sheets on top of each other in the fridge.
- Drop small fruit slices or an individual berry into each shot cup for a classy touch. Then chill for at least 3 hours.
- To bring them to your friend's party, find a cardboard box. Fill the bottom layer with shots. Lay another piece of cardboard on top of that layer and fill that layer with shots, and so on. They should make the journey with no problems.

- Mix the jello mix with two cups (16 ounces) of boiling water until the powder is fully dissolved and add then add the two cups (16 ounces) of Blackberry Brandy.

- In a small saucepan, cook the water with the sugar over moderate heat until the water is simmering and the sugar dissolves, about 4 minutes. Sprinkle the gelatin over the sugar syrup and whisk constantly over low heat until the gelatin has dissolved, about 1 minute.

- In a pot, combine the water and sugar over medium heat and stir until the sugar dissolves. Remove from heat and stir in the gelatin. Add the lime juice and 2 mint stems (with leaves). Allow that to steep for 12-15 minutes. Remove the mint stems and stir in the rum if using.
- In the meantime hollow out your lime shells. This is probably the hardest part of making these. I used a small sharp knife to carve around the inside of the limes and then a mellon baller to scoop out the centers. If the insides don’t look perfect don’t worry! Mine looked far from perfect. Be sure to leave the limes cut in halves until after the jello has set, then you can slice them into wedges.
- Fill each lime shell with the jello mixture and sprinkle in some chopped fresh mint (from the remaining leaves on that 3rd stem). Place in the refrigerator and allow to set for at least 3 hours.
