1/4 teaspoon cardamom seeds, or 4 pods, smashed
1 cinnamon stick
2 tablespoons sugar
2 bags black tea, such as English breakfast
12 sprigs fresh mint
1 tablespoon fresh lemon juice
6 ounces light rum
Sparkling water, for topping

Steps:

  • Combine the cardamom, cinnamon and 3 cups water in a medium saucepan and bring to a bare simmer. Remove from the heat, stir in the sugar, and add the tea bags and 4 sprigs of the mint. Let steep for 6 minutes, then remove the tea bags. Let the tea cool to room temperature. Transfer to the refrigerator to chill. Strain the tea into a measuring cup, discarding the solids. Stir in the lemon juice.
  • Tear the remaining 8 sprigs mint and divide them evenly among 4 rocks glasses. Gently muddle the mint with the back of a spoon. Fill the glasses with ice, then divide the chilled tea evenly among the glasses. Add a shot (1 1/2 ounces) of rum to each glass and top off with a splash of sparkling water. Stir and serve.

Oolong tea scented with osmanthus flowers, or with a sliced peach and its pit, suggests the sweet aroma of white rum. Fresh mint, lime and lemon balm are added and it sits for at least 4 hours or overnight. Sweeten with sugar and serve over ice.

2 limes
3 to 4 tablespoons loose-leaf green oolong tea, preferably scented with osmanthus

1 peach, sliced, with pit optional; use with unscented tea
Sugar to taste

Steps:

  • Place 6 cups water, mint sprigs, slices of 1 lime, tea, lemon balm and peach with pit, if using, in a large bowl or pitcher. Let rest for at least 4 hours or preferably overnight. Strain into a clean pitcher and sweeten with sugar to taste. Stir in ice and serve garnished with mint sprigs and lime slices.

  • Steep 4 or 5 black tea bags, 2 cups turbinado sugar and 2 handfuls of fresh mint in 3 cups simmering water for 5 minutes, stirring to dissolve the sugar. Strain into a pitcher; add the juice of 3 limes, 1 1/2 cups light rum, 1 cup cold water and another handful of mint. Stir vigorously, crushing the mint with a wooden spoon; chill. Serve over ice with lime and more mint.

This is an authentic recipe for mojito. I sized the recipe for one serving, but you can adjust it accordingly and make a pitcher full. It's a very refreshing drink for hot summer days. Be careful when drinking it, however. If you make a pitcher you might be tempted to drink the whole thing yourself, and you just might find yourself talking Spanish in no time! Tonic water can be substituted instead of the soda water but the taste is different and somewhat bitter.

½ lime, cut into 4 wedges
2 tablespoons white sugar, or to taste
1 cup ice cubes
1 ½ fluid ounces white rum
½ cup club soda

Steps:

  • Place mint leaves and 1 lime wedge into a sturdy glass. Use a muddler to crush the mint and lime to release the mint oils and lime juice. Add 2 more lime wedges and the sugar, and muddle again to release the lime juice. Do not strain the mixture. Fill the glass almost to the top with ice. Pour the rum over the ice, and fill the glass with carbonated water. Stir, taste, and add more sugar if desired. Garnish with the remaining lime wedge.

  • Place tea bags and mint sprigs in a large heat-proof measuring cup. Pour boiling water over tea bag mixture and cover measuring cup with a small plate. We've all heard of the health benefits of green tea these day, haven't we? Yes we have...thus I will dare to rationalize my little cocktail as being healthy in my mind! LOL. The flavor of the green tea is apt to get lost with the strong flavors of the rum and lime so resist the urge to add more of these ingredients. I recommend Tazo Zen Green tea blend as I think it has enough umph to stand on its own here. Original idea came from the Mellow Monk. Adapted to suit my tastes.
