THE BEST BROWNIES AKA CHOCOLATE CHEWY WONDERS

The Best Brownies AKA Chocolate Chewy Wonders image

The Best Chewy Brownies Recipe AKA Chocolate Chewy Wonders. These are for the people that love fudgey brownies!

Provided by Karlynn Johnston

Categories     Dessert

Time 30m

Number Of Ingredients 7

3/4 cup of butter
1 1/2 cups of white sugar
3/4 cup of cocoa
3 eggs
1 teaspoon vanilla
1 cup of chocolate chips or chocolate chunks
3/4 cup of flour

Steps:

  • Kick the tires and light the fires and preheat your oven to 350 degrees.
  • Melt the butter in a pot, remove from the heat and stir in the white sugar.
  • Once that is combined, mix in your cocoa.
  • Add in your eggs then add in the vanilla. If you are using chocolate chips instead of chocolate chunks, you can mix in the 2/3 of a cup after the eggs are thoroughly combined into the mix.
  • Once all that is mixed very, very well, add in your flour and barely stir it in. Just barely. I read somewhere that stirring the flour mixture creates gluten, which in turn creates the cakey texture I don't like for brownies. So in theory, the less you stir, the less gluten and then chewy brownies here we come!
  • Line a 9x9 pan with parchment paper.
  • I used chocolate chunks, which I placed on top of the batter. They are so heavy that they sink right into it. Bake at 350 degrees for 30-40 minutes, until the brownies pull away from the edges slightly. This is why I use the chunks, they sink in right to the top level of the brownies. Cool the brownies.

CHEWY CHOCOLATE BROWNIES

Chewy Chocolate Brownies image

Chocolate brownies which have a gooey, chewy texture in the middle with a slight crunch on top.

Provided by elliejewkes

Time 1h15m

Yield Serves 12

Number Of Ingredients 10

400g caster sugar
225g butter
60g hot chocolate, or cocoa
1 teaspoon vanilla extract
3 eggs
100g dark chocolate
180g milk chocolate
50g white chocolate
125g plain flour
1/2 teaspoon baking powder

Steps:

  • Turn on the oven to 180 degrees and butter the tin you're using, then cover with greaseproof paper. The best tin for this would be a thinner, wider version of a loaf tin (a brownie tin).
  • Melt the butter. You can either do this in a pan over the stove, or in a microwave. If you're using a microwave, place the butter in a microwavable dish and microwave for about 40 seconds. Then add the caster sugar, mix well. Sieve the hot chocolate (or cocoa powder) over the mixture, and stir in.
  • Next, add the vanilla extract and 3 eggs. For best results at this stage, use a whisk as this will combine the eggs and previous mixture faster than using a wooden spoon or similar.
  • Place the dark chocolate and milk chocolate into a suitable heatproof bowl, and place over a pan of simmering water. Stir the chocolate to allow it to melt, whilst ensuring that none of the water enters the bowl. When all of the chocolate is melted, carefully take out the bowl and leave to cool for a few minutes. When the bowl is at a temperature appropriate for holding, pour the chocolate into the mixture.
  • Following this, sieve the plain flour over the mixture along with the baking powder and fold in carefully. Cut the white chocolate into little cubes and add to the mixture, still folding it in as otherwise the air in the mixture will be lost.
  • Once all of the ingredients are in the mixture, pour it into the tin. Cook at 180 degrees for about 40 minutes. To check whether it's cooked, take a spoon or fork, hold the part you usually put in your mouth and put the other end into the brownie. If this comes out clean, the brownie is done - if not place the brownie back in the oven and cook for another 15 minutes.

CANDY BAR CHOCOLATE BROWNIES

Candy Bar Chocolate Brownies image

Rich, decadent, moist and chewy with chunks of candy bars melted in, you couldn't ask a brownie for more. One of the best parts about them is that you can do them in one bowl, so cleanup's a breeze. The one thing you have to remember is to put the candy bars in the fridge before you got to chop them up or you'll get mush instead of chunks.

Time 40m

Yield about 16 brownies

Number Of Ingredients 10

1 1/2 sticks (12 tablespoons) butter, melted, plus a little more for greasing the pan
1 1/2 cups sugar
2 large eggs
2 tablespoons water
1/2 teaspoon vanilla extract
1/2 teaspoon salt
1/2 teaspoon baking powder
3/4 cups unsweetened cocoa powder
1/2 cup all-purpose flour
10 mini chocolate-peanut candy bars, crumbled (about 1 1/2 cups), refrigerator cold (recommended - Snickers fun size)

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a 9 by 13-inch cake pan (aluminum is fine) with butter. Beat the 1 1/2 sticks butter and the sugar together in a large bowl until blended. Beat in the eggs 1 at a time, then stir in water and vanilla. Sprinkle the salt and baking powder over the mixture, then mix in. Do the same with the cocoa. Finally, stir in the flour until just blended.
  • Put the candy bars in a food processor or blender and pulse on low speed until all the bars have been reduced to a coarse crumble. Fold the crumble into the batter thoroughly. Scrape the batter into the prepared pan. Bake for about 30 minutes, until the center is set, the edges look a bit crusty, and the top of the brownies start to crack a little. Cool completely before cutting into squares.

MOIST AND CHEWY BROWNIES

Moist and Chewy Brownies image

This easy brownie recipe makes moist and chewy brownies that are pretty hard to resist. It's actually the first brownie recipe that I ever made from scratch! Even after all these years, I still come back to this simple recipe.

Provided by Lindsay

Categories     Dessert

Time 1h

Number Of Ingredients 9

4 eggs
1 1/4 cups cocoa
1 tsp baking powder
1 tsp espresso powder
1 tbsp vanilla
1 cup unsalted butter
2 1/4 cups sugar
2 cups chocolate chips
1 1/2 cups flour

Steps:

  • 1. Preheat oven to 350 degrees. Grease a 9×13 pan.
  • 2. Beat together eggs, cocoa, baking powder, espresso powder and vanilla until smooth.
  • 3. Melt the butter in the microwave in a small microwave-safe bowl.
  • 4. Add the sugar to the melted butter and combine. Microwave mixture in about 10-15 second increments, mixing each time, until the mixture is hot (about 110-120 degrees), but not bubbly. It should take on a shiny look when it's ready. Heating this mixture will dissolve more of the sugar and give a shiny crust on top of the brownies. You could also do this step in a saucepan over low heat.
  • 5. Add the butter mixture to the eggs mixture and mix until smooth
  • 6. Microwave the chocolate chips in about 20 second increments until fairly soft, but not totally melted.
  • NOTE: If you want them to be completely incorporated, melt them completely. If you want them to be chunks in the brownies, do not microwave them.
  • 7. Add flour and chocolate chips to batter and mix until smooth.
  • 8. Pour batter into pan and bake for about 30 minutes, or until toothpick comes out with just a few moist crumbs.
  • 9. When done, remove from oven and allow to cool.

CHEWY FUDGY HOMEMADE BROWNIES

Chewy Fudgy Homemade Brownies image

Chewy fudgy homemade brownies made completely from scratch. Try them with chocolate frosting and sprinkles on top! You will never make a box mix again, trust me.

Provided by Sally

Categories     Brownies

Time 2h

Number Of Ingredients 11

1/2 cup (115g) salted or unsalted butter*
two 4-ounce (226g) semi-sweet chocolate bars, coarsely chopped*
3/4 cup (150g) granulated sugar
1/4 cup (50g) packed light or dark brown sugar
3 large eggs
1 teaspoon pure vanilla extract
1/2 cup + 2 Tablespoons (79g) all-purpose flour (spoon & leveled)
2 Tablespoons (10g) unsweetened natural or dutch-process cocoa powder
1/4 teaspoon salt
1 cup (180g) semi-sweet chocolate chips
optional: chocolate buttercream

Steps:

  • Melt the butter and chopped chocolate in a medium saucepan on medium heat, stirring constantly. Or melt in a large microwave safe bowl in 20 second increments, stirring after each. Remove from the heat, pour in a large mixing bowl, then allow to slightly cool for 10 minutes.
  • Adjust the oven rack to the lower third position and preheat oven to 350°F (177°C). Line the bottom and sides of a 9×9 inch square baking pan* with aluminum foil or parchment, leaving an overhang on all sides. Set aside.
  • Whisk the granulated and brown sugars into the cooled chocolate/butter mixture. Add the eggs, one at a time, whisking until smooth after each addition. Whisk in the vanilla. Gently whisk in the flour, cocoa powder, and salt. Once combined, fold in the chocolate chips.
  • Pour/spoon batter into the prepared baking pan and bake for 35-36 minutes or until the brownies begin to pull away from the edges of the pan. A toothpick inserted in the center should come out with only a few moist crumbs when the brownies are done. All ovens are different, so keep an eye on them after 30 minutes and use the toothpick test to see when yours are finished.
  • Allow the brownies to cool completely in the pan set on a wire rack. Once cooled, lift the foil out of the pan using the overhang on the sides. Frost with chocolate buttercream, if desired. Cut into squares. For neat squares, I use a very sharp knife and wipe it clean with a paper towel after each cut.
  • Unfrosted brownies stay fresh in an airtight container at room temperature for 1 week. Frosted brownies stay fresh in an airtight container at room temperature for 2 days or in the refrigerator for up to 1 week.

These fudgy homemade brownies check all the boxes: they have rich chocolate flavor, perfect chewy texture, and they're quick and easy to make from scratch!

Provided by Allison Ferraro

Categories     Dessert

Time 1h10m

Number Of Ingredients 9

1 cup unsalted butter
7 ounces bittersweet or semisweet chocolate baking bar, (finely chopped)
2 Tablespoons unsweetened natural cocoa powder, (sifted)
1 Tablespoon vanilla extract
1 cup all-purpose flour
1 Tablespoon cornstarch
1 teaspoon kosher salt
3 large eggs, (room temperature)
1 1/2 cups granulated sugar

Steps:

  • Preheat oven to 325°F. Line an 8x8 metal pan with parchment paper and set aside.
  • Add butter to a heatproof, medium bowl and melt the butter in the microwave. Immediately add the chopped chocolate, cocoa powder, and vanilla to the melted butter and stir until the chocolate is completely melted and the mixture is smooth and shiny. Set the chocolate mixture aside to cool slightly while you move on to the next step.
  • In a small bowl, whisk together flour, cornstarch, and salt. Set aside.
  • In a the bowl of a stand mixer using the whisk attachment (or in a large bowl using a handheld electric mixer), beat together eggs and sugar on medium-high speed until the mixture is light, fluffy, and pale yellow, about 2 minutes.
  • With the mixer running on medium speed, slowly pour the slightly cooled chocolate mixture into the egg mixture. Continue to beat the mixture on medium speed until well combined, about 30 seconds.
  • Remove the bowl from the stand mixer (if using) and add the flour mixture. Using a rubber spatula or wooden spoon, gently fold the flour mixture into the batter. Continue to fold until all flour is combined, being careful not to over mix the batter.
  • Pour the batter into the prepared pan and use the spatula or spoon to gently smooth the top of the batter.
  • Bake the brownies for 50 minutes or until they have risen and a paper-thin crust has formed atop the brownies. The brownies are finished baking when a toothpick inserted into the center of the pan comes out clean or with just a few moist crumbs.
  • Place the pan on a wire rack and allow the brownies to cool completely in the pan before slicing and serving.

EASY CHEWY HOMEMADE BROWNIES RECIPE

Easy Chewy Homemade Brownies Recipe image

These from-scratch brownies are chewy, moist and fudgy - truly the best ever. They're made with cocoa powder for that perfect rich chocolate flavour similar to an Oreo.

Provided by Jennifer Pallian BSc, RD

Time 40m

Number Of Ingredients 7

½ cup butter (melted)
¾ cup unsweetened cocoa
1 ¼ cup granulated sugar
¼ tsp salt
2 eggs
1 tsp vanilla extract
½ cup all purpose flour

Steps:

  • Preheat oven to 325 degrees. Line an 8x8-inch square baking dish with parchment paper, leaving a 1-inch overhang, or grease well and coat with flour. Set aside.
  • Melt butter in a large microwave-safe bowl or measuring cup. (Alternatively, melt butter in a large saucepan on the stove, then turn off heat and proceed.) Add cocoa powder and stir with a wooden spoon until smooth. Stir in sugar, salt, eggs and vanilla extract. Add flour and stir until well combined.
  • Spread batter evenly into the prepared pan - you'll need to work at it, spreading it out with the back of a wooden spoon - the batter is very stiff. Bake for about 30 minutes, until edges are set and centre is firm but still just slightly underdone. A toothpick should come out with a few moist crumbs attached. Let cool 10 minutes at least before lifting out by parchment overhang to slice into 16 brownies.

FUDGY BROWNIES

Fudgy Brownies image

Baking these at 400°F results in brownies that are moist and fudgy on the inside with a delicate, thin crust on the outside.

Provided by Melissa Weller

Categories     Brownie     Chocolate     Dessert     Bake

Yield Makes 16

Number Of Ingredients 8

Nonstick cooking spray
4 ounces / 113 grams unsweetened chocolate
8 tablespoons (1 stick) / 113 grams unsalted butter, cubed
1 1⁄4 cups / 250 grams granulated sugar
1 teaspoon / 5 grams pure vanilla extract
1⁄2 teaspoon / 3 grams fine sea salt
2 eggs / 100 grams large eggs
1⁄2 cup / 60 grams all-purpose flour

Steps:

  • Get prepared
  • Arrange the oven racks so one is in the center position. Preheat the oven to 400°F.
  • Spray the bottom and sides of an 8-inch square baking pan with nonstick cooking spray. Cut a piece of parchment paper 8 inches wide and 15 to 16 inches long. Lay the paper in the pan so it travels up and over two of the sides. Spray the paper with nonstick cooking spray.
  • Make the batter
  • Pour 1 to 2 inches of water into the bottom of a small saucepan and choose a bowl that fits over the saucepan to make a double boiler. Make sure the water is not touching the bottom of the bowl; if it is, pour some water out. Bring the water to a boil over high heat, then reduce the heat to medium-low to maintain a gentle simmer.
  • Unless you are using chocolate chips, roughly chop the chocolate. Put the butter and chocolate into the bowl of the double boiler and melt them, using a heat-proof rubber spatula to stir and scrape down the sides of the bowl so the chocolate doesn't burn.
  • Remove the bowl from the double boiler and wipe the bottom of the bowl so no water drips. Add the sugar, vanilla, and salt and whisk them in. Add the eggs one at a time and whisk until the batter is shiny and smooth, 1 to 2 minutes. Add the flour and stir with a rubber spatula until no flour is visible.
  • Bake the brownies
  • Using a rubber spatula, transfer the batter to the prepared pan. Use the spatula to smooth out the top of the batter.
  • Place the brownies on the center rack of the oven and bake for 20 minutes, rotating the pan from front to back halfway through the baking. Remove the brownies from the oven and cool on a cooling rack. The tops will appear dry, but the insides will remain fudgy if you poke the center with a toothpick or cake tester. Holding the sides of the parchment paper, lift the brownies out of the pan and place them on a cutting board. Using a large knife, cut the brownies into 16 equal pieces.
  • Store the brownies in an airtight container at room temperature for up to 1 week or freeze for up to 3 months.

  • Adjust toaster oven or regular oven rack to middle position and preheat the oven to 350°F (177°C). Make foil sling for an 8-inch (20-cm) square baking pan by folding 2 long sheets of aluminum foil so each is 8 inches (20-cm) wide. Lay sheets of foil in the pan perpendicular to each other, with extra foil hanging over the edges of the pan. Push foil into corners and up sides of pan, smoothing foil flush to pan. Spray foil and uncovered pan corners well with the baking spray.
  • In a large bowl, whisk cocoa, espresso powder, if using, and boiling water together until smooth. Add the unsweetened chocolate and whisk until the chocolate is melted. Whisk in oil and melted butter. It’s ok if the mixture looks curdled at this point.
  • Whisk in sugar, egg and yolk, and vanilla until smooth. Add flour, bittersweet chocolate, and salt and mix with a rubber spatula until no dry flour remains.
  • Scrape batter into the prepared pan, smooth top, and bake, rotating the dish once, until toothpick inserted in center comes out with few moist crumbs attached, 25 to 35 minutes. Transfer pan to a wire rack and cool for 1 1/2 hours.
