KIDS' SUSHI
I've taken these fun mock sushi rolls to picnics and parties and served them at home with an Asian dinner. Kids always enjoy the bite-sized treats. -Lorri Reinhardt, Big Bend, Wisconsin

- Unroll the Fruit Roll-Ups, leaving paper attached. Cut licorice lengthwise into thin strips; set aside. In a large microwave-safe bowl, combine marshmallows and butter. Microwave, uncovered, on high for 2 minutes or until melted, stirring once a minute. Add cereal; stir to coat., Place about 1/2 cup cereal mixture on the edge of each roll-up; place licorice in the center of the mixture. Roll up sushi rolls to about 1-inch diameter. Discard paper. Trim edges of rolls; cut each into four pieces. Store in an airtight container.

MOCK SUKIYAKI

Steps:
- In skillet brown steak in 1 tbsp olive oil over a high heat, turning the meat so that it sears all sides; do it a little bit at a time so that the steak does not steam. Remove the meat as it cooks and place it in the lid of the frying pan(Why dirty another dish, when you will be using the lid eventually?). When all the meat has been cooked, add the onion and cook for 2 - 3 minutes, scraping up the brown bits. Then, add the meat back into the pan and add the broth, salt and soya sauce. Cover and simmer this for 10 - 12 minutes.
- Then add the vegetables (it doesn't matter if you have these exact vegetables, you can add whatever you have). Simmer until the vegetables are crisp-tender.
- Combine the water with the cornstarch and stir until it is all liquid. Stir this into the mixture and cook until it is thickened. Season with freshly ground pepper. Serve with "Easy Steamed Rice"
- Bring the water and salt to a rolling boil. Add the rice and stir it to prevent it from sticking to the bottom. Cook the rice in the boiling water for 10 minutes.
- Drain the rice into a strainer and then fill the bottom of the saucepan that you just used with about 2 - 3 inches of water. Place the strainer on the saucepan (ensure that the rice is not sitting in water. Cover the strainer and bring the water to a boil (steaming the rice). Cook for at least 20 minutes, but can continue to steam it until it is ready to be eaten. To increase the number of servings, just add more rice to the boiling water and follow the other steps.
- I will often cook some onions and mushrooms in a small frying pan and add them to to the cooked rice before serving. Sometimes I just add a tablespoon of butter to the rice and stir it in.
- If you would like to cook brown rice, increase the initial cook time in the water from 10 to 14 minutes and then steam it until it is tender.
- Cook the rice in chicken, beef or vegetable broth instead of water for the first 10 minutes and then steam over water as described above.
MOCK SUSHI- A CHILDRENS TREAT
This would make a great treat for children on April Fools day or any time for that matter. I got it from a Family Fun Magazine and love the simplicity of the recipe and how much fun the kids have with it.

Steps:
- Grease a 12x17" baking sheet.
- Melt butter in a 2 quart saucepan over medium heat.
- Add marshmallows and stir until smooth.
- Remove mixture from heat and stir in rice cereal until it is evenly coated.
- Turn the baking sheet so that the shorter ends are at the top and bottom.
- Then press the marshmallow mixture onto the sheet, distributing it evenly.
- Starting at one side an inch up from the lower edge, place gummy worms atop the mixture end to end in a horizontal line.
- Gently roll the lower edge of the marshmallow mixture over the gummy worms.
- Then stop and cut the log away from the rest of the mixture.
- Use the same method to form 4 more logs.
- Slice each log into 1 inch thick"sushi" rolls and wrap them individually with a strip of fruit roll-ups.

- Fruit Sushi: 3 tortilla rolls. 1 cup mango, chopped. 1 peach, cut into pieces. 1 apple, cut into pieces. 3 tablespoons of powdered sugar. 6 tablespoons of cream cheese.
- Veggie Sushi: 1 English cucumber. 1 carrot, peeled and shredded. ¼ cup of raisins. ½ cup of cream cheese. Chives. How To: Slice 8 long slices of cucumber using a peeler.
- Peanut Butter And Fruit Sushi: 4 slices of whole wheat bread. ½ cup of peanut butter. 1 apple, sliced into 1/4-inch strips. ¼ cup raisins. Juice of 1/2 lemon.
- Strawberry Sushi: Vanilla Cake. 2 cups of filling cream. ½ vanilla beanstalk. 1 cup of diced strawberries. How To: Cut the vanilla cake in half, long ways to get two rectangles.
- Coconut Sushi: 1 cup uncooked sushi rice. ¼ cup of sugar. ¼ cup of light coconut milk. 10 orange sections. 20 fresh raspberries. 1 carton vanilla yogurt.
- Peanut Butter Sushi: 1 soft wheat tortilla. 1 tablespoon of peanut butter. 1 tablespoon currants. Cinnamon. Honey. How To: Spread a layer of peanut butter over the tortilla, leaving ¼ inches gap at the edge.
- Carrot And Avocado Sushi: 1 ½ tablespoon of sushi rice. 2 tablespoon rice wine vinegar. 1 tablespoon caster sugar. 2 tablespoons of mayonnaise.
- Chocolate Sushi: 12 oz. chocolate. 2 oz. corn syrup. Sticky Rice. 1 cup rice. 2 cup apple juice. Seasonal fruits julienned. How To: Melt the chocolate in a double boiler and add corn syrup to it.
- Candy Sushi: 1 tablespoon of butter cut into pieces. 12 regular marshmallows. 2 cups of puffed rice cereal. 4 fruit roll-ups any flavor. 8 strips of licorice candy.
