CHEF DEE'S HAMBURGER SOUP
The ultimate comfort food, this tasty soup has a hearty combination of vegetables and seasonings in a beef and tomato broth. After searching thru a multitude of soup recipes, I combined what the ingredients of several and this is the result. It's a keeper, according to my family.

Steps:
- Brown the hamburger and onion in a large stock pot.
- Add the remaining ingredients,and bring to a boil. Add more water if necessary.
- Simmer for 1-2 hours, or place in crockpot for 5-8 hours on low.

This recipe was handed to me by a long time friend. Its good, not over filling and different. I think it would be a good "any time" soup.

Steps:
- Cook beef till done and drain.
- Put all remaining ingredients EXCEPT cabbage, in large stock pot and simmer.
- When vegetables are tender crisp, add cabbage.
- Cover and simmer till cabbage is done.
- You may add pasta, or other seasonings.
- I served this with garlic bread.
- I found the garlic and the chicken and tomato cubes at Wal-Mart in the Ethnic section.

HAMBURGER SOUP
A delicious conglomerate of beef and vegetables in a rich tomato soup. I made this regularly when my kids were growing up. We ate a lot of ground beef because it was economical. This was an invention of mine while looking for another way to cook hamburger. I served it with cornbread or crackers. It was great!

Steps:
- In large skillet, brown ground beef with onion, garlic, bell pepper, parsley and celery. Do not drain.
- Pour into a very large pot.
- Add beef bullion cubes and 4 cups water. Bring to a boil.
- Add diced tomatoes, tomato sauce, salt and pepper, and all vegetables.
- Bring to a boil, reduce heat and simmer until potatoes are done.
- Serve with cornbread or crackers.

HAMBURGER SOUP

- In a large pot over medium-high heat, brown the meat with the garlic, celery and onions. Remove the pot from the heat and drain off as much fat as you can. (Discard the fat once it cools.)
- Return the pot to the heat and add the beef stock, tomatoes, tomato paste, parsley, oregano, salt, black pepper, cayenne, potatoes, carrots and green, red and yellow bell peppers. Stir to combine, then bring to a boil. Reduce the heat, cover the pot and simmer until the potatoes are tender but not overly mushy, 15 to 20 more minutes. The soup should be somewhat thick, but if you'd like it to be more "soupy," add 1 to 2 cups more broth OR hot water and heat through. Taste and adjust the seasonings, adding more salt, black pepper or cayenne if needed.
- Serve with crusty bread!
MMM OH SO GOOD SURPRISE HAMBURGER SOUP
This is not your average hamburger soup. I was planning to make chili (which I also did) and decided to make 4 lbs. of hamburger. I had a head of cabbage and some extra veggies left from last garden pick so here came the soup decision. I am tasting it now before I post because I wanted to make sure the flavors came together well. THEY DID! Dh loves these surprises.

- In soup pot brown ground beef til just done, breaking into pieces but leaving chunks.
- Add beef broth, cabbage, barley, potato quarters, seasonings.
- Boil for 10 minutes.
- Add canned veggies, quartered tomatoes,onions, and green beans.
- Simmer 1 hour.
- Salt and pepper to taste.
- Add crackers or crusty bread and serve.
- Note: I added Parmesan cheese to top, DH added cheddar.
- Note: estimates for spices as I used fresh and I also used more garlic but not everyone loves garlic, suit to taste. I also used homemade beef broth but measured for recipe.

MOM'S HAMBURGER SOUP
I made a pot of Mom's Hamburger Soup this afternoon which is really smelling and tasting good. And I just emailed my daughter and asked her to bring home some crusty rolls from Panera's to have with it. This is a thick and hearty soup -- perfect for dunking the bread. It's cold outside, so this will be great for supper tonight. Since it's one of those recipes that isn't written down, I decided to post it while everything is fresh on my mind. Mom always used spaghetti, but I think it gets too mushy when the soup is warmed up for the 2nd or 3rd time. And she didn't use the steak seasoning, but to me it seems to lift the taste of the meat and tomatoes.

Steps:
- Use 8 quart stock pot.
- Combine first 4 ingredients and cook together until hamburger is loose and no longer pink. Do not overcook. Drain off grease and return meat mixture to the stock pot.
- Add the diced tomatoes, tomato juice and steak seasoning to the meat mixture; simmer on low heat for 30 minutes. Stir after 15 minutes.
- Add the frozen mixed vegetables; simmer on low heat for 60 minutes, stirring every 15 minutes.
- Add the rice and 2 C water; continue to simmer for about 60 minutes stirring frequently. Add additional water if soup is too thick.
