Mixed Olives with Caper Berries image

This recipe for mixed olives is adapted from "Martha Stewart's Hors d'Oeuvres Handbook."

Yield Makes 2 1/2 cups

Number Of Ingredients 7

8 to 10 ounces (2 cups) assorted olives, such as Alfonso, kalamata, nicoise, and red and green Cerignola
1/2 cup caper berries
1 teaspoon crushed red-pepper flakes
1 head Roasted Garlic, cloves peeled and left intact
Zest of 1 orange
1 sprig fresh thyme, picked
1 sprig fresh rosemary, picked

Steps:

  • In a large bowl, combine the olives, caper berries, red-pepper flakes, garlic, and zest.
  • Transfer to a serving bowl and garnish with thyme and rosemary.

This is great served over rice or couscous. The flavors in the ingredients compliment the halibut beautifully. I have used this with many mild white fishes and found they all are great with these ingredients.

24 ounces halibut fillets
4 tablespoons olive oil, divided
2 large shallots, chopped
1/2 cup flour
1/2 teaspoon crushed red pepper flakes
5 plum tomatoes (seeded and chopped)
1/2 cup kalamata olive (pitted and chopped)
1/2 cup fresh basil, divided
1 tablespoon capers (I use more)
1 (6 ounce) can clams (with juice!, can use clam juice only if you prefer)
1/4 cup dry white wine

Steps:

  • Season fish with salt and pepper and dredge in flour.
  • Heat 2 tablespoons of olive oil in a large skillet over medium-high heat.
  • Add fish and saute' until lightly browned and opaque in the center (4 minutes per side) and then transfer to platter.
  • Heat the remaining olive oil in the same skillet and add shallots and crused red pepper. Saute' for 1 minute.
  • Mix in the tomatoes, olives, 1/4 cup basil and capers. Add the clams and wine.
  • Boil until sauce thickens slightly, about 5 minutes).
  • Mix in 1/4 cup of basil. Season sauce with salt and pepper and spoon over fish.

4 veal rib chops (each about 12 ounces)
3 plum tomatoes, quartered lengthwise
3 tablespoons chilled butter, divided
2 garlic cloves, minced
1/4 cup dry white wine
8 large caper berries, halved, or 2 tablespoons drained regular capers
1/4 cup fresh lemon juice
1/4 cup halved pitted Kalamata olives
1 teaspoon chopped fresh oregano

Steps:

  • Preheat broiler. Sprinkle veal chops and tomatoes with salt and pepper. Place chops on rimmed baking sheet. Scatter tomatoes around chops. Broil chops and tomatoes until chops are medium-rare and tomatoes are slightly charred, about 5 minutes per side. Let rest 10 minutes.
  • Meanwhile, melt 1 tablespoon butter in heavy small saucepan over medium heat. Add garlic and sauté until soft but not brown, about 1 minute. Add wine and boil until reduced by half, about 2 minutes. Whisk in remaining 2 tablespoons butter. Stir in caper berries, lemon juice, olives, and oregano; stir to heat through. Season sauce to taste with salt and pepper.
  • Place 1 chop on each of 4 plates. Divide tomatoes among plates. Spoon sauce over and serve.

4 trout fillets
1/4 cup cornmeal
1/2 teaspoon paprika
1/4 teaspoon pepper
1 tablespoon olive oil
1/2 cup dry vermouth or 1/2 cup white wine
2 tablespoons chopped nicoise olives
2 tablespoons capers
2 tablespoons chopped parsley
1 1/2 tablespoons lemon juice
1/2 teaspoon cornstarch
1/4 teaspoon salt
1 clove garlic, minced

Steps:

  • Combine corn meal, paprika and pepper, stir well.
  • Dredge fish in corn meal mix.
  • Heat oil in a large skillet and cook trout over medium-high heat about 2 minutes on each side.
  • Remove from skillet and place on paper towel.
  • Combine vermouth and the next 7 ingredients in skillet: stir until well blended.
  • Bring to a boil over medium-high heat and cool 1 minute or until slightly thickened.
  • Spoon over fish fillets.
  • Serve with white rice.
