BAKED GOAT CHEESE SALAD



Baked Goat Cheese Salad image

This Baked Goat Cheese Salad is a restaurant quality salad you can make in less than 30 minutes. The goat cheese balls are coated with herbs, dipped in an egg-mustard mixture, and then rolled in toast crumbs. You can prep these ahead of time, keep them in a Ziploc bag, and freeze until you are ready to use.

3 ounces 2 cups Melba Toasts
12 oz goat cheese
1 teaspoon black pepper (freshly grounded)
3 large eggs
2 tablespoons Dijon mustard
1 tablespoon fresh thyme leaves (chopped)
1 tablespoon fresh chives (chopped)
1 tablespoon olive oil
3 tablespoons extra-virgin olive oil
1 tablespoon red wine vinegar
1/2 tablespoon Dijon mustard
1 teaspoon minced shallot or red onion
Pinch of salt
Ground black pepper
7 cups of salad greens

Steps:

  • Process the Melba Toasts in a food processer until fine like breadcrumbs, for about a minute and a half.
  • Cut the goat cheese into equal pieces using a dental floss or kitchen twine. (Please see picture and explanation above.)
  • Roll each piece to make a small ball (in the size of a golf ball) using your hands.
  • Coat each goat cheese ball with chopped thyme and chive herb mixture.
  • Whisk eggs with Dijon mustard in a small ball. Transfer, now herb coated goat cheese balls in to this mix.
  • Using your hands, press the Melba Toast crumbs (seasoned with pepper) into the egg mixture to make sure that they are nicely adhered.
  • Place them on a sheet pan lined with parchment paper.
  • Place the baking sheet in to freezer and freeze them for 30 minutes.
  • Place the rack to the top position and pre-heat oven to 475 F degrees.
  • Meanwhile whisk the oil, vinegar, mustard, shallot (or red onion) and salt in a small bowl until combined. Set aside.
  • Remove the cheese from the freezer and lightly brush all sides of each cheese ball with olive oil. Transfer the baking sheet in to the oven and bake for 8 minutes. If they are completely frozen bake them for 10 to 12 minutes.
  • Using a spatula place the cheese to a paper towel lined plate and let cool for 3 minutes.
  • Place the green salad in a bowl and drizzle with the salad dressing. Toss to coat.
  • Divide green salad among individual plates; place as many goat cheese balls as you want and serve.

4 cups baby mixed greens (or spring mix, arugula, spinach (about 2.5 oz.))
1/4 cup thinly sliced red onion
1/4 cup dried cranberries
1/4 cup candied pecans or walnuts (honey toasted or any kind will do)
2 oz. soft goat cheese (chèvre)
1 teaspoon extra-virgin olive oil
1 tablespoon balsamic vinegar
1.5 tablespoons mayonnaise
1/2 tablespoon pure maple syrup
1/4 teaspoon kosher salt
black pepper (to taste)

Steps:

  • In the bottom of a large mixing bowl, whisk all the ingredients for the dressing together until well emulsified.
  • Add the baby greens (4 cups) and toss together well with tongs to coat in the dressing.
  • Add the sliced red onion (1/4 cup), the dried cranberries (1/4 cup), and the candied nuts (1/4 cup) to the bowl on top of the greens. Use the tines of a fork to crumble the soft goat cheese (2 oz.) directly into the bowl.
  • Toss everything gently together. Divide into two serving bowls or plates and serve.

1 log (4 ounces) fresh goat cheese
1 tablespoon olive oil
1/4 cup seasoned bread crumbs
1 package (5 ounces) spring mix salad greens
1/2 cup dried cranberries
1/2 cup chopped walnuts, toasted
4 bacon strips, cooked and crumbled
1/2 cup Caesar salad croutons
Salad dressing of your choice

Steps:

  • Preheat oven to 350°. Cut goat cheese into eight slices; brush both sides with olive oil and coat with bread crumbs. Place on an ungreased baking sheet. Bake until cheese is bubbly, 5-6 minutes., In a large bowl, combine salad greens, cranberries, walnuts and bacon; transfer to a platter. Top with cheese and croutons. Serve with dressing of your choice.,

Salad with Warm Goat Cheese image

1 (11-ounce) log plain or herbed Montrachet
2 extra-large egg whites, beaten with 1 tablespoon water
Fresh white bread crumbs
2 tablespoons good cider vinegar
2 tablespoons good Champagne vinegar
Pinch sugar
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
1 extra-large egg yolk
1 cup good olive oil
Enough mixed salad greens for 6 servings
Olive oil and unsalted butter, for frying

Steps:

  • Slice the Montrachet into 12 (1/2-inch-thick) slices. (The easiest way to slice goat cheese is to use a length of dental floss.) Dip each slice into the beaten egg whites, then the bread crumbs, being sure the cheese is thoroughly coated. Place the slices on a rack and chill them for at least 15 minutes.
  • For the dressing, place the vinegars, sugar, salt, pepper, and egg yolk in the bowl of a food processor fitted with a steel blade and blend for 1 minute. With the motor running, slowly pour the olive oil through the feed tube until the vinaigrette is thickened. Season, to taste.
  • Toss the salad greens with enough dressing to moisten, then divide them among 6 plates.
  • Melt 1 tablespoon oil and 1 tablespoon butter in a saute pan over medium-high heat until just under smoking. Cook the goat cheese rounds quickly on both sides until browned on the outside but not melted inside. Top each salad with 2 warm rounds and serve.

1 head romaine lettuce
1 cucumber, peeled and sliced
2 to 3 plum tomatoes, cored and cut into small wedges
1 small red onion, sliced thin
Olive oil and red wine vinegar, to taste
Salt and pepper

Steps:

  • Tear the lettuce leaves into bite-sized pieces and transfer them to a large salad bowl. Add the cucumber, tomatoes, and onion. Sprinkle with the oil, vinegar, and salt and pepper, and toss to combine.

Mixed Greens Salad With Pears, Goat Cheese, and Fig Vinaigrette image

I love figs, so when I found this recipe I knew I had to try it. The vinaigrette came out very thick, so I had to adapt it to suit my needs. Pared with the goat cheese and pears, this was wonderful. The vinaigrette's sweet-tart taste makes it well suited for a marinade for grilled or roasted pork and chicken.

1/2 cup balsamic vinegar (or white wine vinegar)
5 dried black figs, stemmed and coarsely chopped
10 tablespoons water (1/2 cup plus 2 T)
1 tablespoon fresh lemon juice
2 tablespoons shallots, minced
1 teaspoon fresh thyme, minced
1 garlic clove, minced
1/4 cup olive oil
1/4 teaspoon salt
6 cups mixed salad greens
1 1/2 cups bosc pears, thinly sliced
1/4 cup goat cheese, crumbled
candied walnuts (optional)
grape tomatoes, chopped (optional)

Steps:

  • Combine balsamic vinegar and figs in a small saucepan over high heat, and bring to a boil. Reduce heat, and simmer until reduced to 1/3 cup: about 5 minutes.
  • Combine the fig mixture, water, and lemon juice in a blender, and process until smooth.
  • Place the fig mixture in a small bowl. Stir in shallots, thyme, and garlic. Add olive oil and salt; stir well with a whisk.
  • To serve: Drizzle enough dressing on the greens to coat. Place the greens on 6 salad plates and top with pear and goat cheese.

1 cup sugar
1/4 cup water
1 1/2 cups slivered almonds, toasted
Salad
4 cups apple cider
1/4 cup apple cider vinegar
2 tablespoons grated onion
2 tablespoons Dijon mustard
1 tablespoon poppy seeds
1 cup olive oil
2 5-ounce bags mixed salad greens
12 ounces soft fresh goat cheese, crumbled

Steps:

  • For almonds:
  • Place foil on work surface. Stir sugar and 1/4 cup water in heavy medium saucepan over low heat until sugar dissolves, brushing down sides of pan with wet pastry brush. Increase heat and boil without stirring until mixture turns deep amber color, occasionally brushing down sides of pan with wet pastry brush and swirling pan, about 9 minutes. Mix in almonds. Immediately pour out onto foil, separating almonds with fork. Cool completely (mixture will harden).
  • For salad:
  • Boil apple cider in heavy large saucepan until reduced to 1/2 cup, about 23 minutes. Transfer to medium bowl and chill until cold. Add vinegar, onion, mustard and poppy seeds. Gradually whisk in olive oil. Season dressing to taste with salt and pepper. Toss greens, cheese and almonds in bowl with enough dressing to coat; serve.

GRILLED-ONION SALAD WITH MIXED GREENS AND GOAT CHEESE



Grilled-Onion Salad with Mixed Greens and Goat Cheese image

Number Of Ingredients 9

1/4 cup Sherry wine vinegar
2 tablespoons fresh lemon juice
2 teaspoons grated lemon peel
2 teaspoons minced fresh thyme or 3/4 teaspoon dried
2 teaspoons fresh marjaram or 3/4 teaspoon dried
1/2 cup olive oil (preferably extra-virgin)
2 Vidalia onions, cut vertically into 3/4-inch wedges, each with portion of root end attached
4 cups mixed baby greens
3/4 cup crumbled soft fresh goat cheese (such as Montrachet)

Steps:

  • Prepare barbecue (medium-high heat) or preheat broiler. Whisk Sherry vinegar, lemon juice, lemon peel, thyme and marjoram in small bowl. Gradually whisk in olive oil. Season dressing to taste with salt and pepper. Arrange onion on baking sheet. Brush both sides of onions with dressing, using total of 4 tablespoons. Sprinkle onions with salt and pepper. Grill or broil onions until lightly charred, turning occasionally and keeping wedges intact, about 12 minutes. Transfer to plate and cool.
  • Place greens in medium bowl. Toss with enough remaining dressing to coat. Arrange greens on 1 side of each plate. Arrange onions on opposite side of plates. Drizzle onion with more dressing. Top with cheese and serve.

1 tablespoon melted butter
1 tablespoon sugar
2 tablespoons honey mustard
1 garlic clove, minced
1/4 teaspoon red pepper flakes
1/4 cup balsamic vinegar
3/4 cup olive oil
salt and pepper
1 lb mixed salad green, including fresh baby spinach
4 ounces goat cheese
1/4 cup dried cranberries
1 red bell pepper, cored, seeded, and cut into 1-2 inch thin slices

Steps:

  • 1 Preheat oven to 300°F Place pecans in a bowl, pour melted butter over them, sprinkle with sugar, and gently toss until the pecans are all well coated with a dusting of sugar. Place them in a single layer on a parchment paper or Silpat lined cookie sheet. Bake for 20 minutes. Let cool to touch.
  • 2 Whisk together the honey mustard, garlic, red pepper flakes, and balsamic vinegar in a medium sized bowl. Slowly drizzle the oil into the mixture, whisking constantly until completely incorporated. Season to taste with salt and pepper.
  • 3 Place lettuces and baby spinach in a large bowl. Add the goat cheese, dried cranberries, red bell pepper, and pecans. Toss with 1/4 cup of the dressing.
  • Serve immediately.
  • Serves 8.
  • Chill remaining dressing.
