MIXED FRUIT TART
Steps:
- To make the crust, put the flour in a large bowl. Add the sugar and mix. Using your hands, make a well in the center. Place the butter pieces and egg yolk in the well. Using your fingers, work the butter and egg yolk together until well combined then work the butter-egg mixture into the flour mixture until combined. The dough will be crumbly, but when you squeeze a handful in your hand, it should hold together.
- Sprinkle into a 10-inch pie or tart pan. Press the dough firmly and evenly onto the bottom of the pan. Make ropes of the dough and press them onto the walls, making sure not to let the crust thicken at the corners. It should make a clean right angle where the sides meet the bottom. Chill the crust at least 30 minutes or, covered, up to 3 days.
- Preheat the oven to 375 degrees F.
- To make the frangipane filling, in a food processor fitted with a metal blade, pulse the almonds and sugar just until sandy. Do not over-process, or the mixture will become pasty. Add the butter and process just until blended. Add the eggs and process until blended. Scrape down the sides of the bowl, add the vanilla and flour, and process until smooth (you have just made a frangipane). Spoon the frangipane into the unbaked tart shell. Bake until the frangipane is golden brown and puffy and the crust is golden brown, 45 to 50 minutes.
- Let cool. Spread 3/4 cup apricot preserves on the surface of the baked tart to act as a bed for the fruit. Slice fruit and arrange it decoratively. Heat the remaining 1/4 cup apricot preserves with the water until boiling and smooth. Brush the fruit with the apricot preserves to protect the fruit from drying out and make it glisten.
MOUSSELINE DE FRUIT DE MER
Steps:
- For the filling Warm a saute pan with a small amount of olive oil. Take the diced shrimp, finely diced elbow lobster meat, and diced sea scallop, and sear lightly. Remove the remaining lobster meat from the shell and cut into 1 1/2-inch pieces. Reserve this lobster meat and the whole shrimp and scallops in the refrigerator. Add the diced vegetables and saute for 1 minute. Deglaze with the vermouth. Bring the ingredients to boil and simmer for 1 minute. Strain, reserving the seafood and vegetables and the liquid separately. Return the liquid to the saute pan. Add the heavy cream and a small amount of beurre-manie, and bring to a boil. Add back the seafood and vegetable mixture. Season with salt, pepper, cayenne pepper, lemon juice, and the chopped tarragon. Set aside.
- For the Fish Mousse: Put the chopped fish in a food processor and run it at high speed until the fish has a very tight consistency. Now add the egg while the machine is running and then the heavy cream. Run until the fish mousse has a shiny and bright consistency. Add salt, pepper and cayenne pepper for seasoning, set in cool place.
- Butter 6 small stainless steel cups, 1 1/2-inch diameter and approximately 2 inches deep. Take a small amount of fish mousse in pastry bag with a small opening, and coat the bottom and the inner sides of the buttered cup with a thin layer of the fish mousse repeat 5 more times with the remaining cups. Now take the seafood filling and fill up almost to the very top of the cup. Take a small amount of fish mousse and cover the opening with it. Set aside.
- Assembly: Preheat oven to 450 degrees F. Fill a roasting pan that will fit all 6 molds in it, halfway with hot water. Place the molds in the water and place in the oven. Bake for approximately 8 to 10 minutes.
- While timbale is baking, warm a frying pan, add a small amount of extra-virgin olive oil and quickly saute the reserved shrimp, scallops, and lobster. Place warm sauerkraut in center of warmed plates, set the seafood around it, garnish with the diced tomatoes and cooked vegetable pearls. Place the fish mousse timbales upside down in the center of the sauerkraut, remove the stainless steel cup. Garnish with caviar and quail eggs. Mix the champagne sauce and spoon it around the seafood. Finish with chervil and chopped chives. Serve immediately.
- In a small bowl, mix together the butter and flour until they are well combined and a paste is formed.
- Sweat the diced onions in small amount of butter without giving color. Set the sauerkraut atop and add the Champagne, water, bouquet garni, bay leaf, juniper berries and seasoning. Cook on low heat for approximately 15 minutes. Set aside in warm place.
- Sweat the shallots with the peppercorns in a small amount of butter in a saute pan, without giving any color to the shallots. Deglaze with the vermouth and the champagne. Add the parsley stems and reduce down to 1/3. Add the chicken or fish stock, and reduce down again to 1/3. Now add the heavy cream and mix in the butter. Simmer the sauce for 1 minute and season with salt, pepper, cayenne pepper and lemon juice. Set aside in warm place.
SUMMER FRUIT MOUSSE
This is definitely one of my favorite recipes. It is from my ultimate cookbook, Great Housekeeping. I've been making this for years and it impresses every time. It also works well if you use mango pulp instead of the mixed soft fruits. Feel free to leave out the alcohol, I only add it when I it's on hand since it doesn't greatly affect the taste. I'm not too sure of the prep time and serving size so I've only written approximations. Enjoy!

Steps:
- Blend fruits and remove pips.
- Soak gelatin in 3 tbsp water and leave to soak.
- Whisk cornflour, egg yolks, sugar and milk in a bowl till thick and pale.
- Heat remaining milk till almost boiling and then gradually pour on egg mixture, stirring constantly. Return to pan and cook, stirring, over a low heat until thickened.
- Remove from heat and stir in the softened gelatin till completely dissolved.
- Transfer to a large bowl and leave to cool slightly.
- Stir in the fruit puree and liqueur and leave to cool until the point of setting.
- Whip the cream until it just holds its shape, fold into the mousse.
- Refrigerate until the mousse has set.
- Serve.

- Wrap bananas in aluminum foil.
- Freeze at least 2 hours.
- Cut into small pieces.
- Add 1/8 cup skim milk and puree in blender just until little lumps are still evident.
- Add berries and remaining skim milk (1/8 cup).
- Puree until the mixture has a creamy consistency and looks like ice cream.
- Do not overblend.
- Freeze.
- Soften slightly with a spoon before serving.
- Serve in 4 individual dishes.
MIXED BERRY MOUSSE

- In a pan of simmering water, add the mixture of frozen berries and half the amount of sugar. Cook the berries until they feel soft.
- When the berries are soft, turn off the heat. Drain, keeping the juice. With the drained berries, using a processor, pulse the berries into a thick mixture, pour into a bowl and leave to cool
- Separate the eggs. Using the egg whites only and the 1/2 - 1 tbsp of fresh lemon juice (depending on your own taste), in a clean food processor whisk until soft peaks form. At this stage add the last of the sugar. Whisk until firm peaks form - when the whisk leaves deep markings in the white mixture.
- Add 1 spoonful of the egg white to the mixed berries. stir the egg white in quickly until all combined.
- Now gradually fold the rest of the whites into the berry mixture. Do this slowly and carefully. Doing this too quickly will knock out all the air from the whites. Do not combine all the mixture, leave some of the whites still showing.
- To serve, spoon the mixture into 4 tall glasses. Leave to set for 2-3 hours in the fridge. You can leave them to set over night. Once set drizzle the kept berry juice over the mousse, and top with fresh berries. The berry juice is also ideal for making smoothies, Jelly, and ice cream with :) enjoy.

- The first thing you should do before you start making your homemade yoghurt mousse is to get all the ingredients ready. If you prefer to make this recipe even lighter, you can replace sugar for sweetener. If you do not have whipping cream, you can replace this with 100g (3.5 oz) cream cheese. Lay out several bowls.
- When you have everything ready, you can begin. The first thing to do is mix the yoghurt with a spoonful of sugar in a bowl until the latter is well dissolved. Remember that you can use whatever yogurt flavour you like but, depending on which you choose, you should reduce the amount of sugar. The five tablespoons are for plain yogurt.
- Now, take another bowl and beat the egg whites until stiff. While beating, gradually add the remaining tablespoon of sugar. In another separate bowl, whip the cream. In both cases it is recommended to use a beater or mixer, as doing it manually will not give you the same result. You know that the cream is well whipped when you can pull away the mixer and it makes peaks in the cream.
- Now we just need to mix all the ingredients. Start adding the whipped cream to the yoghurt and stir it with a spatula to mix it together. When this is ready, add the egg whites in the same manner and do it carefully to avoid losing the creamy texture.
