BASIC PANCAKE MIX



Basic Pancake Mix image

Say goodbye to Aunt Jemima! Once you taste these homemade pancakes, I think you'll agree they're much better than the boxed kind! Add a bit of vanilla or fruit (frozen blueberries work well) to make them extra special. If you want, mix up the dry ingredients in advance and give it away as a gift (with instructions on how to finish making the pancakes) or just store it for even quicker pancakes on Sunday mornings.

1 1/2 cups all-purpose flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4-1 1/2 cups milk
2 eggs
1 teaspoon vanilla (optional)
2 tablespoons vegetable oil

Steps:

  • In a bowl, mix together all the dry ingredients.
  • Make a well in the centre and pour in the milk.
  • Start with 1 1/4 cups milk, adding up to another 1/4 cup if necessary, as you mix it with the flour.
  • Add the two eggs, vanilla if using and oil, whisking until mixed but still a bit lumpy.
  • Heat a frying pan (if it is not non-stick, you will need to melt a bit of butter or oil in it) and when hot, pour in some pancake mix.
  • How much depends on how experienced you are at flipping pancakes and how big you want them. We do about 1/4 cup a time for small, easy-to-flip pancakes but you could make this as much as 1/2 cup of pancake mix.
  • If you are adding fruit, I like to sprinkle it on top of the pancake now.
  • When the pancake starts to bubble on top and is golden brown on the cooked side, turn it and continue cooking until both sides are golden brown.
  • The first pancake is always a bit of a test so adjust the batter by adding more flour if you need to make it thicker or more milk if you want a thinner pancake. In either case, just add a few spoonfuls at a time until you get it right.
  • Repeat the cooking process with the remaining batter. You may need to adjust the heat as pan tends to get hotter as you keep making pancakes.
  • Keep the cooked pancakes covered with a tea towel, to keep them warm while you finish cooking the rest.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a 9x13 inch pan with vegetable oil spray.
  • In a large bowl, combine cake mix and pineapple (with juice). Mix until well blended.
  • Pour batter into prepared 9x13 inch pan. Bake at 350 degrees F (175 degrees C) for 25 minutes or until golden brown. Let cool.
  • Serve with whipped topping

This stuff is sooooooooooo goooooooood! A friend at work made it one time for a luncheon that we had at work and couldn't stay away from this. This is one of my favorite desserts if not my favorite. It just melts in your mouth. You have got to try this one. You will not be disappointed.

1 cup butter, melted
2 cups flour
1 1/2 cups chopped pecans
8 ounces cream cheese, softened
1 cup powdered sugar
1 container Cool Whip
1 package instant chocolate pudding mix
1 package instant vanilla pudding
4 cups cold milk, for making puddings
1 chocolate candy bars or 1 toffee pieces, bar

Steps:

  • Heat oven to 350 degrees.
  • Make puddings separately according to the directions on box.
  • Set aside.
  • Mix cream cheese, powdered sugar and 1 cup of cool whip together and set aside.
  • Mix melted butter, flour and 1/2 cup chopped pecans together and press into the bottom of a 13 X 9 cake pan.
  • Put in oven until the crust browns (about 10 minutes).
  • Take out of oven and let cool slightly.
  • Layer mixtures over crust starting with cream cheese mixture, chocolate pudding, vanilla pudding.
  • Until mixtures are gone.
  • Top with the rest of the cool whip, chopped pecans and chocolate shavings from candy bar.

For the Cake:
1 devils food chocolate cake mix
1/4 cup cocoa powder
1 cup milk
1/3 cup sour cream
1/2 cup vegetable oil
3 eggs
2 teaspoon vanilla
Pinch of salt (to taste)
For the Flan:
12 ounce can sweetened condensed milk
14 ounce can evaporated milk
3 eggs
1 tablespoon vanilla
1/4 teaspoon salt
3/4 cup dulce de leche
3/4 cup caramel sauce (such as for ice cream topping)
Optional: chocolate sprinkles for decoration

Steps:

  • Gather the ingredients and preheat the oven to 350 F.
  • Grease a 12-cup Bundt, tube, or angel food cake pan generously with butter or vegetable shortening.
  • Place the cake mix in the bowl of a standing mixer. Add cocoa powder, milk, sour cream, vegetable oil, 3 eggs, 2 teaspoons of vanilla, and a pinch of salt, and mix well.
  • Place the condensed milk, evaporated milk, 3 eggs, 1 tablespoon of vanilla, and 1/4 teaspoon of salt in a blender and pulse until well blended.
  • Gently warm the dulce de leche in the microwave to soften it and then mix it with the caramel sauce. Place half of the caramel and dulce de leche mixture in the bottom of the baking pan. Reserve the remaining half.
  • Pour the chocolate cake batter into the pan. Pour the blended condensed milk and egg mixture into the pan over the chocolate cake batter-do not mix. Cover pan with an oiled piece of aluminum foil.
  • Set the baking pan inside a roasting pan. Place the pans in the oven, then carefully fill the roasting pan with 1 to 2 inches of hot water.
  • Bake for 1 hour and 15 minutes, or until the cake springs back to the touch. Carefully remove the cake and roasting pan from the oven (avoid sloshing/spilling the hot water).
  • Let cake cool in the pan on a rack for 1 hour, then refrigerate for 2 hours or until completely cooled.
  • Remove the foil from the pan, and gently tap the pan on the counter. Gently loosen the edges of the cake from the sides of the pan. Invert a large plate over the top of the pan, then flip it so that the cake can slide out and onto the plate.
  • Heat the remaining caramel sauce and dulce de leche mixture and then drizzle it over the cake. Decorate the cake with chocolate sprinkles, if desired.

Steps:

Anything that requires special pans and beating and sifting or other steps beyond "dump ingredients into a bowl" is generally more than I want to bother with. For this easy version, I simplified the process and ended up with two heavenly loaves: one to photograph and share, and another to eat all by myself.

1 cup cake flour
1/2 teaspoon kosher salt
1 1/2 cups egg whites, at room temperature (from about 10 large eggs) (see Cook's Note)
2 teaspoons fresh lemon juice
1 teaspoon cream of tartar
1 1/2 cups granulated sugar
1/2 teaspoon pure orange extract
1 vanilla bean pod, seeds scraped, or 1/2 teaspoon vanilla bean paste

Steps:

  • Position a rack in the bottom of the oven and preheat to 350 degrees F. Line two 9-by-5-inch loaf pans with aluminum foil, allowing the foil to hang over the long sides by at least 1 inch. Do not grease the pans.
  • Whisk together the flour and salt in a medium bowl. Set aside.
  • Whisk the egg whites in a stand mixer fitted with the whisk attachment at medium speed just until they start to look foamy, for 30 seconds. Add the lemon juice and cream of tartar and beat on high speed until soft peaks form, 2 to 3 minutes.
  • Gradually add the sugar in a slow, steady stream and beat until thickened and shiny, about 2 to 3 minutes.
  • Add the orange extract and vanilla bean seeds, then decrease to the lowest speed. Add the flour and salt mixture in a steady stream and beat until just combined.
  • Turn off the mixer as soon as all the flour is added. Fold the mixture with a rubber spatula once or twice to make sure the flour is fully incorporated. Divide the mixture evenly between the two prepared pans.
  • Bake on the bottom rack of the oven until puffed and slightly golden brown on top, 25 to 30 minutes. Cool the cakes upside down by balancing the edges of each pan on two cans or jars, 15 to 20 minutes. Once completely cooled, remove the cakes from the pan, peel off the foil and serve.
