I don't know where I got this recipe but have been preparing it for years. The sour cream in the cracker topping is what really makes it different from other casseroles I have tried. I usually serve this with peas or green beans and some garlic bread for a comfort meal on a cold day.

Number Of Ingredients 7

1 1/2-2 lbs boneless skinless chicken breasts
1 onion, chopped
1 teaspoon seasoning salt
1 (8 ounce) package wide egg noodles
2 (10 ounce) cans condensed cream of chicken soup (can substitute cream of mushroom, I just prefer chicken)
2 cups crushed Ritz crackers (about one sleeve)
8 ounces sour cream

Steps:

  • Preheat oven to 350 degrees. Cut chicken into bite size pieces and saute chicken and onion until chicken is done.
  • Prepare egg noodles according to package directions.
  • In 9X13 casserole dish, combine chicken, onions, soup, and noodles. Mix well.
  • Combine crackers, butter, and sour cream well and spread over chicken. The mixture will be very thick.
  • Bake for thirty minutes or until top is brown.

Here's what you need: boneless chuck roast, flour, salt, pepper, canola oil, butter, pepperoncinis, mayonnaise, apple cider vinegar, dried dill, paprika, fresh parsley

1 boneless chuck roast, 3 pounds (1.3 KG)
¼ cup flour
salt, to taste
pepper, to taste
3 tablespoons canola oil
4 tablespoons butter
10 pepperoncinis
2 tablespoons mayonnaise
2 teaspoons apple cider vinegar
¼ teaspoon dried dill
⅛ teaspoon paprika
fresh parsley, for garnish

Steps:

  • Dredge the chuck roast in flour, salt, and pepper, and massage it into the meat.
  • In a skillet on a very high heat, brown the meat on all sides in the canola oil to create a crust.
  • Transfer the meat to a slow cooker and top with butter and pepperoncini.
  • Cover the slow cooker and set it to low.
  • In a small bowl, mix the mayonnaise, vinegar, dill, and paprika until well combined.
  • Spread over the meat, and cook on low for 8 hours.
  • Remove the roast and shred with two forks.
  • Return meat to the slow cooker, and stir to mix in the juices. Serve with fresh parsley.
  • Enjoy!
