Homemade Miso Soup with Tofu image

It's super easy to make authentic Japanese miso soup at home! My recipe shows you how to make quick and easy soup stock (dashi) from scratch and then make the classic miso soup with tofu and wakame seaweed. Homemade miso soup is not only delicious, it also brings many great health benefits.

4 cups water
1 piece kombu (dried kelp) ((⅓ oz, 10 g; 4 inches x 4 inches or 10 cm x 10 cm))
1 cup katsuobushi (dried bonito flakes) ((packed; I used a loosely packed 3 cups in the video for stronger flavor))
7 oz soft/silken tofu (kinugoshi dofu)
4-5 Tbsp miso ((1 Tbsp (18 g) for every 1 cup (240 ml) of dashi))
1 Tbsp dried wakame seaweed
1 green onion/scallion

Steps:

  • Gather all the ingredients.
  • Cut the green onion into thin rounds.

5 cups dashi (recipe following)
2 tablespoons miso (red bean paste)
4 ounces firm tofu, cube into 1/2 ' cubes
2 green onions, sliced diagonally
2 mushrooms
6 cups water
1 piece kelp (2 inch square)
3 ounces bonito tuna or 3 tablespoons dried bonito flakes

Steps:

  • ----------Make the dashi---------.
  • Bring water to a boil.
  • Wash Kelp under cold water tap.
  • Add to water when it comes to a boil.
  • Stir and let boil 3 minutes.
  • Remove kelp from the water and add the bonito.
  • Allow to come to boil and remove from heat immediately.
  • Let it settle for a few minutes.
  • Strain off the bonito and set aside for whenever you need the dashi.
  • ---------Make the Miso Shiru-----------.
  • Bring the dashi to a boil.
  • Mix a little hot liquid with the bean paste, stirring until smooth.
  • Pour mixture back into the saucepan, stir well.
  • Add tofu and return to boil.
  • Simmer for a few seconds only.
  • Ladle into bowls and garnish with green onion and a slice or two of mushroom.

4 ounces boneless lean pork, thinly sliced
2 -3 large green onions
1 quart dashi
1/4 cup miso (if miso is very salty, reduce to 3 tbsp.)
2 teaspoons fresh ginger juice

Steps:

  • Cut pork slices crosswise into 1/2-inch wide strips.
  • Cut green onions crosswise into 1/2-inch lengths.
  • Heat dashi to boiling in a 3-quart saucepan over medium-high heat. Add pork; cook 2 minutes. Mix some of the hot soup liquid into the miso and stir to dissolve. Add the onions and the dissolved miso to the pot, but do not boil after adding miso, just heat through. Ladle into 4 soup bowls. Stir 1/2 teaspoons ginger juice into each serving.
