HOW TO MAKE MISO SAUCE
My miso sauce is probably one of the most versatile and simplest sauces to keep on hand for dressings, sauces and marinades! Meat your new magic sauce that will compliment absolutely everything on your dinner plate!

Steps:
- Combine all the ingredients in a blender or food processor and process until smooth.
- Pour into a refrigerator safe container and seal. You can keep this for 3-4 weeks.
MISO SAUCE FOR EVERYTHING
Miso Sauce is a simple all-purpose sauce that is great to keep on hand for veggie bowls, salads, steamed or grilled veggies, and so much more. It even works great as a marinade.

- Simply combine all of the ingredients in a bowl and whisk together until smooth. Pour into an airtight container and store in the refrigerator for up to 3-weeks.

MISO GLAZED COD
Steps:
- Preheat broiler.
- Rinse fish fillets and pat dry with paper towels. Combine miso, brown sugar, sesame oil and mirin and stir well until brown sugar is fully dissolved.
- Brush about 2 tablespoons miso glaze on each fish fillet. Marinate for at least 30 minutes, or up to 1 hour. Place fish under broiler for 3 to 4 minutes, or until top is slightly charred and glaze has caramelized. Remove fish from oven and brush with remaining glaze. Lower oven to 375 degrees F. Cook an additional 5 to 6 minutes, until fish is flaky but not overcooked.
- If desired, serve with toasted sesame seeds and scallions.

MISO SOUP

- In a saucepan heat the dashi and whisk in the miso pastes. Bring to a simmer and add the tofu, scallions, and mirin, if using. Remove from the heat and serve immediately.
- In a saucepan, combine the water and kombu. Bring to a simmer, uncovered, over medium heat. Remove the kombu and discard. Bring the liquid to a boil, add the bonito flakes and immediately remove the pan from the heat. Allow the dashi to sit undisturbed for 2 minutes. Strain through a fine mesh strainer into a medium bowl. Discard the bonito flakes. Use immediately or store, covered, in the refrigerator for up to 3 days.
SWEET MISO RICE
My favorite way to make a simple bowl of rice a little more healthy and filling. If you don't have the same vegetables, just cut up and throw in whatever vegetables you have around...just make sure they're colorful.

- Cook the rice in a rice cooker, or however you cook your rice.
- While it's cooking, chop your vegetables.
- Add a few drops of water to the miso paste to make it more mixable.
- Combine the rice and vegetables and pour the miso mixture and the vinegar over it.
- Mix well and serve!

MISO-MARINATED SALMON

- Stir together the miso, mirin, sugar and sake, if using. Place the salmon fillets on a plate or in a medium food bag and cover with the miso marinade. Leave in the fridge for at least 30 mins or, better still, overnight.
- Heat oven to 200C/fan 180C/gas 6. Lightly oil a baking tray. Use kitchen paper to wipe off the marinade (don't be tempted to wash it off as you will lose some of the flavour). Place the fillets on the baking tray, skin side down. Cook in the oven for 15 mins until the fish flakes easily and is cooked through.
- Meanwhile, make the cucumber salad. Using a vegetable peeler, shave the cucumber into long, thin ribbons. Whisk together the rice wine vinegar, oil and sugar. Toss the cucumber ribbons in the dressing, then curl them up on two plates. Serve with the salmon and some plain white rice sprinkled with toasted sesame seeds.

KIYOKO'S MISO SAUCE
My host-mother in Japan introduced me to this sweet sauce flavored with miso and mirin. Miso sauce can stay in the fridge for a pretty long time, so you can make a lot of it at once. Grilled tofu, fried eggplant, or pan-seared fish complement it well.
