JAPANESE-STYLE MACKEREL RICE BOWL



Japanese-style mackerel rice bowl image

This no-fuss fish dish is packed with Asian flavours of sweet, salty teriyaki sauce, garlic and lemon - ready in half an hour

300g sushi rice
200g frozen soya beans
150ml teriyaki sauce
1 large garlic clove , crushed
zest and juice 1 lemon
4 smoked mackerel fillets, skin removed
4 spring onions , halved and shredded lengthways
wasabi paste, to serve (optional)

Steps:

  • Cook the rice following pack instructions, adding the soya beans to the pan for the final 3 mins.
  • Meanwhile, mix together the teriyaki sauce, garlic, lemon zest and juice. Heat a non-stick frying pan over a medium-high heat. Brush a little of the teriyaki sauce mixture over the mackerel and sear the fillets, skin-side down, for 1-2 mins. Turn the fish over and add the teriyaki sauce mixture to the pan, bring to a bubble and cook the sauce for 1-2 mins more. The fish will warm through and the sauce will thicken.
  • Spoon the rice into bowls, then top each bowl with a mackerel fillet. Spoon over the sauce and sprinkle over the spring onions. Serve with a blob of wasabi paste, if you like.

  • Scrape off the ginger skin with a knife (or a spoon) and cut into thin slices. Keep half the slices for cooking the fish and use the other half for the next step.
  • Bring a medium pot of water to a boil. Once boiling, gently put a fillet, one at a time, for a quick blanch to remove the sliminess, smell, and impurities. Scoop up the fish with a fine-mesh strainer or a slotted spoon. Alternatively, you can pour boiling water over the fillets.
  • In a medium/large saucepan, add the Seasoning #1 (4 Tbsp water, 4 Tbsp sake, 2 Tbsp mirin, 2 Tbsp sugar, 2 Tbsp miso (keep the other 2 Tbsp miso for later), and ginger slices.

  • First, peel the skin off the ginger. (I recommend scraping it off with a spoon) Then cut it into thin slices.
  • Score the mackerel with a cross on the skin side, about 2mm deep. It should be through the skin and lightly cutting the flesh inside.
  • Add 200ml of water to a frying pan and place the mackerel fillets inside. Add the sliced ginger too. Heat up with a medium heat and bring it to the boil.
  • Once boiling, add 1 tbsp of miso paste, 1 tsp of soy sauce, 1 tbsp of sake, 1 tbsp of mirin and 2 tbsp of sugar.
