SESAME-MISO CHICKEN SALAD
There's always room for another chicken salad recipe, especially if the assembly is quick. This one calls for a whole cooked chicken, which you can roast or boil gently several hours ahead or up to 2 days in advance. (Some may choose to buy a precooked rotisserie chicken, but it can sometimes be hard to find one that is seasoned or cooked properly. If you can find a good one, go for it.) The creamy miso dressing can also be used to dress a green salad, or to replace mayonnaise on a sandwich. It also makes a great dip for vegetables.

- Put sesame paste, miso, vinegar, mirin, ginger, sugar and lemon zest in a small mixing bowl. Whisk together until well combined. Whisk in sesame and vegetable oils. Check seasoning and adjust with salt, pepper and cayenne, if using. You should have about 2/3 cup dressing. If it seems too thick, thin with a tablespoon or 2 of water.
- Remove skin from chicken and pull all the meat from the carcass. With fingers or a knife, shred all the chicken meat into 1-inch strips and put in a medium mixing bowl. (Refrigerate or freeze any remaining skin, fat, bones and cartilage for making broth.) You should have about 4 cups shredded chicken.
- Separate the lettuce leaves and arrange on a large platter, leaving space for the chicken at the center, then scatter with cucumber slices.
- Gently toss the shredded chicken with salt and pepper. Pour all but a few tablespoons of dressing over the chicken and gently toss to coat. Transfer dressed chicken to center of platter and nap with remaining dressing. Sprinkle scallions and sesame seeds on top and serve.

- Mix together the marinade ingredients in a small bowl until smooth.
- Place the salmon skin side up on a work surface and slather with just under half the marinade.
- Turn the salmon so it is skin side down onto a large piece of cling wrap. Slather the remaining marinade on the flesh side.
- Wrap the salmon in cling wrap. Marinade for 24 to 48 hours.
- Scrape the marinade off (do not rinse with water) and leave the salmon to come to room temperature
- Preheat barbecue plate side on MEDIUM LOW. Leave it to heat up for a good 10 to 15 minutes - another tip for cooking salmon perfectly.
- Add oil just before cooking. Place the salmon on the BBQ skin side down. Cook for 3 minutes, then use two spatulas to turn it. Cook the flesh side for 2 - 3 minutes or until caramelised, then flip it again so the skin side is down then transfer to a tray.
- Cover loosely with foil to rest for 5 minutes before serving. It will continue cooking while resting.
- Garnish with sesame seeds and finely sliced shallots.

- FOR THE MAYO:.
- Place vinegar, miso and egg yolks in a blender and mix to combine.
- With the motor running, slowly drizzle in the oil a thin stream to emulsify.
- Transfer mayo into a container and refrigerate until ready to use.
- FOR THE KFC SAUCE:.
- Combine all the ingredients in a small bowl and mix until uniform.
- Transfer into a container and refrigerate until ready to use.
- FOR THE SANDWICH:.
- In a large bowl, combine the buttermilk and spices.
- Add the chicken to the buttermilk mixture and allow to marinade in the refrigerator for 2-4 hours.
- Preheat a fryer filled with oil to 350°F.
- Season the flour with salt and combine.
- Dredge the chicken well in the seasoned flour, and gently drop into the oil and fry for 6-8 minutes.
- Once, golden brown, remove from the oil and allow to cool on a wire rack.
- Raise fryer temperature to 375F.
- Re-fry chicken for 60-90 seconds until very crisp., remove and drain on paper towel lined tray.
- Spread the miso mayo on the top and bottoms of a potato roll.
- Glaze the chicken thighs in the 'KFC' sauce. Place a thigh on each roll.
- Add and remaining sauce over the thighs.
- Serve with shaved lettuce or cabbage and fresh cucumber.

MISO CHICKEN SANDWICHES WITH GINGER MAYONNAISE
This is one of my favorite new things to make. It is amazingly easy to put together, the chicken cooks quickly, and the resulting sandwich is fabulous! It's faster than take-out. When I first made these, I thought the chicken tasted a bit salty on it's own. But once it's all together in the sandwich, the flavors blend perfectly, and it wasn't salty at all. I did use low sodium soy sauce, by the way. It's one of those things that make you want to go back for more, even though you're already full, lol. From the Food Network Kitchens Cookbook...they use multigrain sandwich bread, we used nice crusty rolls.

- For the chicken: Heat the broiler and line a broiler pan with foil, or you can grill the chicken.
- Stir the miso, soy sauce, and ginger together and brush both sides of the chicken with the mixture.
- Broil on the foil lined pan, 6 inches from the heat, or grill, turning once about 2 minutes per side until cooked through, set aside.

STEAK & SPRING ONION SANDWICH WITH MISO MAYO

- Put the miso for the marinade in a dish large enough to hold the steaks in a single layer and mix in all the ingredients. Put the steaks in the marinade and turn them over several times. Cover, put in the fridge and leave for an hour or so.
- To make the mayonnaise, mix together the egg yolk and mustard in a bowl. Continuously beating with a hand whisk or an electric beater, start adding the oil very slowly, a drop at a time. Wait until each drop is amalgamated and the mixture has thickened before adding the next. As it develops more body, you can add the oil in slightly larger quantities. Add the garlic, miso and rice vinegar, then add the lime to taste. Finally, mix in the chilli. Cover and set aside. This will make more than you need, but it will keep in the fridge for three days.
- Heat a non-stick frying pan until it's really hot. Lift the steaks out of the marinade, shaking off the excess. Cook quickly on each side for 30 seconds, then turn the heat down a little and cook for a further 2 mins (for rare steaks), turning them and basting over some of the leftover marinade. Set aside to rest. Clean the pan.
- Warm the ciabatta in the oven, then slice horizontally. Spread the bread with a big dollop of the mayonnaise. Pile the spinach onto half of the slices.
- Heat the frying pan again and brush the spring onions with oil. Fry them over a medium heat, turning all the time, until the base is tender, around 10 mins. They will really collapse but that's okay - just don't burn them.
- Cut the steaks into thick slices (you can leave them whole if you like, but I prefer them sliced), put them on top of the leaves, top with the spring onions and sesame seeds and top with the other half of the bread. Serve immediately.

- In a small bowl, whisk together the soy sauce, grated ginger, sliced garlic, shallots, and lime juice. Add the tofu, gently mix, and marinate for at least 30 minutes, preferably overnight. The longer the better.
- Preheat the broiler. Transfer the tofu to a baking sheet, and lay in a single layer. Place the sliced red pepper next to the tofu and bake for 7 minutes, then flip and bake for another 7 minutes.

- Roast the bell pepper directly over a gas flame or under the broiler, turning, until charred all over, 5 minutes. Place the bell pepper in a small bowl and cover with plastic wrap; let steam for 15 minutes. Peel, seed and chop the pepper.
