MAGIC MINTY FUDGE
This delectable fudge, made with Betty Crocker Rich & Creamy frosting, can be pulled together in only ten minutes. No wonder it's called "magic!"

Steps:
- Spray 9-inch square pan with baking spray with flour. In medium microwavable bowl, microwave dark chocolate chips uncovered on High in 30-second increments, stirring after each, until melted and smooth. Stir in chocolate frosting. Spread in pan.
- In another microwavable bowl, microwave mint chips uncovered on High in 30-second increments, stirring after each, until melted and smooth. Stir in vanilla frosting. Spread over chocolate layer.
- In small resealable freezer plastic bag, place white chips; seal bag. Microwave on High 30 to 60 seconds until softened. Gently squeeze bag until chips are smooth. Cut off tiny corner of bag; squeeze bag to drizzle melted white chips over mint layer.
- Top with chocolate sprinkles. Cover; refrigerate until firm, about 1 hour. Cut into 4 rows by 4 rows.

LAYERED MINT FUDGE
If you like mint, you'll love this fudge. I got it from Taste of Home. The prep and cook times do not include cooling time.

Steps:
- Line a 9-inch square pan with foil; grease the foil with butter and set aside.
- In a heavy saucepan, melt chocolate chips and 1 cup milk over low heat; cook and stir for 5-6 minutes or until smooth. Remove from heat.
- Add vanilla; stir for 3-4 minutes or until creamy.
- Spread half of the mixture into prepared pan. Refrigerate for 10 minutes or until firm. Set remaining chocolate mixture aside.
- In a heavy saucepan, melt vanilla chips and remaining milk over low heat; cook and stir for 5-6 minutes or until smooth (mixture will be thick). Remove from heat.
- Add peppermint extract and food coloring; stir for 3-4 minutes or until creamy. Spread evenly over chocolate layer. Refrigerate for 10 minutes or until firm.
- Heat reserved chocolate mixture over low heat until mixture achieves spreading consistency; spread over mint layer. Cover; refrigerate overnight or until firm.
- Using foil, lift fudge out of pan. Gently peel off foil; cut fudge into 1-inch squares. Store in the refrigerator.
MINT CHOCOLATE PUDDING FUDGE RECIPE

- Line 8-inch square pan with foil, with ends of foil extending over sides. Microwave 4 oz. chocolate, 6 Tbsp. butter and water in large microwaveable bowl on HIGH 2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Add peppermint extract and dry pudding mix; stir 2 min.
- Add sugar, 1 cup at a time, stirring after each addition until well blended. Pour into prepared pan; press into even layer with back of spatula.
- Microwave remaining butter and chocolate in large microwaveable bowl 1-1/2 min. or until butter is melted; stir until chocolate is completely melted and mixture is well blended. Pour over fudge layer in pan; spread to completely cover bottom layer. Top with remaining ingredients.
- Refrigerate 2 hours or until firm. Use foil handles to remove fudge from pan before cutting to serve.

MINTY FUDGE BROWNIES
I adopted this from the Recipezaar account. They are more a cakey brownie when right out of the oven but get more fudgy after cooling. They have a nice light mint flavor. If you can't find the mint chocolate chips you can recreate with regular semi-sweet chips and a few drops of peppermint oil (as that is what makes the mint chips minty).

- Preheat oven to 325° F and grease a 13x9-inch baking pan.
- In a small bowl, combine flour, baking soda, and salt; set aside.
- In medium saucepan, combine sugar, butter and water; bring JUST TO A BOIL then remove from heat.
- Add mint-chocolate chips and vanilla extract; stir until chips are melted and mixture is smooth.
- Transfer to a large bowl and let cool slightly (so you don't cook the eggs).
- Add eggs, one at a time, beating well after each addition.
- Stir in flour mixture gently (be sure not to overmix).
- Stir in nuts, if using.
- Spread into prepared pan.
- Bake for 28-32 minutes.
- Cool completely in pan on a wire rack.

- Line an 8-by-8-inch square baking pan with aluminum foil. Spray the foil with cooking spray.
- In a medium saucepan over low heat, combine the chocolate chips and sweetened condensed milk and stir until melted and smooth. Pour into the prepared baking pan and spread to even out the surface. Sprinkle on the crushed candies. Refrigerate for 2 hours.

FABULOUS MINT FUDGE WE MADE LAST NIGHT!
My husband went to the Andes mints website and found this recipe. It is so easy and after letting it sit overnight - we couldn't wait to try it this am- it just melts in your mouth! So, good - now I'm going to make their cookies - you put the mint candy in the middle of each ball of dough. Oh, I couldn't find the Andes baking chips at Albertson's yesterday so I bought the box of candies - yummy!
