CHOCOLATE MINT SANDWICH COOKIES
I got this recipe from my daughter years ago. I've taken these chewy filled cookies and the treasured recipe to many cookie exchanges.

- In a small saucepan, combine the butter, brown sugar, water and chocolate chips. Cook and stir over low heat until chips are melted. Cool. Beat in eggs and vanilla. Combine the flour, baking soda and salt; gradually add to chocolate mixture. , Drop by rounded teaspoonfuls 2 in. apart onto ungreased baking sheets. Bake at 350° until firm, 10-12 minutes. Remove to wire racks to cool. , In a large bowl, combine confectioners' sugar, butter, milk, extract, salt and, if desired, food coloring until smooth. Spread on the bottoms of half of the cookies; top with remaining cookies.

MINT SANDWICH COOKIES
I found this recipe in a TOH cookbook some years a go. It is a quick sandwich cookie if you are in a time crunch during the holidays. I used Ritz crackers and they remained crisp for about a week when stored in an airtight container. Cooking time includes time for chocolate to set.

- In a bowl, combine the frosting, extract and food coloring. Spread over half the crackers; top with remaining crackers.
- Melt candy coating in microwave.
- Dip filled crackers in chocolate, coating entirely.
- Place on wax paper until competley set.

CHOCOLATE-MINT COOKIE CRUNCH FUDGE

- Line an 8- inch square pan with foil and grease foil. Mix sugar and cocoa in heavy 3 quart saucepan. Stir in milk and butter. Bring to a boil over medium heat, stirring constantly. Without stirring, boil vigorously 5 minutes. Remove from heat; add chips and stir until melted and smooth. Spread 1 cup in lined pan, top with cookies, then spread remaining fudge evenly over the top. Refrigerate 6 hours until firm. Invert pan, peel off foil, invert fudge and cut in 1-inch squares.

- Preheat oven to 350°F.
- Whisk together flour, baking soda and salt in a small bowl.
- Melt butter in microwave at low temperature.
- Stir in cocoa powder sugar, and brown sugar.
- Add the yogurt and vanilla extract, stirring gently until mixed.
- Sift together the flour, baking soda, and salt. Add to chocolate mixture until just combined.
- Fold in the cherries or chocolate chips at this time.
- Drop tablespoonfuls of batter onto a parchment or silicone mat lined baking sheet.
- Press cookies down slightly to flatten (they do not spread much).
- Bake at 350F for 9-12 minutes or until set and slightly firm at the edges.
- Cool on the pan for a few minutes to set the bottom then finish cooling them on wire cookie racks.
VANILLA SANDWICH COOKIES
These cookies don't have many ingredients, are easy to make, and taste pretty good. This was my attempt at a copycat of an Oreo Cakester, but it's not the same. It's not really like a whoopie pie, either. Unlike either of those, with these, you can really only eat one (well, I can), because they're pretty dense. My picture is with French Vanilla cake mix. If you try these with butter-flavored shortening for the cookie part, let me know how it turns out - or any other substitutions (cake mixes, extract flavors...). If you make these the day before (or even 2 days before) and refrigerate them, the cookie part becomes a bit softer. Also, try my Recipe #418020!

- Preheat your oven to 350 degrees F.
- In a large mixing bowl, combine the cookie ingredients.
- Roll dough into 1 1/2 inch balls (ping pong ball-size) and place on a greased or parchment-lined cookie sheet. Make sure you have an even number of cookies. Smash the balls down just a bit.
- Bake for about 7-8 minutes. Take them out of the oven when the tops have cracked a little.
- Let them sit on the hot cookie sheet for 2 minutes. Transfer cookies to a wire rack to finish cooling.
- Make the filling: With a mixer, cream the butter and cream cheese. Add the vanilla. Gradually add the powdered sugar and mix until smooth.
- Frost the underside of a cookie and place another cookie on top.
- Wrap individually in plastic wrap and store in the refrigerator.
